This was a tremendous experience! Our waiter Ian was incredible, very knowledgable about the menu and uplifted the whole experience! The food was one of the most delicious meals I’ve had in Las Vegas, if not the most delicious. The oxtail bibimbap was out of this world. Very dish we had was very good.
Having been a fan of Ricardo Zarate's Los Angeles efforts, we decided to make a reservation for my bachelor party in Vegas. Service was great, drinks were great and the entire meal was really great. Standout dishes for our group were the Pollada, the lobster Chaufa, the Braised Fennell salad, the Chiccaron Karage, the charred eggplant, and the fried dorado, but there were no let down dishes of the many we tried. It's worth walking back into the shops to find this culinary gem.
Surprisingly, it was not busy given the location, service and quality of food. We will return and also recommend it to others. Great flavors with The Peruvian/Japanese fusion.
Service was terrible. Everyone got their food late and not all together. From the first dish that came out to the last, there was probably a 30-45minute difference. We had to ask for water 3 times and waited over 15 minutes even getting out first sip. Food was sub par and not even hot. Server got a few of our orders wrong. They tried over charging. Just a slew of issues with this place.
Being a Peruvian/Asian fusion restaurant there were several flavor profiles we were not familiar with. Adam, our sever who was terrific, expertly guided us through the menu including the drinks and offered several suggestions all of which were excellent. Everything we ate tasted great. The dishes were flavorful, fresh and interesting. The atmosphere was laidback and welcoming, the service friendly and helpful and best of all the food was something we would come back for - the sign of a truly great restaurant.

Fantastic food at Once. The food was Peruvian/Japanese fusion and we were lucky enough to try 5-6 items as a table. Everything was fantastic. The PERUVIAN ARROZ CHAUFA dish was a must order.
Loved for dinner not so much for lunch! Very limited menu. Had a delicious drink but don’t expect a normal size glass very small for $17!!!! Too expensive!!
We have never returned an item but the octopus was burnt and terrible. I liked the other dishes but they were just okay. The best thing on the menu was the bread. The quinoa bread was to die for. So tasty.
Food was fantastic. Service was solid and despite a industry event party going on in the outside seating area the noise level was manageable at all times. Highly recommend for anyone - great for a date, a business dinner or anything in between.
Once’s food and ambiance was OK, but everything seemed rushed — as if they wanted us out to resell the table to the next couple.
We understand tapas are served when the kitchen prepares them, but we have never had a tapas restaurant serve all 6 dishes at once (maybe that is why the restaurant was named that)! So be forewarned, you apparently have to stage the timing of your own food by ordering only a bit at a time!
What a great place, was not familiar with Peruvian food. The waitress was very helpful with our order, the food was different and tasted wonderful. We most definitely would do it again. The ambiance, the vibe is a little low key for Vegas, not sure what they could do to turn that up a notch, it was quiet for a Saturday night. But if you're just interested in good food good there, you'll love it. I hope this place fills up with people, I want it to be there my next trip to Vegas.
Everything tasted great. I like that it wasn’t noisy. We enjoyed the meal and trying the unique menu choices.
We did have desert and I ordered a cup of decaf coffee. My one criticism is the coffee was lukewarm. I requested a second cup and was told that she made decaf espresso because they didn’t have decaf coffee and if I wanted more I would need to pay per cup. All that fancy food and no coffee? I decided to pass on that. Little things matter too.
Our group of 6 had pretty much all the same opinion of the entrees, tapas and ceviche we shared family style. The food was just ok. Nothing really stood out that I would ever have to have again. They tried to be creative with the blend of Peruvian and Japanese but most dishes were a mash of too many flavors that didn’t always compliment each other.
Cocktails were definitely better than the food. Might hit them up for happy hour and see if we just caught them on a bad day.

This is a tapas restaurant. The food is delicious and creative. The cost is expensive and the portions are very small.

Service was very poor. Waiter was neglectful. He ignored us. We could not get refills of water let alone new drinks. The restaurant was out of several dishes in the menu.

Very tasty but small portion. Spice level is high for those that aren’t too keen on spicy food. The steak was tender and flavorful. Shrimp delicious but not enough. The cookie ice cream sandwich to die for. Service was excellent.
The restaurant opened almost 15min later than it was supposed to, and since our reservation is right at the opening time, we had to wait awhile before getting seated.
Also, the Japanese soufflé pancakes on the experimental menu weren’t like the normal Japanese soufflé pancakes that are usually super fluffy and airy... the soufflé pancakes there were flat and weren’t that different from normal pancakes.
This was our second visit to Once; the first was wonderful but the second was only average. A ceviche mixto meant to be shared was a small portion - tasty, but tiny. The pollada was a pared-down version of what one might expect in Peru, where at least a vegetable salad and potatoes would come with the traditionally fried chicken. This was sweet, sticky chicken with some sliced onions and nothing else. The sea bass was also a portion of fish on a plate with no accompaniment. This meal for two, with no beverages except water, was $100. Service was uneven. We waited a long time for a waiter to approach us after we were seated. Even in Las Vegas, there are better options at this spending level.

A very stylish Peruvian restaurant with Japanese fusion. The service is excellent and the chicha morada (a Peruvian mocktail) is the best! Certainly ask for recommendation from the servers!
