Huge buildup given what we have heard and how long it took us to finally dine and drink here. And we were not disappointed!!! Everything about our experience was fantastic. We ordered two cocktails: "Just in Thyme" and Lavender Manhattan and both were beautiful looking and delicious. We did a salad and two mains and everything was perfect. We will be regulars! Also, don't be shy about calling or walking up. They have more tables available than open table indicates...

Somos vecinos del area, primera vez que visitamos y bien contentos decidimos visitar PROLE. Nos encontramos con un menu limitado (y entendemos porque el mixologo nos explico por la situación de la pandemia). Aun así, decidimos darle la oportunidad luego de ver la promoción del restaurante en los medios. En general, la comida estaba bien pero para los precios no sentímos que nos ofrecieron una experiencia gastronómica de alta calidad. El plato del salmon y los ñoquis no tenían sabor aunque reconocemos mi pareja y yo que los ñoquis se hicieron from scratch. Ordenamos también el risotto y su consistencia/sabor estuvieron bien igual. En cuanto a los tragos tomé coctel y estuvo bien (mucho hielo y puede mejorar en la mezcla de sabor para que se sienta la frescura de ingredientes haciendo querer pedir otro). De todos modos les queremos dar la oportunidad nuevamente.
When we visit a restaurant we always look for 3 things, good service, good food and innovative drinks. Now we have added a fourth, strict safety protocols. Prole has them all.
Prole was a quiet experience. It was my wife’s birthday and I was looking for an upscale restaurant that would provide a fulfilling dining experience. I reserved a table for four people and invited a few friends, when we got to the restaurant we were the only people there besides the servers and the kitchen staff and it stayed like that the rest of the night, we had a restaurant to our own. The server was very attentive and nice to us all, he was knowledgeable with the menu and was able to explain the menu items very well. The choices in the menu were very limited and also the server informed us of a few items that they were missing. For appetizers they only had a cheese board and a kale salad, we opted for the cheese board but were told it would be incomplete because they didn’t have enough cheese, which we agreed on and were served 2 out of 4 different cheese on a wooden plank. For the main course we ordered the wagyu steak, veal ossobuco pasta and the duck fried rice. Both steaks were under cooked and under seasoned, I asked for a medium and received a rare and my friend asked for a medium well and received a medium. I asked the server to please have the chef cook my steak a little longer, yet when he brought it back and it was still on the rare side. And my friend was so turned of that he didn’t even want to eat it we asked the server to please cook his steak more and the server replied that they couldn’t because the chef had turned all equipment in the kitchen off and it was impossible.The pasta was a bit too al dente. The only thing that was properly cooked was the duck fried rice. I would have to assume that the chef took that night off and left an apprentice or a line cook in charge. NOT MY BEST EXPERIENCE! Chefs should be willing to create a good experience for their guests, it felt to us as if the chef there just wanted to go home. I am also a chef and will never say no to going a little extra to create a good dining experience for a guest.
As supporters of Puerto Rico´s culinary scene, we have witnessed how local restaurants have confronted the enormous difficulties presented by the different and often changing government restrictions on the industry to control the pandemic, such as limited number of customers, drinking hours etc. Although we recognize and agree that these measures are needed, the sad reality is that they affect the operations of the restaurants, limiting the size of their menus and staff. Local restaurants such as Prole have nevertheless continued to prepare excellent food and at the same time comply with the safety protocols required. Such was our experience when we dined at Prole last Sunday. Let´s keep on supporting our local chefs!

Amazing food !!
Our first visit to Prole since the lockdown and nothing has changed; food delicious (don't miss the fried rice with duck breast and the new drink Ay Caramba, made with local Carambola fruit). But most importantly, Prole has in place very well thought and organized safety measures like table spacing (more than six feet apart), digital menus, small bottles of hand sanitizer in each table, and all their staff wear face masks and face shields. These measures, (that are communicated to the client by the staff in a very cordial manner), including the high ceilings at the restaurant provide you with a real sense of security when you are dining and enjoying the great mixology that this restaurant has. So, visit Prole and have fun!

This is not my first review of Prole. This visit confirms that they remain consistent in delivering excellent service and food. Our table tried some of the new items on the menu that were both very good and reasonably priced.
The food was great and exquisitely prepared and presented, the waitress was spectacular, great service. Great drink variety also. Definitely a place to go.
Food was outstanding and the presentation of each plate was unique. Restaurant decoration makes the perfect place with an outstanding food. Drinks are also special and great. El servicio muy bueno! No tuvimos que pedir cubiertos, servilletas, agua. El ambiente muy lindo, a gusto y chevere. Los precios muy buenos! La comida riquísima lo único que el tiempo de espera fue demasiado. Nuestra reservación fue a las 8:30, en lo que llegaron todos nos sentamos como a las 9 y a las 9:15pm tomaron nuestra orden. Como a las 10:30 salieron los aperitivos y media hora más salió la comida.

Overall great experience. The food was amazing and the place had a really cool ambience. What mostly surprised us was the amazing service from our waiter. She had complete knowledge of the menu and details of ingredients.
Beyond my expectations. Menu is a little bit restricted but our choices were perfect in presentation and taste. Amazing food and superb service / staff. We are definitely going back

Food was amazing. That said, reservation was for 9:30pm and we didnt get seating until 10:05pm
We were seated at 9:30 and ordered a bottle of wine and 2 dishes to share among 3 people. We told our waitress those dishes were starters and that we wanted to order more later. She never told us the kitchen closes at 10. So when we tried to order more food at about 10:15 she told us “sorry it is too late and you should have known because it is stated in the Open Table platform”. I think the staff should have communicated the time for last call as soon as we were seated and not tell us we should have read it on Open Table. Aside from the inadequate communication, the salad and the gnocchi were delicious.
PROLE is always a great time. Never fails to impress us with perfectly executed ever-changing menu items, engaging staff, lively environment and deliciously balanced cocktails. Whether it be a double date, girls’ night or family dinner... PROLE is always at the top of our list. Thank you Sarah and Jose for creating this little piece of culinary heaven in Calle Cerra... scratch that... in Puerto Rico. Can’t wait to go back soon.
