   The food was prepared with excellent technical skill, but the seasoning—particularly the salt on the proteins—was occasionally a bit heavy. Additionally, the sour elements in the sauce and the pickled vegetables and fruit sometimes overpowered the overall balance of the dishes. With just a touch more restraint in the seasoning and flavor profile, the dishes would be absolutely perfect. On a positive note, the tomato pâté and heirloom tomato sorbet were absolute perfection—beautifully balanced and bursting with flavor. The service was outstanding—attentive, knowledgeable, and clearly passionate about the food.

   The food was really excellent (if the meat courses were a little salty), certainly top tier cuisine. As usual for a tasting menu, left feeling slightly hungry but not overly so. Unfortunately the ambience inside resembles that of a loud bar which becomes unpleasant when you are sitting for 2.5 hours for a tasting menu; all the surfaces are hard inside and so one has to shout at your fellow diners to be heard. Likewise the servers have to shout to announce the dishes. The decor could use some carpet or noise absorber to reduce the noise. Given the cost and the Michelin star, it was a disappointing experience. Lastly, beware that the 8-course meal takes 2.5 hours to complete as dishes come out 15-20 minutes apart.

   The service was excellent, wine pairing so good, but the food had two opportunities one can’t ignore. One, the sauces were too salty - especially on the sea bass. Two, I was hungry after - we did the original 8 course menu. I’m a 145 lb woman who doesn’t over eat but I do exercise. If I had more food and less salty, it would have been a 5 out of 5 experience. Not sure I would go back if I have 13 other Michelin star restaurants in Miami from which to choose.

   We’ve been to this and the Vegas location a few times and every time it hits. The food is always amazing and surprising, the service excellent and attentive, the vibes (sophisticated but The Killers playing in the background) just what we’re looking for. Love the experience!
