Our 30 minute Raw Bar "omakase" seating is an our interpretation of traditional sushi with a slight fusion. Offerings vary seasonally and feature that day’s highest quality selections. Our chef begins with nigiri, before serving multiple handrolls. He considers his rice as important as the fish, and it reflects decades of cultivating a precise balance of red vinegar, sugar, and sea salt. At the Raw Bar we employ various techniques to coax optimal flavor profiles from the fish, including aging , curing, and adjusting temperatures before serving. In every piece of sushi, our chef seeks to harmonize size, appearance, temperature, texture, and taste. While combining these subtle variables, put your trust in our hands and savor each bite and its moment of perfections.

We went for the new $24 omakase meal and it was fabulous. Such a value for the money and money aside, the preparation and time taken with the ingredients by the chef is amazing. We also loved the detailed explanation of each piece of nigiri we were about to eat. The meal was truly delicious! We will be going back again and again.

The omakase sushi experience was incredible – creatively prepared, super fine fish that melted in your mouth, which was surprising for such a reasonably priced and casual spot. The owner explained that Pok gets the fish overnighted two or three times weekly from Japan for the omakase, which is only $24 for five delectable, different pieces of sushi and two hand rolls. The flounder is actually delivered live in water, making it the freshest fish you can get anywhere in Dallas. Check this out! You won't be disappointed. They also have the best matcha drinks. The poke bowls are excellent too.

Pok has unbelievable quality fish. Carmelo at the raw bar is 10/10 amazing. HIGHLY recommend the new 30 min 8 course lunch.
