It is commonly said that foreigners who are learning traditional Japanese culture has more Japanese way of thinking than real Japanese. It might be the result that such foreigners make tremendous and stoic effort to learn the different culture that they don't have knowledge of. Globalization is also accelerating in the world of food. It is well known that Nouvelle Cuisine was influenced by Japanese cuisine. It is not unusual to use Japanese ingredients such as seaweed and soy sauce in France, and the reverse is also true that Japanese cuisine restaurant uses foie gras as an ingredient. However, we do not follow the trend as a restaurant serving French cuisine in Japan. We would like to deliver tradition of French cuisine as it is, especially local cuisine of Lyon in France. Not enough - We are aiming to create the French cuisine that is more traditional than the one in France - this is our raison d’être.

                                            このビストロのシェフはリオンの今は亡きポールボキューズ氏の下で修業された方です。 1か月前にリオンのポールボキューズレストランで食事をしてきましたが、 現在ではビストロ料理につきましてはサラマンジェエのほうが上と言わざるを得ません。

                                            ランチとディナーに1回伺って、すっかり気に入りました。。リヨンへ一緒に旅行した友人ともリヨンで食べたリヨン料理よりも美味しいという意見で一致しています。ワインも美味しいし、また脇坂シェフのクネルが食べた〜い。お料理にも接客にも丁寧さが感じられ、何度でも伺いたくなるお店です。
