What's not to like about Perle on Maple in Le Meridien, Stoneleigh, where we (party of four) dined on July 12, 2019. The restaurant features excellent cuisine -- from appetizer to dessert -- and attentive and knowledgeable service. Our delicious repast was preceded and followed by our interactions with host Manuel. He greets guests as they should be greeted, with a sincerely warm welcome and an introduction to our waitress (a "server" is merely a person who brings food to the table). Before leaving us in her very capable hands, Manuel told us that he is also the hotel's historian, and whetted our appetite for a post-dinner tour of the penthouse suite on the 11th floor, which is much as it was when the hotel was built in 1923. There's more to the suite than opulent woodwork, stained glass, fireplaces, and huge dining room and ballroom. There's also a ghost story. But I won't give it away. If you dine at Perle on Maple when Manuel is at the door, be sure to ask him about Margaret if he doesn't mention it to you.

I really hope word doesn't get out about this PERFECT spot. Beautiful food, lovely surroundings, and even one of those rare ROUND 8-10 tops that makes a big group event so much better than a long table! Service could not be beat and the mixed drinks truly yummy.
Great outdoor patio! Food was great, service was excellent. The bar can get lively in the evenings.
We got to the restaurant just as the power went out at the hotel. The staff served us drinks and the smoked fish dip with homemade potato chips, which was outstanding. They made us feel comfortable and took care of us until the power came back on. We then had a wonderful dinner. They went above and beyond to make what could have been a failed dinner an overall pleasurable experience even under the circumstances. We will go back!

Great spot for a quiet dinner. Service was excellent, though not fast if you are in a rush this is probably not your place. It was perfect for my group of 4.
It is a hotel restaurant. That said, the interior has been painted white and the interior is now light and pretty. The service was bad and, although it was Mother’s Day, there wasn’t a crowd, so I couldn’t blame it on that. The food was good, but maybe not good enough to make up for the price and service.
The wait staff was exceptional. The food was excellent. Love the chicken. (fell off of the bone)

Sorry to have to write a negative review; however, my experience at Perle on Maple was unenjoyable. Liked the ambience, and our waiter was on top of his game but the food and choices of food on the menu (Easter) were not to our liking. Had difficulty finding dishes we wanted to order because combinations were strange. Sweet potato pancakes were delicious but covering them with shredded duck detracted from the pleasure of devouring the pancakes. Croque Madame was dry with very little mornay sauce and bread so thick that eating it was difficult. The sandwich should have been made with thinner bread and creamy mornay sauce. Unfortunately, no one in our group left thinking they had had a beautiful experience. Sure hope the kitchen gets their act together, because the venue is very nice.
Overall food was very good but not off the charts great. Service was mediocre as the waiter could not seem to be able to open a wine bottle and was not hugely attentive (and the restaurant was not busy). I was staying at the hotel as were my guests so it was very convenient but I would likely go elsewhere next time I say there.
I’ll start with the positive. The service was amazing! Our server, T was wonderful, kind, and so attentive. Also, the manager, Jorge, was superb!!!! He treated us so well and tried so hard to make us happy. None I have what I’m about to say is either one of their faults. The food was not very good. The goat cheese appetizer was actually terrible. I’m not sure there was even any goat cheese in it. It tasted like mashed potatoes. The duck was good at first, but then it was so rich I had a stomach ache the rest of the night. The oysters were OK. Again, I want to say that all the wait staff was exceptional! The bartenders were great too!
Service was exceptionally slow and forgetful of our order and entree’s. We were also the only table at 1:00PM on a Sunday. Subsequently, the food was also very average. However, the manager was engaging and tried to insert himself to better the terrible experience we had.
Dominique was an awesome waitress. I had the duck and my wife had the pork. We had the fried oyster appetizer. It was all so great. So was the dirty martini with blue cheese olives.....awesome little hidden place with a great bar that was very hopping busy.
The French onion soup was good but it was very very hot (that is what happens in microwave ovens) :/
The entree was mediocre, at beast. The Salmon was fried hard/dry on the outside and medium in the middle - again, funny that the fish was very very hot. Good thing, I didn't have to pay for the dish as they took it off the bill.
For dessert, this is funny, I ordered "CHOCOLATE LAVA CAKE , crème anglaise, raspberries".
It said the warm chocolate would be flowing out when you cut it. Well, again, it was very very hot and dry with no chocolate floating out as lava. One poor little raspberry (singular). I sent the dish back and they took the dessert off the bill.
This is interesting - there were 2 others tables with couples and they also sent their food back. 3 tables occupied all sending food back.
The servant was really nice and he tried but didn't have anything to work with.
In summary, the Stoneleigh hotel is very nice and the staff is great. I'll stay there again - and to be fair the breakfast was great. To management: get rid of the microwaves -that is not they way to prepare food in a restaurant named "The Pearl on Maple Street".
Yes, I also have to wonder why we choose to eat our anniversary dinner in a hotel restaurant?
We are over 60 so we should know better - but its good to know we are still making the same mistakes young people are making:)
The staff are an exceptional group of professionals who will exceed your expectations in service. The quality of the dining experience is worthy of 5-Star dining.
What a delightful evening! We had dinner at the restaurant to celebrate my Mum's birthday. The staff went out of their way to ensure that she felt like a princess throughout the evening. Everyone was incredibly attentive and the food was divine! We definitely indulged and it was totally worth it - my Mum is STILL talking about how much she enjoyed the evening, the ambiance, the food... everything! We went for New Years Eve dinner, the Perle was not busy. Plenty of table available, perfect amount of distance between other tables. The noise level was perfect for intimate conversation. The food was good, much better than your average hotel restaurant. The service was lacking some initially my drink glass went empty, had to wait for refill. Our soup/salad came out at the same time as our entrees. No explanation or apologies given. Towards the end of dinner the service improved when the maitre d and manager were stopping by to service our table. We will give the Perle on Maple a second chance.

15 mins to get a drink , sea bass was terrible , had to get up to get myself a plate for appetizers. Way to expensive for food and service. After we ate there left to go to another place to get food.
Now and then you encounter a meal that exceeds your expectations. Our Christmas brunch at Perle on Maple was one of those extraordinary meals. My family has a tradition of eating out on Christmas day, which is not always easy given that most restaurants are closed for the holiday; but we usually eat at a hotel restaurant. We had not dined at the revamped Perle on Maple, which is located in the historic Stoneleigh Hotel, so we decided to give it a try. So glad we did. The restaurant has a bright, welcoming, bistro feel, which complements the largely French cuisine. First course, the goat cheese appetizer was cooked to perfection. Served creamy and hot, with the right amount of crusty carmelization on the side of the pan - we ate the whole thing. Second course, the onion soup arrived with steaming onion broth and lots of gooey cheese in a classic crock - just yummy. Tip - save some soup for the french dip sandwich. This was also excellent, and even better when dipped in the rich onion broth. My wife loved her beet salad, and said it was cooked to perfection. The highlight of the main course was my daughter's steak with yukon gold creamy potatoes, part of a very affordable $55 3-course prix fixe holiday menu. Again, nothing particularly unusual, but a juicy steak done right is always a treat. The final "gift" of this lovely Christmas brunch was the fourth(?) course - our deserts - warm profiteroles with velvety vanilla bean ice cream - both the pastry and ice cream are made in house (see picture), and a selection of house-made sorbets that filled your mouth with intense fruit flavor. We also had the creme brulee' which was well executed in classic French style. We toasted to a perfect Christmas brunch with glasses of Moet Rose' champagne. We look forward to a return visit soon!
Incredible French Food - only downside is that you definitely feel like you're in a hotel lobby.
Sat nite. 7pm reservation. Was running late and advised 7:15. No problem. Only 3 tables had diners when arrived. At least 6 tables were empty and needing to be bussed. One waiter. One host. No buss. Was fairly confident disaster awaited. Took 15 minutes to be seated after a table was cleared. Another 15 minutes before waiter showed for drink order. Took food order before drinks arrived. Took 15 minutes for drinks to arrive. (It's 8 now.) Salads arrived about 5 minutes after drinks. Entrees arrived 8 minutes after salads. Total cluster with no apparent recognition of the problem of setting down hot entrees with salads barely touched. Salads ok. Entrees ok. Host was gracious. Waiter was nice but clueless. Saw cook from kitchen serving a table.
If it were possible to give 0 stars, I would give rather than 1 star. Cannot imagine this place will be open for 6 more months.
Yes, I know it is a hotel restaurant. On the other hand, Fearings and Knife are hotel restaurants and fabulous. Perle on Maple is not.
We had a lovely meal and excellent service. Recommend the warm local goat cheese app. Thanks for helping us have a special birthday celebration.
From the greeting by the Maitre’d through receiving our check at the end NOTHING but spectacular service. The staff go above and beyond to make certain your experience like none other. The food is DIVINE! We were able to have adult conversation, hear each other easily and not have to shout above loud canned music. It has been while my fiends and I have enjoyed a meal this much.
This was the second and last time I'll dine here. The runny chicken liver mousse was revolting. The pork entree was passable. I had a reservation for a Wednesday night around 9. This restaurant is in a nice hotel, I waited at the host stand, no one was there. Makes it look like they're trying to save money by not scheduling a hostess. Then a waiter happened to walk by and told me "oh just sit anywhere, be right there," made me feel like I was at a cafeteria. Another sloppy thing about the service, when the uneaten mousse was removed, I wasn't asked why I hadn't eat it, they also removed my silverware without bringing new utensils BEFORE the main course was served, the kind of mistake beginners make? Or maybe they just don't care, this place won't last long, bye....

Very loud - large party near us made lots of noise. Food was okay - pork tenderloin somewhat dry, trout very good. They couldn't find a soup spoon for 5 minutes. This restaurant seems very disorganized and needs some improvement if they expect to survive Dallas restaurant scene.

Very nice restaurant. Just off the main lobby of the hotel. We enjoyed their restaurant week menu, so the value was especially good. The experience was a little too adjoined to the hotel, but overall a we had a relaxed and enjoyable evening at a reasonable cost.
I wanted to love this place, but just couldn’t. We were party of 4 celebrating our mother/grandmother’s 80th birthday. Problems started one week prior to our resy when restaurant called to ask if I had any changes to my reservation for that evening. I replied that my reservation was for the following Saturday to which they promptly apologized and hung up. Needless to say, I called mid-week to check on the real reservation and make sure all was well-it was. Dress code is listed as smart casual, which to me means something similar to but not as constrained as business casual. It does not mean shorts and tennis shoes, although it seems a good number of patrons think it does. Maybe it’s just the effect of being in a hotel, but it was off-putting. Wait service was incredibly slow. We did ask for a minute to study the craft cocktail menu, but we got a lot longer. And the drinks took even longer to come. Food was just fine. Not great, just fine. Again with the wait, we spent a long time in between courses with no food or drinks on the table. How do they even make money that way? We did end up with an excellent bottle of reasonably priced wine with dinner, so that was a plus. Dessert was again, just fine- nothing special, although they comped one due to the birthday which was a nice touch. Final word- glad I checked it out, but probably wouldn’t go back, especially not for a celebration.
Wasn’t full but the service was so slow: I was never asked if i wanted another drink or told if my meal without dairy was possible... it just arrived an hour later
Stumbled upon Perle on Maple somehow and found out they were part of Restaurant Week. I'd never done restaurant week before, so why not? Quickly greeted by Christina whom ended up being our server. Christina was a delight the entire night. She was attentive but not too pushy. She allowed up to have our conversation and enjoy our experience.
For the "Le Premier," we both tried the Lamb Merguez Sausage. It came with warm potato salad and truffle aioli. I don't think I've ever had lamb before and now I questioning some life choices. We both thoroughly enjoyed it and felt it was the right portion.
For the "L' Entree," I had the Trout Almondine and my buddy had the Burgundy Braised Lamb Shank. Both great choices. That lamb just melted off the bone and was full of flavor. My trout was light and flavorful.
A friend suggest I get the Profiteroles for dessert which we both obliged. Although very yummy, I wonder if I should've gotten the Creme Brulee instead, which I can get that anywhere, right?

Loved the updated decor and remodel. Will probably be back for a happy hour and try the bar scene. Lunch was good but pretty quiet on a Tuesday.
The ambiance for the restaurant was minimal. The wait staff inexperienced ( management at fault here, you have to train your staff ). The good news is the food was quite good! I will not go back, too many other options to choose from in Dallas.
We wanted to try Perle on Maple and we’re glad we went. We absolutely loved it. The service was top notch and the chef stopped by to introduce himself. The lamb shank was fabulous. Creme brûlée was perfect. Myself This is my new fave spot.

Food was excellent Waiter was very nuce. Went to the bar for an after dinner drink. Bar staff was snobby and inattentive.
Would go again though and skip the bar.
