We kindly require all guests to disclose all dietary restrictions and allergies prior to their reservation. We are unable to accommodate allergies to chile, allium, rice or nut-free/seed-free diners.

We also charge an automatic 21% service fee in order to provide our staff a living wage and to allow us to work towards providing benefits.

República…A “Mexico Forward” Chef's 10 Course Tasting Experience, By Executive Chef Jose "Lalo" Camarena When Chef Jose “Lalo” Camarena dreams up a plate, he does it understanding the intentionality of the restaurant. República aims to create original dishes and present them with historical roots in an etymology which oftentimes has very little to do with what we now call Mexico. That is a lot to ask of a Chef. But the all the chefs and all the staff bring it home! Or actually, they bring it to the table! There are rules that each course offering must pay respect to the food from the country that is now Mexico. They as themselves: Is there a meaningful historical connection between this dish and the culture? Are the components of the dish currently in season? Can they sourced locally? Is it beautiful when plated? Does the taste match the beautiful aesthetics of the plating? They made us feel like family and that they were celebrating with us! The food was beautiful, well thought out and amazing! And we extend special thanks to wait staff extraordinaire: Mia - who gracefully glides around the tables offering tasty tidbits of knowledge on what we are eating, ensuring all is perfect. Andres - in charge of our beverage pairings for each course, excellent at knowing his audience, making you feel at ease, while pouring our drinks and educating us on the significance of each winery and offering delectable descriptions of what we are about to drink. Lizz & Juan - Both a wealth of knowledge not only about the restaurant & the food, but also the cultural heritage of each course. From the expert team of chef's rallying in the viewable kitchen, to the dishwasher who must have been frantically cleaning each plate, glass and all 2,300 pieces of silverware just our table alone used - we couldn't have celebrated without them!!! We booked this 4 months ago to celebrate 2 birthdays and a half-birthday! República did not disappoint! A must do experience!

Such an amazing chef tasting experience. Every single waiter and host was so knowledgeable and friendly. They made us feel super comfortable. The food was excellent and such a great way to try new foods that we never thought to try before. Highly recommend doing this chef experience at least once!

Republica is delivering a bit less experience for a lot more money. Compared to its prior venue and menu, the restaurant has upgraded ambiance and minimized portions. But confusing narration (noise and servers’ masks made hearing a challenge) and minuscule portions added up to a confusing whole. Seven-courses for four, plus mandatory fee, 3 cocktails and two wine corkages = $700 UPDATE 12/1/23: Portland Monthly writes, “Dishes arrive with narratives and history lessons, including how indigenous ingredients came to meet Old World elements” Don’t believe this - servers skipped most of this and seemed disorganized and stressed on our visit.

The meals were advertised at $85/person. It was $126/person. The wine pours were VERY small. The steak dish needed to have a finishing salt. 21% fixed tip too high for product. Lots of people in the kitchen without much to do. For a $495 dollar dinner, we should have been amazed out of our minds!

A wonderful dining experience. The food was creative, playful and most importantly delicious. The staff were friendly and helpful and overall the service was good. There were a few service missteps, most notably the failure to ensure that wine pairing were served before or at the same time as the courses, but overall it was a great evening that I hope to repeat.

This was a special occasion (my wife's birthday) and we don't really eat out much. This was a very memorable experience and an education. Each course was complex, subtle, creative and unique. I love experiencing food that I would never and could never recreate at home, and this was certainly that experience. They were very willing to accommodate our vegan request and every member of the staff was delightful. Highly recommended!

Overall stunning 10 course tasting menu. A couple of the dishes were not as strong as others. Stand out dishes for us included the lobster horchata, the esquites raviolo, and the mole steak. The tripe was far too chewy to actually enjoy the flavor, and I would have the chef reconsider that dish entirely. Overall, it was a wonderful experience and I love what they are doing.

This was a surprise birthday dinner for my partner. It was so much more then I had hoped for. We appreciated the personal stories and history offered with some dishes, and we enjoyed the elaboration of other culture's influences of certain ingredients in the dish. Our main server was excellent, and I appreciated the notification of the price of a special spirit I was inquiring about since it was not actively available to see on a menu at the moment (get the raicilla, its worth it). We were thrilled to try Mexican wines as well. The additional servers, who all had great team work, were helpful as well. I had been looking forward to eating here since I learned of it deep in the earlier days of the pandemic and now that the restaurant group has grown, we will be trying the others when possible. Thank you for making such a special night for us.

What a wonderful, ever-memorable dinner at República! Indigenous-Mexico-forward with a BIPOC, LGBTQ, women wine list and every plate was from the heart of chef Jose Camarena and his staff. And every bite was eye-rollingly good. They absolutely deserve a Michelin star (or three!) but apparently the guide doesn’t cover the Pacific Northwest (?!?). All my love and apoyo nevertheless. I hope for great things for this brilliant staff! And I’ll always remember sous chef Gricelda’s “Manos!” ☺️ And thank you to Chef Jose for the photo with me.

Can I refer to a fine dining experience as cozy, friendly with familia undertones? The food was interesting, perfectly prepared with a great deal of depth and complexity. The staff was warm and inviting. Everyone seemed genuinely glad to be working to make our experience special and held an attitude of pride in what they were serving. I'd highly recommend.

FABULOUS! We came for my husband's birthday and got the 10 course meal. It was absolutely one of the best fine dining experiences we have ever had. We got the spirit-forward beverage pairing and everything was expertly crafted, from the pairings, to the timing, to the presentation, delivery, and context. An unforgettable experience. Highly highly recommend. Run don't walk!

There are very few places in Portland where you can have a curated multi-course meal with attention to so many details. The wait staff was knowledgeable, attentive without being fussy and knew the menu ingredients and rationale for presentation. The food was unique, delicious and delivered to the table with great presentation. There were a couple of "breaks" in the timing even though the restaurant was not busy. The ambiance was quiet and the focus was on the kitchen. While I appreciated the privacy, it felt a bit lonely in the restaurant on a Sunday evening. I would definitely go back. It is a splurge worthy of people who appreciate the high quality of food, the time involved and the attention to detail that is delivered by the chef and the staff.
