   I was underwhelmed w this restaurante which I had wanted to try for a long time. The food was mediocre and each course was very small. Im not someone who requires a lot of food , but i came home hungry. With each course there was a long story from the wait staff.( More food, less talking!). I felt a general tone of annoyance from the wait staff w any question asked. For the steep price it was not a good value. I would not go back or recommend.

   I wanted to love this restaurant. The reviews were amazing, the plating was beautiful, the story behind each plate was fun BUT most dishes ended up tasting very similar. The little protein we got wasn't memorable. We had multiple waiters that knew their lines but weren't engaging at all. We were seated in the hall btwn the restaurant and hot lips pizza with super bright hallway lighting and people walking by to the elevator. For almost $200/ per person I would have expected way way more.

   We did not actually get to eat at the restaurant. Despite having a reservation for weeks and despite a number of empty tables in the main dining area outdoor, we were shown a table in the noisy kitchen area that looked like a holdover from the quick serve restaurant that occupied the space before Republica. When we asked for a table in the area where everyone else was eating, the host declined and said that we would have to wait for an additional 30 minutes. For a “Special Occasion” restaurant with a weeks long wait for a table and elevated prices, we expected better. The restaurant can’t expect people to pay $100+ per person to eat in a place that felt more like a Laughing Planet than a serious restaurant.

   The food was amazing.The story they are telling of bridging the old world and new is beautiful! I love that they are preserving the history and culture in the food and feel super lucky that they are here in Portland. However do not be fooled this is a chef’s TASTING menu. Meaning portions are small. I love food and eating but, I can not eat large quantities in a sitting. All of us left still hungry. The service was a really stiff. When we got there for our reservation 90% of the tables were open. They sat us next to the door and we asked if we could have a table that wasn’t right by the entrance. They said all the tables were booked. When I asked if we would be seated at one of the open tables and when the other party comes in maybe seat them at the table by the entrance they rolled their eyes. In the end we were seated elsewhere but, after that I never felt comfortable or that I was welcomed. I always felt like I was putting them out.

    Place came highly recommended by both colleagues & reviews, so our expectations were very high.... We thought the food was ok, service knowledge and friendly but we've had better. And not worth $100/person - Bottom line is we will not hurry back. Sorry

    The food was artfully designed and plated and the servers were all wonderful and skilled in their explanation of what we were eating. There are moments where you will taste things so yummy you wish you had a big plate full of it and lick your bowl. Fantastic birthday dinner experience!

    Every time I come here the food just keeps getting better! I love how they split the courses so you can share and get different tastes of food, but I could see how with different groups this may be off-putting. I love their use of textures and mastery in sauce making. I can't wait to go back!

    Excellent meal, attentive and friendly staff and great experience. Chose the meat focused meal and loved the Mexican red wine... full body paired well with the meal. The staff explained the dishes and easily responded to questions.

    My son the chef was quite impressed when I took him here. Creative and beautifully presented dishes that tasted ah-mazing. Pricey but well worth it. Good wine pairings as well. Will be back on our next trip to Portland.

    Latin-inspired cuisine with an emphasis on colonial and indigenous influences from Mexico. Each dish, each pour of mezcal, is accompanied by a story. The food is both flavorful and meaningful. Although the wine pairings are great, I highly recommend doing the mezcal pairings.

    This is an experience. We dined and drank for hours, gushing over each course. It will not disappoint. Do not bring your high maintenance friends as every bite deserves to be appreciated--you will likely scrape sauce off the plate with your finger and should only go with people who won't judge.

    Dining here is an experience of indigenous and colonial influences on Mexican cuisine. Yes it's expensive, let's get that out there. But you'll take a 2+ hour excursion that will expose you to flavors of ancient Mexico using rare and heirloom ingredients. Each tasting plate comes with a story of the history of its origin and components. The cocktails are yummy and, just like the tasting menu, are comprised of amazing flavor combinations.

    A friend and I attended the restaurant (10/3) and must say that it was by far the worst experience of any restaurant we’ve ever visited. We were seated around 7:45 pm and it took 15 minutes for a waiter to come over and offer a drink. I asked about a wine menu to which I was told “we’ll send the wine guy” A further ten minutes passed and when the wine guy decided to stop tasting wines at the bar and waddled over, we were met with what can only be described as horrendous service. I asked for a wine menu and was told no. I asked about the Blancs de Blanc which I had seen in the fridge and got told no but there was a Mexican sparkling for less. I had quite literally seen the champagne as I had passed the fridges to the restroom. The gent then said “I’ll get a wine for you” with no questioning over what we liked or prices. After thirty minutes, we had reached our maximum tolerance of atrocious service and left with a simple “thank you but we’re leaving due to the poor service” We walk out of the restaurant about 15 yards and turn around to find the “wine guy” and another gent chasing us down the pavement and were met with anger, aggression and to be perfectly honest, a fear for safety. The wine guy - who clearly had taken offence - decided to protest when we explained the waiting around we had faced and lack of service. The other gent turned to the wine guy and simply said “we have their card details on file, let’s just charge them for a cancellation plus the first course and ignore these guys”. Firstly, we did not touch the first course. Secondly, I am in absolute astonishment that a person working in the service industry has the audacity to passively threaten my friend and I like that after receiving the very worst service of a restaurant we’ve ever been to. I wake up to see that I have a charge for Republica. The charge was for “no shows” and as you can tell, we did show. 100% AVOID. Management team haven’t even responded to me.

    The food and service were great! The only negative was the 21% "Hospitality fee" added onto the check. That should be added into the price of the food and drinks. It's seems like a sneaky bad business practice. I've never seen it before and tipped 10% instead of the 25% I was going to give because of the excellent service. It definitely rubbed me the wrong way.

    The tasting menu exceeded my expectations. The staff was very well versed in the food, ingredients, history, and the inspiration for all the dishes. I appreciated that the chef made the rounds and stopped by my table for a few minutes to chat. If I lived in Portland, this would be a resting I would return to.

    A one of a kind, very unique experience from the dishes to the wine pairings. Each dish and wine has a story told by the sommelier, waiters and yes, even the chef will visit your table. Incredible, modern Mexican inspired dishes with flare and incredible presentation. It's not cheap, but well worth the investment for a special occasion/celebration.
