James Beard-nominated Mexico-forward restaurant recontextualizing Mexican cuisine and culture through Storytelling.

We offer a tasting menu experience, as well as an a la carte menu. Both experiences are meant to honor the complex history that created each dish, as well as leave a lasting impact on all those who taste this beautiful food and listen to our stories.

We kindly require all guests to disclose all dietary restrictions and allergies prior to their reservation. We are unable to accommodate allergies to nightshades, chile, corn, or allium. Additionally we are not a gluten free kitchen and are unable to provide nut and seed free diners.

    Join us for a coursed journey through the culinary history of Mexico. The exact number of dishes and the dishes offered change nightly, but the number of dishes ranges from six to eight. A version of a couple of the dishes can be found on our a la carte menu, but the majority are created exclusively for the tasting menu.

    Excellent dining experience and a culinary journey! Each plate was delightful and varied with a story reflecting the complex history of Mexico. I enjoyed how each dish was so distinct and brought you into a new tasting experience, while also fitting together cohesively. The whole experience was on point! Would love to go again.

    Excellent food abd excellent service. The wait person explained each authentic Mexican dish which was a fun experience. But it is pricey. My friend and I shared four appetizers and a bottle of Chenin Blanc. The bill was $180. We'll definitely go again but maybe skip the $90 bottle of wine.

    It’s hard to describe how wonderful the whole experience is at República — from the amazing food, to the warm and engaging staff, in a lovely setting. Can’t wait to go back!

    A Michelin worthy restaurant if there is one.. 7-course fixed menu was wonderful. Presentation and delivery was definitely one of the best ever.

    Fantastic tasting menu and cocktail selection. Unique ingredients and pairings which really showcased the Mexican cuisine. Service was excellent as well.

    Great staff and environment. The food had a few excellent dishes such as the scallops in the cherry sauce and the duck. The food overall was good. I do feel like the amount given may not match up to the price. You can tell the history of the food is important to the space which I liked.

    Tasting menu. Everything was excellent. The complex mole rightfully stood on its own. There was also a wonderful sweet and savory sort of pastry with strawberries and huitlacoche sauce. Nice and familiar selection of indie rock playing in the background. Thoughtful and attentive staff.

    Just changed format includes both tasting menu and a la carte options. Food and pairings were wonderful. Great to have an upscale yet original Mexican regional cuisine option in Portland!
