Excellent as always and the perfect place to celebrate. They make you feel special. Recommendations. . tomato basil soup, brussels sprouts (so good), braised short ribs, red velvet cake, filet Pittsburgh style with bernaise sauce. Just an all around great night. Oh and the lavender lemon drop martini was delicious too!

They didn’t cook my wife steak correct. We talk with the host and they tried to fix the issue but it was the same as before. My wife was fairly upset hoping to have a good experience. We will not be going back.
The beef carpaccio was melt-in-your-mouth delicious. The boneless rib-eye (cooked the red side of medium rare) was like candy. The service was outstanding and the ambiance was perfect. Thank you for a truly memorable meal.

We got to the Chophouse early, so had our apps at the bar. Tempura Rock Shrimp and mussels in beer and tomato with pepperoncini. Both were heavenly; I have always used white wine to cook mussels, but it turns out that beer and mussels are a match made in heaven. The service was spot on - the bartender even remembered to provide a bowl for the empty mussel shells.
We moved to the dining room and our new server was not familiar with the bar (didn't have a clue what Campari is) and had not confirmed what was not yet available from the menu. As a result I had to explain to her what a Campari and soda is, and ordered three entrees before I successfully got one that was ready (the braised short ribs were still being pressure cooked, and the wild mushroom ravioli was not ready, either). I settled for Sea Scallops - very good, even as third choice goes. My husband had a very nice ribeye steak, tender and cooked as ordered to perfection.
Service continued to be iffy; I think this may be the waitress's first fine dining job, but she was trying to do a good job. For dessert I had a creme brulee, which had a very unique consistency (almost mayonnaise-like texture), but a marvelous flavor.
We have to be in Green Bay every 2 - 4 weeks, so we will be going back to Republic Chophouse for our next special occasion.

Kaitlyn was charming, fun and still very professional. She made our evening so very delightful. She even convinced us to have dessert! Which, we never do. Delicious food. Great wine list and always our fave in Green Bay.

Wonderful! I was on a solo trip so dining alone and my server very attentive and knew her stuff. I am a foodie and was delighted with all my choices from cocktails, appetizer, entrée and dessert. I will be back next time I am up in Green Bay area. Kudos to the entire staff.
Republic Chophouse is 'the' premier restaurant in Green Bay. Kaitlyn was our server and she was simply awesome. Steaks were over the top and they made it special by bringing a very generous slice of cake for my wife's birthday.

Upon entry you don’t expect the sheer size of the place. Very big, feels a little empty but that is also accompanied with the fact of Covid-19 mandates still in effect. So the amount of people there with it being a Sunday evening, was just the right amount. Service was incredible, pleasantly present and also distant. Seasonal items such as oysters are not available right now. Which was a disappointment due to the fact that it was a finer dining establishment so you would expect their kitchen to have those is stock. But other than that the quality of the food they do have is very high. Everything made fresh and to standards. We ordered the mussels as an appetizer, tomato bisque, 30-day Dry Aged Ribeye and the Blue Cheese Ribeye. Included was bread and three types of butter. I recommend the Soy-Sesame butter, it’s salty as you would expect of a soy based butter but it’s not overwhelming and also has a way of making you think it’s sweet instead. The steaks were cooked perfect, there is definitely experience and care placed. The cuts, even on the non dry-aged meat was of very high quality. Melt in your mouth, perfectly seared and crusted. Served by itself. Very simple and also satisfying at the same time. For dessert was a crème brûlée. Very traditional and never disappointing if done right. The caramelizing was not even and a little burnt is some places so it was not the best. But I do not expect it to always be served like that, maybe it was just bad luck that night. What was under the torched sugar was very light and pleasant, so I would not deny a second try at the dessert for confirmation.

My wife and I went here for our 10th Anniversary. Our server, Kayla, was outstanding. The steaks were prepared to perfection. My wife enjoyed their house Cab. While they had a semi decent bourbon selection, their prices were a bit high. Overall, we will go back.
Food was excellent. Service was very good. My disappointment comes from making a reservation in advance and noting we were celebrating a birthday.
Very disappointed that NO staff mentioned a birthday or asked about a birthday or said happy birthday.
I thought a complimentary dessert would be appropriate but even if that’s something “they don’t do”...acknowledging we are here to celebrate a birthday would’ve been appreciated.
So again, food and service was very good but it’s the little things...

Great selection on the menu in every section, service was great, quality was great. Pricey, but you get what you pay for, and the only location that provides this kind of service north of Milwaukee. We recently moved here from the Milwaukee area, and this is the only place near our home in Appleton that compares.
Republic Chophouse is a favorite for special family dinners. Food is amazing and we always have great service.
As always the best experience I ever have eating out. The service - Jules - is my favorite part of the meal. Going above and beyond to make sure our needs were taken care of before we even thought of something. The filet was melt in your mouth good. And the social distancing was spot on so we felt incredibly safe. Only thing missing was the sparkle of the manager Heather.
Beautiful place and the staff was very professional and on point. We had oysters that were very fresh and delicious. My husband got a cowboy ribeye and I had a filet they were cooked perfectly. The flavors are great but a little on the safe side.

The food was amazing and delicious. The service was very poor. Our total dining experience was over 3 hours, I know that there were 6 of us but seriously?! I don’t remember the servers name, (Laurie maybe). There didn’t seem to be that many other tables, and it was a Monday night. From when we sat down to when we finally received our entrees it was going on and hour and 45 minutes. Yes we enjoyed an appetizer then a soup/salad course but seriously almost 2 hours until the entree is served?! At the end I had to ask the bartender to find our server so that we could order dessert and get our bill because our shuttle for the hotel was done running at a certain time. Again the food was outstanding and delicious but service was seriously lacking, especially for the money our group spent.
What a great place. Tables are placed far apart so you can hold private conversations. The waitstaff is incredibly good and the food was fantastic! Nice selection of wines and specialty drinks. A must go to in Green Bay.
