Introducing The Greggory, set to open in the Arboretum of South Barrington on March 7th, 2025. This restaurant redefines American classics with a touch of warm, sincere hospitality. The establishment is helmed by seasoned restaurateurs Gregg Horan of Gibsons Restaurant Group and Bill Veremis of Rosewood Steakhouse Group, alongside partner Executive Chef Jose Sosa of Gibsons Italia.
The Greggory caters to the increasing demand in the Northwest suburbs for a local venue that offers a sophisticated yet welcoming ambiance.     Made a reservation for our anniversary. The hostess was slightly less than excited to see us and not sure why. I think she may have been having a bad day. Regardless, we were seated in the “back bar” area, which had a couple long couch type seating along the wall and then tables pushed up against it. Now, I knew this was a more pricey spot, so I was really disappointed that I was sat in an area where it felt like the person next to me was at my table (due to the long couch). Not elegance at all. Not private either. Nevertheless, our drinks were spectacular, the service was unmatched, and the food was amazing! We had a lot of food. Both breads were excellent. We had the prime rib (wow!!!) and the filet (incredible). Drinks were fantastic, and not underpoured. Dessert - we had the praline cake and I could have taken a bath in that! It was incredible. My one criticism (and it’s a big one) is the seating. Get rid of the long couch seating. Diners HATE it, and at this price point I should feel like I’m at my own table and treated like I’m your only customer. Unfortunately, I felt like I couldn’t speak to my husband without my couch mate hearing every word, the waitress had to squeeze in between tables to say something to us, and made our night quite uncomfortable. Big no and I will never allow my seating there again. I want to come back but will refuse seating on any big couch in your establishment. Be better than a “routine restaurant” looking to maximize your space.

    Greggory has a beautiful exterior and even before we walked in we are greeted with a warm hello from the Valet. We walked in. It was a very nice surprise to be welcome again and this time by the Host and the owner of the business, Mr. Greggory himself. We were taken to our table quickly and enjoyed an amazing dinner where I had my first rotisserie prime rib. Absolutely delicious. I think the rotisserie chicken was another favorite fact I think My son son Cole said it was the best chicken he ever tasted. We will definitely be back and look forward to it. Our Server, Nicole, was very professional and I noticed a tone of service that I have not seen since Nick’s fish market days. It was refreshing to see people care so much about refilling waters, and clearing plates. The bus boys were on their game.

    Very good high end restaurant. Expensive but high quality food and service. Good for that special occasion like a birthday or anniversary or out of town friends. We had the prime rib and the salmon and both were great, as were the desserts. Treat yourself to it.

    Great service and food. Everything we ordered came out of the kitchen perfectly Our server, Donald was excellent!

    Glad to see therre is another option in the arboretum and locally.It is a steakhouse at its core so it is dark especially in the room we were in. Much better in the bar though with high-tops. It is attractive but dark table closes ot hear the next group's convo and a bit loud. The hostess was while not outright rude was not friendly, cheerful or really welcoming, just matter of fact. Venetian spritz was OK but seemed vvery watered down. Ordered the popovers which were burned and the next table's were as well with very liitle if any gruyere flavour. If you can't pull them off take them off. Crudo three ways made a better impression. The 9oz filet and its sauce were very good and cooked how ordered. Kudos on the hearth concept. The cacio pepe likewise was as necessary with light pepper which was OK for us. No order on desserts as we were full but they appeared immense beyond the degree of need. Would have preferred a lighty-er setting, no outdoor I fear due to lack available staff to handle the extra workload. Wait staff and GM were professional. Not sure we'd return? Not sure why Open Table is always booked out,

    Elizabeth was one of the best servers I’ve had in a long time! Great recommendations on food and wine. All of the other support staff was awesome too. Will for sure be back!

    My wife and I had just returned from our honeymoon to Banff, Canada where we had some seriously amazing beef and wine experiences. When she asked what I wanted for my birthday, I somehow still had the desire for a fancy steakhouse experience. As anyone who lives in this general part of Chicagoland knows, many of the current offerings top out at prime beef or perhaps some grass fed selections. It’s quite rare to find a steakhouse in the suburbs that offers some heavy hitting steaks like American Waygu hybrids or true A5 Waygu from Japan. The Gregory not only offers multiple Waygu options in this niche, but it cooks all of them with live fire. This is a trend that is now well established in major metro areas around the world, as the restaurant industry recognizes that live fire cooking odds extra flavor and a cozy ambience. Despite some high prices, a few readings of the menu and the concept had me. We arrived early and talked with the front desk. They said that our table was not open yet but we could grab a seat in the main bar. The bar space is decorated with classic steakhouse elegance in the plush chairs, dark colors, and a bit of study room/library decor towering over the bar. My wife grabbed a Blueberry Lemon Martini and I ordered a glass of Bhueler Zinfandel. Both were great. Our sever in the bar was attending to many tables, so it took a bit to order, but it was Saturday night at 6:30, so that’s reasonable. I will say that it seems like this is the best bet for seating if you are a walk in guest. There were about six or seven out of the 20ish tables open (bar stools were mostly filled). So, the odds of getting a table are good, even if you walk in on a busy time. But, be mindful that this bar area is more casual in service and they will be doing their best to take care of the food and drink orders. It might take a bit longer based on our experience. When our table was ready, a hostess let us know and guided us back into the dining rooms. They do have multip

    The Arboretum just raised the bar, and it’s called The Greggory. We finally made it in last weekend, and let me just say: this place delivers. From the polished, upscale vibe to the warm, attentive service, The Greggory feels like a hidden gem that won't stay hidden for long. We shared the gruyére popovers and the heirloom tomato salad. Both were incredible. For entrees, I had the filet, and it was nothing short of perfection—tender as butter, cooked exactly to temperature, and seasoned just enough to let the quality of the meat shine through. My husband went with the ribeye, and it was a showstopper. Bold, beautifully marbled, and charred to a smoky crust that gave way to juicy, rich flavor inside. We also shared a couple of sides (the buttery whipped mashed potatoes were a standout) and enjoyed a couple of cocktails that were as elegant as the setting—classic, balanced, and clearly crafted with care. The service was on point, with just the right amount of attentiveness and genuine enthusiasm for the menu. You can tell this team takes pride in what they do, and it elevates the entire experience. Our server, Nicole, was particularly wonderful. We finished with the not-to-be-missed Rosewood White Chocolate Mousse Cake. Perfection! Bottom line: The Greggory is more than just a new steakhouse—it's a destination. Whether you're celebrating something special or just treating yourself to an exceptional night out, this place is absolutely worth it.

    We went to The Greggory for our anniversary dinner. Food was delicious and the attentive server was superb. We loved the steak which was recommended by the waiter. Also had the lobster tail which was very delicious. My husband loved the bone marrow which was also delicious. Overall, we had a really good experience and will go back on occasion. We recommend this restaurant for those that would like to enjoy fine dining or special occasions.
