Splendido at the Chateau offers wonderful Rocky Mountain dining featuring hearty yet refined American-European cuisine. In summer, enjoy a cocktail or dine outdoors on our flower filled deck and enjoy great views of Beaver Creek Mountain. As the sun sets and the mountain chill sets in, retreat indoors and get cozy next to our lovely, double-sided, wood burning fireplace. Splendido offers entertainment by Peter Vavra, Kathy Morrow, Taylor Kundolf and Bob Finnie in the piano bar.
Splendido can comfortably accommodate a range of events including wedding receptions, family celebrations, cocktail parties, as well as business and corporate dinners with private facilities for catered meetings and seminars.

During our ski trip to Beaver Creek, my husband and I had many fine dining dinner reservations. Based on other TA reviews, decided to make Splendido our choice to celebrate both our 25th anniversary and the last meal of the trip. We had high expectations and this restaurant did not disappoint!

The ambiance was excellent and the food, equally so. Can’t say enough about how beautiful the restaurant was at The Chateau...big roaring fire in the fireplace, beautiful music by the pianist on the grand piano, idyllic mountain views across the restaurant, to name just a few.

Our server was warm and friendly, well versed on the dishes and the specials, had great recommendations, and spaced out all the courses ideally.

Now, for the food...because after all, that’s what it should be about. We had several meals this week where the ambiance and/or experience was great but the food was just good or even mediocre. Not at Splendido! I had to try the Dover Sole and it was delicious! Husband had the elk and he said it was the best dinner he’d had all week. Both dishes were perfectly portioned, looked a bit light but was filling without feeling stuffed. We also tried the lobster pasta appetizer special and this was the only dish that was good versus great. Lobster was tasty but the marinara was pretty plain. We ended with the Lemon dessert and we would highly recommend, it was fantastic! Nothing like we have ever had before...glad we didn’t miss out on this unusual and creative, but refreshing sweet.

It was Easter Sunday. The restaurant was filled to capacity. The service was good. The food was good as well. The noise level was incredibly loud! I understand families go to dinner at an early hour. I just wish that they would pay attention to their children.

Poor, inattentive, unprofessional service. Noise and ambiance like Grand Central Station food court. Food that says “LARGE must mean GOOD!” It doesn’t. And a wine list that says “Only BIG wallets need look.” Pass!

The food we enjoyed was spectacularly prepared. The wait staff, with the exception of our assigned server, were all attentive and respectful. Our server was brash and inattentive to us. We actually preferred that he was more attentive to other tables rather than ours.

Salmon appetizer was the brightest and most tasty bite.

VERY LOUD. Could not hear waiters or each other. So many kids there and it was not the ambiance we expected. Very pricey but we knew that. Food great but the three desserts disappointed. $80 glass of sauterne was delicious. Waitress was very nice and helpful.

Probably the best restaurant in BC area. My bison was expertly prepared, and my wife enjoyed three appetizers. Deserts are a must, not just for their flavor but their visual appeal as well. I had the "mushroom", a chocolate composition which looked just as it sounds. Our waiter, Paul, had excellent knowledge of the menu, down to where each item was sourced. He also gave us a wonderful tour of the kitchen, which was spotless and well managed by Executive Chef Brian Ackerman. The menu features sophisticated options...this is a wonderful spot for a special evening out for adults but would be lost on children.

Splendido never disappoints. The staff is attentive without hovering. The setting is lovely. The food is outstanding. We visit every time we come to CO. It’s nice to visit a place and find your favorite restaurants ( and shops) still doing well and always consistent. Highly recommend.

My husband and I were in town for a quick overnight ski trip and were looking for some great food. The location is amazing - a hidden gem! The food was superb and our expectations were exceeded. We will definitely be back the next time we are in Beaver Creek!

Truly great and improved from prior years. My Fois Gras was truly splendid and the Bavette also amazing. My wife had a wonderful lobster cutesy salad and an elk cooked to perfection. Our service was friendly, attentious and the experience was so good we decided to come back in a couple of days for “the best moments”.

Splendido used to be our favorite restaurant in beaver creek for more than ten years. The dinner there has always been the highlight of our annual ski vacation. This year the dinner was big disappointment. The menu was not very interesting, the service was not attentive but the especially the main course was very disappointing.

Unfortunately the place is not our favorite in beaver creek anymore. We used to know the personal in the past from year to year but this year the entire staff was new. Disappointing.

This is our new favorite place. It’s exceptional. Take the wine suggestion from the waiter. Layout on the chaise lounge in the ladies’ room (ladies only). Elk was divine. Sole was up to the reputation. Venison tartar and burrata started off on the best foot(d). As my husband said, “it was more than a meal, it was a religious experience.” Enjoy!!

This fascinating restaurant was highly recommended by a friend as a must go while in Beaver Creek. We were NOT disappointed ! We enjoyed handcrafted martinis shaken and served tableside. The staff was exceptional in their knowledge of their short but unique menu as well as the preparation for each of the selections. We really enjoyed their Rocky Mountain Lamb Chop as well as the excellently prepared Veal Chop. They offer a fine selection of somewhat pricy wines. Try their unique and delicious chocolate mushroom desert . We shall return !

Splendido continues to set the fine dining bar in Beaver Creek. Chef/Owner Brian Ackerman's food is exceptional and it is all backed by a fine wine list and highly competent staff. This trip, we concluded our dinner with two desserts that were out of this world; (1) the "mushroom" made with chocolate, a caramel stem, and meringue, as well as (2) the "lemon" made with a custard surrounded by shaved ice of fennel and olive oil, topped with a crumble and lemon sorbet. I literally felt like I was eating a deconstructed key lime pie, it was remarkable.

Do not read any negative reviews about this restaurant. I almost canceled a party of 6 because of the reviews. The seafood tower was a little less than average.. but the rest of the meal made up for it. The Elk and Lamb were excellent! The desserts were excellent especially the soufflé . As were the end of meal coconut lollipops that were included with our fabulous dinning experience. Paul did a delightful job at keeping us happy and bringing us our drinks which never ran out! Thanks to all who worked tonight. Hands down a best dinning experience on Beaver Creek so far!

Amazing food and impeccable service. The frozen lake dessert was a creative idea. Not my favorite but a unique experience. I had the lamb and my husband had the Dover sole which was divine. Overall an amazing dinner and highly recommended.

Every course excellent with excellent service, except dessert was forgettable and mostly inedible- even on the second try. Choose dessert wisely! Again, excellent food, Service, ambiance, except a fizzle at dessert. :(

Incredible fine dining in a warm and comfortable environment staffed by true professionals. The chef/owner creates a delightful menu each week with seasonal variety and impeccable flair. Don’t miss the Foie Gras appetizer; like no other.
The wine list is extensive but the sommelier will guide you to the right choice for your palate and food pairing. A true top notch dining experience in a relaxed atmosphere. Highly recommended when you’re in Beaver Creek, CO.

PS The soufflé is not to be missed. Delicious!

Our family was a party of six, and we had a tremendous experience and quite the memorable evening. The food was incredible and the service was impeccable. We absolutely recommend the super creative and delicious deserts - completely unique! After dinner, we had the privilege of the manager taking us on a guided tour of the kitchen. Then, our daughter played the piano with Peter and he graciously gave her some pointers and then played his own version of Fur Elise! This is the best place I've been in Beaver Creek.
