The sides were delicious! Gouda MAC so good! Call me simple but the aged T Bone was definitely not worth the $70!!!!!! The waitress was great and informative, but still the steak was not worth it! I personally like the place but if I return will not spend the extra cash on the aged steak 🥩!! Omg the red velvet cake was huge and looked amazing to !!!!
Family was in from out of state ... we drove up from Brookfield. .. for our Mother's 92nd B'day.
Open Table system wouldn't accept a reservation modification from 5 to 4 diners. Thus, after being seated, the Hostess asked us to get up from our table, (which was unceremoniously placed adjacent to the noisy main aisle) so she could break it down to a 4 top ... rather than simply removing a place setting!!
Our Server, Jolene, did her best to make us comfortable and get our food & beverages to us promptly. She was very sweet & patient in answering questions about the menu. Both she & the Hostess knew it was my Mother's B'day. The cocktails were very good. The tomato basil soup was served luke warm. We ordered garlic mashed potatoes to share since, per the menu, the steaks were only served with the soup or salad. To our surprise our entrees appeared with "home made" potato chips on the side. Would not have needed mashed potatoes! The steaks were beautifully prepared. Side sauces were thin, also luke warm, and not particularly tasty. The biggest disappointment was their failure to recognize Mom's birthday with a dessert offering. I've never dined at a restaurant of that price point that did not surprise the honored guest with a treat. Republic Chophouse aspires to be a Bartolotta- level dining experience. It has a long way to go.
FOLLOW-UP: Since posting this review I was contacted by Heather, General Manager at Republic Chophouse. She was most contrite, very courteous & sincere in her concern for our dissatisfaction. Her timeliness and response demonstrated the highest regard for our feelings, and spoke to the integrity & customer culture of Republic. I have every confidence that our issues were addressed with kitchen & waitstaff in the attempt to educate & improve performance for future diners. I will certainly give this restaurant another try!
Our server said he had been employed there for 8 years, thoroughly impressed with his menu knowledge and quality of service. So glad we were able to get him on our first visit to the restaurant.

Menu reads better than the actual food. Value to substance isn't there, as we pictured this being one of the nicest restaurants in town. Had the scallops, pork chop, tuna app, and Mac & cheese. The side was the best part of the meal. Scallops didn't have much flavor. Requested pork to be cooked to medium, but was raw, which I wasn't totally aware of while at the restaurant due to the lighting. Ate around it just in case, and saw how really uncooked it was when I took it out next day to eat the leftovers from the meal. Overall disappointed in the food and long food/drinks wait time. Ambiance was very nice.

It was delicious! I had Black Bass and my husband had Australian lamb and didn’t forget that Red Velvet cake.

Bacon wrapped sea scallops were the best we’ve ever had. French Onion and Tomato Basil Bisque soups were very good. Tenderloin Filets melted in your mouth.
Our server, Heather, was very knowledgeable about the menu. She delivered each course perfectly timed.

We opted for the chef composition steaks...garlic filet and blue cheese rib eye....Both cuts were aged and very tender, perfectly seared to medium rare. Very good and unique flavors that we will definitely try again. Paired with some great 2013 vintage old vine Zinfandel and asparagus and baked potato sides it was all outstanding. We didn’t have enough room for desert but those around us that did looked to have some great treats. We will be going again. Right around the corner is a great wine bar (Aardvark wine bar) for an after-dinner drink.

I've been eating at Republic since they opened in 2006 or 2007. I would say overall it's really great. My most recent visit was a home run. Everything was top notch and without a doubt worth the prices. Republic is definitely a "nice dinner" for a special occasion or a business dinner. The bar area is great and the bartenders are almost always top notch. This isn't a craft cocktail place, and they seem to have scaled down the lounge/appetizer menu: more seafood than I remember. They have private dining space and semi private spaces so depending on what's available, you can have an evening that's a bit more energetic or a more romantic/quiet dinner. Sometimes it's not quite perfect. I'm not surprised by some of the negative reviews. But when everything clicks like it did for me this most recent trip, it's fantastic. Like Holy Cow! Well worth repeat visits.
We sat at the bar and did a full service dinner and the bartender was busy but very attentive and accommodating. We had a cowboy cut steak and it was fantastic. Try the Mac and cheese too! Overall great steakhouse in green bay

Dinner for 4 took about 2 hours on New Year’s Eve. Steaks melted in your mouth. Sides were delicious. Would go back many times over.
My husband made a surprise reservation for our NYE Anniversary and it was amazing. All staff was super friendly and professional, especially Jade at the bar and our server, Steve. Baked French onion soup, lobster, steak, tiramisu - all perfectly delicious. Can’t wait to return.
A New Years Eve dinner at Republic Chophouse has always been our end of the year go-to place. We always request a bottle of Dom to be ready at our table as it can sell out quickly that evening although there are other lovely sparkling wine options on their wine list that won't disappoint. The champagne was chilling in an ice bucket at our table waiting for our arrival as requested. Warm, welcoming and hospitable service started when we walked into the door. Coats are offered to be hung up for you before you are seated. Table side service by Logan was also welcoming, attentive, fun and knowledgeable. There was a special NYE menu in addition to the regular dining menu which made it hard to make a choice with such nice dinner entrees available. Being a festive evening of the NYE holiday there was a lots of good energy in the dining room. Republic has large roomy booths or tables and a very large bar that located separate for the dining area. Our table's food order all arrived as ordered and paced very nicely so you were not rushed into eating your salad/soup while your entree is arriving. Despite it being NYE, all these descriptions of our Republic experience occur on a regular dining basis. Very lovely dinner experience to celebrate our end of the year!

For the price, your food should be warm when it comes to you. Had to ask twice to reheat. Also food should be spectacular instead of just good.
We’ve been here a few times and never would I say the food is extraordinary especially considering all the other upscale restaurants in the area however this time the food was 1star-2star at best. Bland, tasteless and even the king crab legs were terrible and dry! Almost as if they cooked them the day before and just attempted to heat them up before serving. My almond crusted scallops were very bland and the almonds that covered it were roughly chopped at best leaving huge chunks of hard pieces of almond to try and eat with the scallops. Service was excellent though. Next time I will be taking my money to one of the other many excellent restaurants in the area.
The steak was great. The tuna quality was below average. Atmosphere and service was very good.

The prime filet was delicious, my wife's rib-eye was sub par. Atmosphere and service were great. If meal had been up to the price (expensive), I would have rated it a 5.
