A sneak peak at Chef Ricardo Zarate"s new restaurant, opening summer 2016. Contemporary Peruvian Cuisine.

Since the successful launch of ‘The Fire of Peru’, Zarate partnered with popular Los Angeles restaurant Hinoki and the Bird to launch a series of dining pop-ups in early 2016, alongside announcing the opening of his new restaurant Rosaliné in summer 2016.
Divulging that Rosaliné will explore classic Peruvian dishes alongside ‘street-food’ fare updated with a California sensibility; Zarate will include small bites, placing an emphasis on grilled vegetables and dishes highlighting both land and sea. The streamlined menu will use a traditional Josper oven with open charcoal grill; infusing ingredients with smoky, rich, earthy flavors and spices, prominent in South American cuisine.

    It's hard to give Rosaline a true review because I didn't get the Rosaline experience; I got Rosaline at Coachella experience, which isn't saying much. First off, I appreciate that the hostess got to seat us early. Second, I assume the plastic forks/plates was because it's Coachella, and I'd have the real silverware and dishware in the real restaurant. Third, the server got my order wrong, and never brought our drinks. It wasn't worth calling the server over to let her know (she was running around) so I ate the beets dish. It was fine. Again, the ambiance and the service really contribute to the overall satisfaction of the meal. Ambiance and service were missing. When I told her to remove the drinks from the bill, she blamed how backed up the bar was; that's why we didn't get our drinks. Hmmm...I'm a former server and the last thing you do is blame the bar. Server's job is to tend to customers. If drinks aren't coming, go find out where they are. The dessert - it was the cremolada and it was too big. Cut it in half is better, and it would be easier to eat. Lastly, the bill. When she brought the bill, it was wrong; she removed the drinks, however, she forgot to add her gratuity. So she took back that bill and gave me another bill with 18% added. For service. Riiight. This may be helpful for Rosaline staff to know for Weekend II of Coachella
