As a child I would travel to Vietnam frequently with my mother during the summer breaks. From Ho Chi Minh City an eight hours bus ride would commence, taking us down to the south of Vietnam known as 'Ca Mau'. During our trip the bus would stop every three hours letting the passengers out. The most exciting feeling was getting to explore my way through the little food stalls on the streets. My search then began for that hot bowl of Vietnamese Beef Noodle Soup, which would be the only element to satisfy on the long bus trip.

As the journey on the road came to an end, all prepared and ready at my grandmother's house would be the traditional Vietnamese pancakes. The pancake is yellow in colour, lightly crispy in texture and would be larger than your average dinner plate. The quantity was too much for one person, which gives everyone a reason to come together and share.
