Introducing The Greggory, set to open in the Arboretum of South Barrington on March 7th, 2025. This restaurant redefines American classics with a touch of warm, sincere hospitality. The establishment is helmed by seasoned restaurateurs Gregg Horan of Gibsons Restaurant Group and Bill Veremis of Rosewood Steakhouse Group, alongside partner Executive Chef Jose Sosa of Gibsons Italia.
The Greggory caters to the increasing demand in the Northwest suburbs for a local venue that offers a sophisticated yet welcoming ambiance. With a focus on live-fire cooking in an open kitchen, the menu showcases prime cuts of beef, fresh seafood, and homemade pastas, blending time-honored culinary traditions with exceptional warmth and personality.

First time here…… Lobster roll appetizer tasted like Texas toast dipped in butter with very little “crumbles” of lobster. Tomahawk Wagyu came out cold and zero flavor. Asparagus had no flavor and bottom sauce was bland. Manager addressed and took Tomahawk back to warm it but then it came back charred so allowed us to try another steak which was better and cheaper. Provided us with Mushroom Risotto and Shrimp cocktail while we waited. Mushroom risotto was amazing! Overall first time experience with The Greggory was not the best, however we will give it another try in 2 weeks with friends as the manager did do everything to try and make it right and it was a busy Friday night.

I thought it was a really good restaurant along with the service. It's a bit loud and you are seated close to other patrons, so if you are looking for an intimate date night, not the place to go. I also thought they could use a bit more help. I had to ask for lemons with my water to 4 separate people and finally was able to get it after half hour of asking. I also thought it was a tad pricey for the experience. I will go back, but not my first choice.

We loved the appetizers. They were shareable and delicious. Special shout out to the bone marrow with steak tartar. That was amazing. Server should have spoke more clearly at a higher volume. We all found it difficult to understand her. The overall volume due to the lively atmosphere certainly contributed to the difficulty in understanding her. Nice wine list but would like to see some more unique wines. Meals were solid, sides were great and the only thing missing was crème brûlée!

Craft cocktails were all amazing! Food was tastefully presented enjoyed by us all. House popover rolls, Wagyu pigs in a blanket, steak frites, prime rib, tomahawk bone in pork chop, and the cacio e pepe pasta were all spot on. Managing partner Gregg stopped by tableside to ensure we were 100% satisfied which was a pleasant touch and we are eager to come back!
