Pivovar is in a cool space and progressing area of Waco. It is near the silos which is an up-and-coming area of the city. The restaurant is in a great renovated building showcasing blown glass and its onsite craft brewery. The space has a large central bar, back patio area, and comfortable vibe. The high ceilings kept the noise level down which is good for conversation. The parking in the back of the restaurant was hard to navigate and pay for--even on my phone. I also could not understand my parking for 2 hours was near $20--and the area had very few cars on a Friday evening. Offering a valet stand may actually work better. I had the dark lager which was good, served generously in a heavy glass mug. The sausages and potted beer cheese were stand-outs. The pocket schnitzel my husband ordered was good, my reuben sandwich was just ok. The Apple streusel was great with the butterscotch sauce. I would highly recommend it. This place though has its service down. From the host and hostess and our server--everyone was very efficient and attentive. The food runner missed a couple of on the side items/condiments we ordered--but did not ruin our overall meal. With a couple of tweaks this restaurant would go from very good to a standout in central Texas.

We were really excited to try breakfast, having heard good things about their dinner menu. Great location, lots of parking, which is rare to find in the area. They are only open for breakfast on the weekends. Service was excellent. The food was fine, two of us had the loaded biscuit, which is a ginormous biscuit with two eggs, cheese, and sausage gravy. Neither one of us could finish the meal. The biscuit was really tasty, the gravy was a little on the salty side, but all in all a very filling and hearty breakfast. Two others had breakfast tacos, which were three small, think street taco, breakfast tacos, with no side of potatoes or anything. they both said the tacos were good, it just was not a well rounded meal. Those two ordered a second breakfast in order to fill up. The fifth person in our party had Migas and said they did not taste like Migas, but to be fair it is not a Mexican restaurant, it is Czech. We will definitely go back and try it for dinner as I’ve heard the schnitzel is delicious. If we did go back for breakfast, I will just do the standard breakfast with two eggs, a meat, hashbrowns and toast, I saw that at another table, and it looked really good.

Pivovar has always been my go to place but all the staff were subpar. We went 30min without seeing our waitress. We even tried to pay at the bar so we could leave and he said he couldn't help us. No manager anywhere. And it was half empty so being busy wasn't even the reason.

Loved it the first time I went here with my fiancé and loved it when I went here this time! Great service and an excellent ambiance. The schnitzel is my go to and they also have a great sausage appetizer. Highly recommend here

Had high hopes since a few folks recommended this place. Ordered a burger and they had run out of burgers, took forever to get drinks served, the one dish came out cold and even after being “warmed “ the mash was still cold. Also very loud and hard to have a conversation. Disappointed!

Food was good, but not many czech specific dishes. I suggest you add Chlebicky Czech Open-Faced Sandwiches as an appetizer dish and VEPŘO KNEDLO ZELO for a main entre. Also, where is the garlic soup? I am czech, 1st generation American and was sad not to see traditional czech dishes on the menu

We had been wanting to try Pivovar for quite some time, and now it's on our list of go-to places. We were early for our reservation so we sat at the bar for awhile and chatted with the bartender who shared his knowledge of various liquors with us. We shared the Czech Beer Cheese which included two types of sausage, beer cheese, fig preserves, and crostinis (generous portions so we brought some home). My husband had the Texans Pocket Schnitzel and said it was very crispy and not greasy at all. I had the Pork Shank - very tasty and more than I could eat in one sitting. The service at the table was friendly, competent, and unrushed.

A great spot in downtown Waco. Excellent food and well-made drinks. This has been needed in Waco for a long time. Definitely recommend if you’re visiting from out of town or a long time local!

We made 7:15 reservations for Saturday evening. The crowd was minimal for prime time Saturday, but we still had about a 10 minute wait before our waiter took our drink orders. After that, however, service was great. Food was excellent and cocktails were amazing. The live music was fantastic as well. We had a great first experience, and I would highly recommend it for those looking for something more upscale in Waco.

We had a great time here, service was friendly and efficient, the live music sounded great and wasn’t too loud, and the food was delicious! We had the Czexan Schnitzel and the Short Rib Goulash, would order both again. The brownie ala mode for dessert was also very good. Not a lot of beer choices but enjoyed the lager and the wine flight had a nice variety, plus the serving size was worth the price. Only downside was having to pay for parking.
