    Celebramos nuestro aniversario en Sibau y la experiencia fue excepcional. El servicio merece mención especial: cercano, profesional y sumamente atento. La cena comenzó con la cortesía “Árbol de la vida”, compuesta por tres bocados que marcaron el tono de la noche: una croqueta de jamón serrano con blue cheese, un chabacano envuelto en tocino y una albóndiga de ribeye. Deliciosos y creativos. Después disfrutamos los ravioles de mango con salsa de tomate, trufa y caramelo: un equilibrio perfecto entre dulzor, acidez y profundidad. La ostra con toro y ponzu fue intensa y refinada. Los tacos de camarón crujiente, servidos en lechuga con salsa de mango, piquín y sriracha, sorprendieron por su frescura, textura y potencia de sabor. Como plato fuerte, pedimos la langosta en beurre blanc de erizo: cocinada al punto, jugosa y acompañada de una salsa sedosa, con un toque marino que realzaba cada bocado. Acompañamos la cena con tres cócteles: Citruzcal, mi favorito Jamaizcal, de los mejores cocteles de mezcal con jamaica que he probado Crazy Berries, una mezcla ligera y frutal a base de vodka con frutos rojos Cerramos con un cheesecake vasco perfectamente horneado, cremoso por dentro, con una costra ligeramente tostada y carajillos. Sibau es toda una experiencia sensorial pensada en cada detalle. Cocina creativa, coctelería impecable, atención extraordinaria. Sin duda un lugar al que volveremos.

    Cómo es acostumbrado en Sibau, una excelente experiencia de principio a fin. Recomendables el pulpo, el rib eye y cualquiera de sus postres. Excelente atención de todo el equipo. Gracias.
