Another great visit. Seated on time at a quiet table and prompt service. Relatively small menu but they cover all the bases. Their house salad is very nice. Their Pago burger is very good but quite large and hard to finish at one sitting and the Mary Chicken was very nice too and not too big. I think their fresh ingredients make the difference.

For a Tuesday, surprised how crowded it was. This restaurant is quite small and has a very cozy feel about it. Chef Gardner puts out really interesting dishes. We split the beet salad to start and then had the trout and pork chop. I had asked the server to pick between the steak and pork chop. He suggested the chop. Very good choice. The dish was very well balanced. The chop was well seasoned, dijon cream sauce had just the right amount of heat, beet spaetzle (who knew?) were delicious, and for some crunch, braised fennel. I couldn't find one thing wrong with it. The trout was delicious. Brussel sprouts and spaghetti squash were well seasoned and very tasty.

One thing I have always been not thrilled about there is that the wine list is comprised of wines that are unusual in one way or another - familiar grapes with labels you haven't heard of, or varietals from obscure locations. These are generally not wines you see for sale here in Salt Lake. I haven't had a wine I didn't like, just wish I was more comfortable ordering them.

Anyway, Pago is great place. With the recent closures of Sea Salt and The Paris Bistro, nice to have this one around.

Pago has a problem in trying to balance and small menu with a good one. As a vegetarian, my options are always easy as the most I ever have is one entre and perhaps a few small plates to choose from. Sometimes there is nothing on the menu and I have to ask the chef to prepare something special--this chef does not think good vegetarian food is worth much effort.
The same challenge arises from one of the most limited beer and wine selections in the city. They support our fabulous Utah beer scene with typically a single choice and because IPA is hip, that choice is an Epic IPA. To make matters worse, in one recent meal, about a third of the beers in the menu (approximately 3 of the 9) were not even available. Small selection and small stock just seems like a recipe, a recipe for disappointment. This time, one of my dinner mates picked a rosê, sorry, THE rosé, and got the last glass in stock. The waiter, without asking, brought a new rosé, which was not nearly as good as the first and my friend had to go through the uncomfortable experience of sending it back and then trying to find another wine for his dinner.
And to deal with the ambiance matter, one seems to have a choice at Page, either next to the rustic brick wall, which leaks air like an old log cabin, or near the door, which has a blower mounted overhead in case you miss the ambiance of the draft . I guess it is typical that Pago works hard to ensure consistent conditions--one has a draft blowing across the table no matter where one sits!
In summary, I have no idea why Pago is so popular, but it does seem to fill up most nights I am there, which is not often, and likely to get even less often.

Only complaint is in regards to the very limited selection of wine by the glass. There was not a single Chardonnay.

Simple and delicious. Cool vibe, excellent service, nice wines, creative food. Learned about Pago from a local. Locals know best!!! Coming from New York City, where gourmet dining experiences abound, I found this place to be just as good as any in NYC. Very, very happy with my meal (which was a kale salad and the trout).

The place was freezing. Maybe it was a one-off situation but highly recommend calling to ask if their heat is working. Food is good but very limited selections, and small portions. The sommelier saved the day for us, offering extraordinary service. But we shivered throughout and the waiter volunteered that it had been cold since 9 that morning.

we went here for the locally sourced ingredients. overall it was good but not as flavorful as I would have hoped. the burger was heavily touted but was just ok for me. the trout lacked flavor. the salads were tasty enough but that's not why we went there. next time I'd go for the flank steak for sure. another member of our party had it and was probably the best entree. our server (Curi) was great and she made the experience a memorable one.

Overpriced for underwhelming food. Our appetizer was burnt to a crisp and definitely not as described on the menu. Our mains were unimpressive. The two redeeming qualities were the wine selection and the delicious scallops. I’ll not be back for another $200 dinner that tasted like a $75 dinner.

And I get it: Fancy = small portions, but even the fancieist meal needs to leave you at least full ... or not hungry as we left.

I have to say that a lot of the food tasted excellent. They had a special Valentine's Day menu with courses on our visit.

Amuse-bouche: Yukon Potato Tots with Caviar and Crème Fraîche

Starters: Crudo, which was roasted pineapple, coconut, chia seeds, and micro shiso. The tastes didn't mesh well together and was so small. Also Seafood Risotto: A fuller (and tastier) dance of mussels, rock shrimp, and saffron-infused egg yolks.

Intermezzo (a European tradition of palette-cleansing): Lemon Sorbetto topped with Thyme Shortbread Crumble.

Main Courses: Braised Short Ribs - The ribs were the tenderest I've tasted in ages and the included lobster arancini (rice balls), roasted mushrooms, and membrillo (quince paste). Celery Root Wellington: IIt was coated with Mushroom duxelle, had huckleberry on the side, and was topped with truffled vegetable au jus. It was good, but not great (or substantial) enough for such an expensive meal.

Desserts: Bread Pudding - Bon Ton sauce, candied pecans, brown butter gelato, and whipped cream .... perfectly cooked and every bite superb. Dark Chocolate Ganache - Roasted banana gelato, peanut butter mousse, and peanut brittle mix gave a flavor profile of a really fancy Butterfinger. I expect a higher-quality taste.

As I said earlier, we went on Valentine's Day. Is it wrong to say there wasn't anything "Valentiney" about it: No hearts, no romantic music, no shared food, nothing red in the set-up or food, not even some dim mood lighting. I don't expect it to be Valentined up with romantic schmaltz, but if you're going to call it a "Valentine's Day menu," you should have some semblance of the day ... somewhere, somehow, some way.

Also keep in mind, they write in a 20% gratuity for themselves.

When you spend $280 bucks, you should leave full. We were not.

The service was great and the food was awesome. We ordered appatizers, the crudo and soup of the day were really good. For the main course we ordered the steak and chicken and we both liked each others choice so we switched plates, both were really great. Then gelato for dessert! The passion fruit sorbet was so good but the rum gelato and banana nutella gelato cant be beat. Great place to splurge and treat yourself to an amazing dinner.

Coming from the east, I'm used to fine dining. At the suggestion of my ski instructor we went to Pago for dinner. This is a great, casual dining place. Nothing special as far as ambiance, but well prepared, delicious food, attentive and knowledgeable service, and excellent cocktails. After a spicy tomato soup, I had the trout and my instructor had the steak. Both were precisely cooked and served with nice sides. The gelatos and sorbets were very good.
While we were there, there restaurant was almost full and we were able to carry on our conversation.
Overall, an excellent choice for dining in Salt Lake City.

We’d heard great things about Pago and made a brunch reservation for our anniversary but unfortunately we were very disappointed. It wasn’t particularly busy and we had a special occasion reservation, so we were a bit surprised they sat us at a small table in the very back by the bathroom and kitchen. Our food took about 45 minutes to get to us- patrons that arrived after us got their food first and they just kept saying ours would be out in ”just a second” (no apologies). My French toast was dry, flavorless, and very boring, especially considering their prices/reputation. It looked and tasted like something you could get at any breakfast joint in America. My husband’s poutine was also bland- could’ve used some salt or spices in the gravy at the very least- and it consisted of whole potatoes (not hand cut like the menu said) with a little bit of cheese and some hot peppers. He’s not hard to please, especially when it comes to poutine of any kind, but he was disappointed. And both dishes definitely didn’t need more than 10 minutes to make. I’m glad we can finally say we’ve been there as it has been on our SLC bucket list, but we won’t be back for brunch or to try their dinner. Not sure if they were just off their game that day, but their menu is too expensive to risk another bad meal.
