James Beard Award-winning Chef Andrew Black makes his way back to Skirvin Hotel to open his newest restaurant concept, Perle Mesta. The restaurant will be his first concept to open since winning a James Beard award as 2023’s Best Chef Southwest and will be located on the first floor of the historic Skirvin Hotel (One Park Avenue, Oklahoma City). Perle Mesta will offer breakfast, lunch, and dinner service and the cuisine will reflect Chef Black’s continued exploration of what he calls “possibility cuisine,” a concept he attributes to his style of cooking that explores and embraces the endless possibilities of ingredients, flavors, techniques, and cultural influences. In this context, possibility cuisine involves chefs pushing the boundaries of traditional cooking and experimenting with unconventional ingredients, fusion cuisine, molecular gastronomy, or avant-garde techniques. It may involve a sense of creativity, innovation, and openness to exploring new culinary horizons.

    wasn't sure what to expect. Took My husband there for Father's Day, and we gave the chef a heads up he is vegan Chef Maribel put together an amazing breakfast tacos for him they were delicious ! very grateful for the extra efforts she made.

    The service was exceptional. My only complaint was they were out of flounder for the flounder meal. They substituted shrimp for the flounder, which was fine, but unexpected for a Friday evening meal.

    Perle Mesta delivered from start to finish. I began with the ‘Smoke & Soil’ mezcal cocktail—smoky, earthy, and beautifully balanced. The Parmesan and truffle fried okra with candied lamb belly was crispy, rich, and packed with flavor. My entrée, the sorghum-glazed sea bass with crispy pearl black rice, was outstanding—the fish perfectly cooked, and the rice absolutely addictive. To end the meal, I was torn between the ‘Fjord Explorer’ and ‘Silk Roads’ cocktails. The manager noticed and brought out mini versions of both—an incredibly thoughtful touch. Both were delicious. The service was phenomenal—attentive, warm, and genuinely elevated the entire experience. Chef Andrew Black’s Perle Mesta is a standout in OKC.

    Oh my gracious! We had previously gone to Pearl Mesta when it first opened. Now, several months later, this lovely and talented James Beard chef, Andrew Black, has transformed the menu to an absolutely delightful food experience! Our server, Jason, was outstanding! Jason was knowledgeable about all the food as well as what wines and cocktails were offered. We enjoyed the incredible Seafood Tower (you MUST try the caviar!), the Burrata, Peach, Beet Salad and finally for our main entrees, we loved the Beef Tenderloin Filet and the Duck Breast with small stuffed pasta shells. A dark chocolate mousse tiramisu was our grand finale! This restaurant will be vying at the top to be one of our BEST restaurants in OKC! We saw families, business people and couples enjoying this establishment. Some were dressed in business attire while others were very casual. We cannot wait to go back for another spectacular dining experience!

    We had a night away from the kids so we stayed at the Skirvin and ate both dinner and breakfast at Perle Mesta. The food was absolutely incredible! I had the Sea bass and my husband had the venison, both dishes blew us away. Everything we had was fantastic! To make the whole experience even better was the staff. Our server, Ryan, and the sommelier, Jason, were so friendly, helpful, and engaging. Jason took the time to talk with us about our preferences and recommended two different bottles that were just perfect. Ryan took the time to chat and made sure that we had everything we needed, he was so kind and funny! Excellent food and excellent service!

    Our wait staff was amazing and beyond helpful and knowledgeable from start to finish. Even when one of our drinks was made wrong, they were quick to respond. They remade the drinks correctly and didn’t charge us for the beverages. They assisted in helping us make decisions on appetizers and main courses so our pallets were satisfied. We highly recommend Perle Mesta. It has something for everyone.

    Service was EXCEPTIONAL! We split everything and they took care of that in the kitchen: everything came out on two plates. Our waiter was incredibly nice, even while training someone. We had an amazing experience!
