Root Down serves “globally influenced seasonal cuisine,” which basically means we go where inspiration leads us. We’re not tied to one style or genre—we’re hoping to create one of our own.
At Root Down we pride ourselves on striving to solve the ‘Omnivore’s Dilemma.’ We have created a dining spot where all dietary needs will be accommodated, including vegetarian, vegan, raw and gluten free; also allergies or intolerances are always handled professionally by the kitchen team. Our menu has icons reflecting this philosophy, though we always request you notify your server of specific needs. We look forward to seeing you soon!

We were so excited to eat at Root Down during our recent Denver trip. The food didn't disappoint- everything besides the dessert was amazing. However, our dining experience was not great due to really poor service. Our food took forever to arrive to our table after we ordered. One couple sat down AFTER our table ordered and was served their whole dinner (apps and entrees) before we even got our first course. Our server apologized but offered no excuse and sent out an amuse to make up for the wait. Unfortunately the amuse came after our first course and was only okay. Our server didn't explain the dishes when they came out and wasn't very attentive. Overall, great food but service was definitely lacking.

The 3 course tasting menu was a great deal. The carrot soup starter was exceptional but the black eye pea croquettes were dry and a little bland. The entrees were fantastic in both portion size and complex flavor. The desserts lacked sugar and finesse. Overall the experience was great. I recommend dining here Sunday night to take advantage of the dinner special.
We were visiting from out of town. Some friends had taken me here 4years ago and I enjoyed it enough that I wanted to give Root Down a second try. It did not disappoint. Food, drinks, atmosphere and service were fantastic. I would recommend Root Down to anyone interested in having a great meal in Denver.
Our waitress Sara was wonderful! Very helpful and kind, and I believe the service is just as important as the quality of the food. The food was amazing as well, very creative and everything went well together which is not always the case. The arepas were My favorite thus far! Highly recommend Root Down!

This was one of the best meals I have ever had (we both had the flank steak)! My husband and myself were celebrating our 10yr anniversary and they made us feel so special. The server was wonderful and was very helpful. I would recommend this to anyone coming to Denver!

Al was terrific. Recommended a wine he personally added to their menu. A delicious Austrian Rose. Chef surprised us with a complimentary Rock Fish. I had Carrot Gnocchi and my husband had the Lamb sliders.

Had light early dinner for two on the patio on a warm summer evening. I arrived early, staff was great--no pressure to order while I waited for my daughter to arrive, not rush to order after she arrived, no push to leave and free up the table. Ordered apps from the happy hour menu--creative and tasty. Dinner salad from the dinner menu was not what I expected, but was very good just the same. Will return soon.
We especially enjoyed the menu choices good for Paleo, Vegan or regular diner. Rockfish dish amazing along with appetizers.

It’s difficult to rate this experience as I was so happy to be with my family at Root Down however our server admitted after an hour and a half wait that she was very sorry but she had thrown away our ticket and the food was never ordered! I forgive mistakes and make them myself but I fully expected an apology from the management and some adjustment to our bill. We waited 2 hours for dinner for which we had made a reservation. There was a small dessert brought, unordered, to make up for the incompetence. It did not. I’ve had great meals and fun at Root Down but this was memorably unfortunate. I would feel differently if management had even spoken to me but that did not happen. I would recommend this restaurant for brunch or lunch, only.
Literally everything was fantastic. I went with my husband to celebrate my birthday and we could not have asked for a better experience. Our server was friendly, knowledgable and attentive. The food and drinks were excellent and the restaurant is very charming with a pleasant ambiance. I have tried every other Edible Beats restaurant and each time I think one is my favorite another one is just as amazing. I can't believe I waited this long to come here and can't wait to go back. Love the vegan options. Thank you!

Great food and service. Unfortunately, the hostess couldn’t find our reservation from Open table and almost seemed like she didn’t believe that we really had one. She said someone with the same name had already come in and claimed the reservation for 2 instead of 4. Luckily they had open tables and we didn’t have to wait. Overall experience was great.
Root Down is consistently fabulous - quality of food, options of healthy food, service, etc.! Loved the beet salad as well as the scallops and avocado dishes. Keep up the good work! I will be back! M.L.

Took my girlfriend here for her birthday dinner as we were visiting town and it could not have been a better choice. I’d made a reservation noting the occasion and from the hostess greeting us to the waitress first coming to introduce herself, they each very kindly wished her a Happy Birthday which was a nice, warm touch. As we were waiting for our bottle of wine to come out, our waitress surprised us with a complimentary round of champagne for a birthday toast.
We ordered three small plates. First, the Colombian arepas came out. Being Colombian myself, my bar is set high for arepas. Their approach to this is very outside the box and untraditional for a traditional food staple that I would not call these Colombian arepas. BUT, the dish is incredibly delicious and I was happy to have ordered it. I would get it again. Second, the carrot gnocchi came. This was my favorite dish of the night. The way the pesto sauce, spinach, cherry tomatoes, and gnocchi worked together really made for tasty bites. Third, the scallops were served. Nothing exceptional compared to the first two dishes, but they were good and appropriately seared.
We found ourselves unexpectedly very full, which made for a reasonably priced meal for two. Lastly, our waitress again surprised us with a candle lit, complementary birthday dessert. A very rich chocolate mousse pudding.
Overall, a great meal with exceptional service all around. I would highly recommend and will be back.
My girlfriend is vegan and I am not so it is difficult to find restaurants where we both enjoy the food. This was one of the best meals I have had in a long time, we will be back again and again.
