James Beard-nominated, Chef's Prix Fixe Tasting Experience by Executive Chef Jose Camarena, recontextualizes Mexican cuisine and culture through Storytelling.

We exclusively offer a prix fixe tasting menu experience, with 7-Course and a 10-Course options. Both experiences are meant to honor the complex history that created each dish, as well as leave a lasting impact on all those who taste this beautiful food and listen to our stories.

República is a tasting menu-only restaurant.
We offer a 7-course menu at $128 or a 10-course menu at $150 per person.

We kindly require all guests to disclose all dietary restrictions and allergies prior to their reservation. We are unable to accommodate allergies to nightshades, chile, allium, rice . Additionally we are not a gluten free kitchen and are unable to provide nut and seed free diners.

    Excellent meal! One of the best dining experiences I've had in Portland. This place is a gem of Mexican cuisine in the PNW and a must try for anyone interested in nuanced, innovative and delicious flavors. Every dish had a story and made our dining experience that more memorable. We celebrated a birthday and were so well attended to. Service was impeccable. We will be coming back for many more celebrations!

    Our experience at Republica was magical, one of the best meals we've ever had. I felt like we were in NYC or Mexico City. The decor was tasteful, music was excellent, service was friendly, expert, attentive and wonderful. And that's all before the food, which was exceptionally crafted and presented. I was dining with two Mexican women (my wife and mother-in-law) and both remarked that they'd never experienced many of these flavors before. A wonderful time and wonderful memory. And yes it's expensive, but for special occasions, it was worth it 10/10.

    If you enjoy chefs tasting then you need to come to REPUBLICA! I came to Portland for a long weekend and was looking for a great dining experience. I looked at several options and came upon REPUBLICA… I have experienced many tasting menus while in different countries and enjoyed learning about the the history of the dishes and the ingredients, and REPUBLICA stands out as my favorite because the dishes represent the foods that have been eaten in Mexico for centuries and how the new palate of flavors are brought into the dishes. I did the 10 tastings with the wine. Each dish came out with beautiful stories of the history of the dish and the new flavors you will experience. The service was outstanding, the servers really understood the dishes and the chefs came out to greet me. I highly recommend choosing REPUBLICA for anyone wanting to have an exceptional dining experience as well as flavors that are outstanding. This experience elevated my knowledge of mexicain cuisine and will make me crave the flavors that they put in their dishes!

    Some outstanding items in fall tasting menu: sea urchin agua chile in particular. A couple of misses, notable the sope that had an undercooked paste like flavor and texture. Portions on the smaller side-at $128 pp we all left still mildly hungry. Service is excellent and love the concept. Worth trying again.

    The reason I love dining out is trying delicious new foods. I love to eat and I want the food I eat to taste good. That’s it. The food at República was mediocre and that is a gracious rating. Out of 10 “dishes” I can only remember 2 being decent and not one dish was filling or something I would want to eat again. The squab dish was by far the most generous plate and it was smaller than a slider. The squab was barely cooked and so tough you could barely bite the miniscule meat off the leg bone. My husband couldn’t even cut it with his knife. The chard with the dish was so bitter and unappetizing I had to spit it in my napkin. The tuna that was “barely kissed by the grill” was so dry it was like it came from a can that was opened last week. The mocchi dessert was tasteless except for the super salty ice on top that made the dish inedible. The corn fog dessert was extremely bitter and too frozen to even cut. Every time you tried, it would slide around the plate in an embarrassingly loud way. The rest of the dishes were so unmemorable, I literally cannot remember what they were. And the last course, a 1.5” square box that held the saddest little “gift” I’ve even been given. A tasteless birdseed type Rice Krispie treat like thing. Really??? After leaving the restaurant, my husband and I looked longingly at the Shake Shack and almost went in for a burger. After spending nearly $500 on “dinner” we went home and made grilled cheese. We have been to DeNoche and had a wonderful experience. Perhaps the owners should stick to what they’re good at and scrap the attempt at fine dining. I appreciate the attempt to honor and highlight the indigenous Mexican ingredients and culture but it was a complete failure. In a city of great food, Republica is a dud.

    AMAZING! This is an incredible experience that I hope everyone can enjoy. The food was outstanding and the story told with each dish was delightful. It was playful, irreverent, and so dialed into the history and culture of Mexico but not how most think of Mexican cuisine. Being a former chef, the kitchen team was a marvel to watch work, and the team approach to service and the teaching/learning they brought to the table was second to none. Run, don't walk to República!

    Truly one of the best dining experiences I have ever had. Traveling solo to the west coast, this easily has been one of the highlights. Chef Lalo has created an inclusive and well thought space that is super welcoming. The flavors, the plating, the timing, and the stories were all incredibly done. Cheers to the entire kitchen team! Not to be outdone, the front of house staff was welcoming and excited. Multiple people were instrumental in making my experience outstanding (Andres, Daisy, Liz just to name a few!!!). The storytelling was phenomenal, service was efficient and not at all intrusive. If I am ever back in Portland I Will be returning to see what creative experiences the team has created! Cheers to the entire staff!!

    Food is outstanding. The storytelling with each course is superb, and it really helps set the tone and mood for the tasting menu. Unfortunately that's where the good stops for me. The 7 course experience is listed as taking two hours, but our check was dropped within 75 minutes. The staff, of which there are plenty that come by the table, didn't once offer to pour the bottle of wine we brought with us. Similarly, empty cocktail glasses placed at the edge of the table sat there as multiple staff coming by the table looked past them for numerous courses. The details seem covered in the food, but sorely lacking in the service. Unfortunately for the price tag and overall experience, we likely won't be back and would have difficulty recommending it. We were disappointed in our experience.
