Drawing distinct flavors from both Peru and Japan, along with the comforting dishes of Chef Ricardo Zarate’s childhood, the menu includes dishes such as Big Eye Tuna Sashimi Ceviche, with black truffle and kizami tigers milk; Arroz Chaufa, Peruvian fried rice, snow crab, yuzu aioli and crispy calamari; and Ox Tail Bibimbap, with black mint stew, tacu tacu rice, fried egg and plantains. To compliment the menu, there are 11 signature cocktails, including an Rum & Cola “slushee” machine for an irreverent, Vegas-style twist on a boozy classic.

Best food I had on the strip!
The beef heart with a tomato/almond pesto was delicious, as well as the braised fennel salad with arugula leaves!
Just the right amount for a filling and unusual dinner.
Once has a relaxed atmosphere with a Latin American soundtrack (although, not Peruvian). The dishes offered range from traditional to hybrid dishes. Every dish we had tended to have an intense sauce, which tended toward imbalance - several sauces were overwhelmingly lime forward, some miso based sauces were too sweet, some items (turmeric flatbread) were over salted - although overall, the flavors were good. We should have kept the lomo saltado dish to have more of that sauce with the rice.

A lovely spot with wonderful unique food.
Great depth of flavors. Eggplant, yuca and lamp chops were especially fabulous. Always a fun, engaging meal with small plates.
Came into the restaurant and was greeted with a sullen face to greet us and show us our table - same with our waitress- not something I normally notice - but we were so looking forward to the evening...would it have hurt them to smile??

Horrible food - one of the worst I've had on the strip. We took the waiter's recommendations and they were all overcooked or bland. The ribs particularly which were fried, were so hard to eat no one finished their piece. The only redeeming dish was the raw snapper and lobster fried rice. I was there with clients so couldn't necessarily complain as that would make them uncomfortable. Even the churro bonbons were disappointing and not even warm! I wouldn't necessarily write a review for this but I think the restaurant has so much potential and just needs some seasoning tweaks and menu additions.
Great flavors and taste. Unique, different. Plate size was proper. The spices with the seafood will bring me back. A real nice spice in the ceviche and the main plate fish was cooked perfectly.
Worst service ever! 20 mins for a drink to come. No contact with waiter after ordering. Didn’t take a second drink order...

I love everything about this place. Chef Ricardo Zarate is absolutely amazing! Everyone of his dishes are imaginative and full of flavor. Don’t come alone, these dishes are meant to share!
The food was incredible. We ordered way too much. It would have been nice to have a bit more direction from the servers, as they know the portion sizes. I hate that we wasted so much food. But everything was delicious!!
Each dish was very good -- our server made great recommendations, although I think he did forget to include the final thing we ordered. He asked if we were finished, informed him that we still had one more plate coming, and he basically responded with, "Oh yes, that will be out shortly." The dish did come out about seven or eight minutes later, but it was extremely hot, so I think he went back and told the kitchen to fire immediately. But it was a delicious dish and worth the wait! Favorites: kampachi ceviche, pork ribs, lomo saltado.
This place is very hard to find - it's on the second floor of the Palazzo by the hotel registration. But, that's the only downside. The food was delicious, all of the servers were very attentive, and my partner and I greatly enjoyed their happy hour. The pisco sour, the yuquitas, the braised fennel, the antichurons, and the scallops were all fantastic. The only miss in a bunch of hits was the quinoa bread - extremely oily and nothing special. Great place to check out for happy hour or dinner!

The food and service were pretty good, however the portions are “tapas style”. We ordered yucitas, ceviche mixto and seafood rice and didn’t leave hungry however desired fuller portions for the price. Would probably eat here again for a nice sit down tapas style meal. Just don’t come starving unless you want a $200 dinner.
Great food, service a bit slow, tapas always gets expensive - in a mall, though that’s not their fault.
Amazing, eclectic combination of flavors and textures. Some new ingredients for me as well. Every bite was great. Even foods I usually don’t like were cooked in such a way to pair well in the dish, and I loved it. Wait staff and mixed drink menu were great as well. This will be my “go to” food option on my next trip back to Las Vegas.
The ambiance was nice, the food was ok and the pieces were a bit high for the quality and the quantity. It wasn’t bad but I wouldn’t go back, there are other places to explore and dine in Vegas.
The staff was very friendly and helpful in food selections, the portions were perfectly sized and prepared. The food itself was excellent, one of the best meals I have had anywhere.
I was excited to eat at Once after reading the reviews. I have eaten many times at topnotch restaurants including Peruvian that have far better offerings and portions. I don't mind paying for good food, but Once was not only pricey, but did not have the kind of flavors that would make me want to return. I will say though that our server was very nice and attentive and was the only reason we stayed to eat. If it had not been so late in the evening and the fact that we were hungry and had walked for almost an hour from the Vdara, we would have gone searching for a better place.
Unique flavors. Server was very helpful interpreting the dishes to more well known dishes. Turmeric flatbread was amazing as was the Chicken Karrage
Authentic Peruvian based menu with an American edge to it. Appetizers were smaller portions, as expected, but only 2 medium size shrimp on the plate was a bit disappointing. Wine was expensive $17 for a moderate glass seems high. Seating and decor is comfortable but Peruvian or South American sounding music would be good. Main course was very tasty. Desserts were wonderful.
ONCE is in short, one of the best and phenomenal dinners I have ever had. I would not freely drop such an accolade without first letting you know that I have been in the restaurant business in San Francisco for a long time.
What makes ONCE memorable is what Ricardo Zarate has created. Leave your comfort zone and experience a fusion of Peruvian and Japanese culinary arts that will blow your mind! This is fusion cuisine that actually works. We were lost in culinary bliss with Albacore Sashimi, Beet Salad, Pulpo Al Olivo (Octopus Cheese Board) and Antichucho de Corazon (Beef Heart). Each dish has uniqueness and intricacies that make each dish an experience. I can't pick one stand out dish because ALL were heavenly!Sorry, I don't do food pics. I believe in the thrill of exploring the unknown.
I won't bore you with long, drawn out review about nonsense things. But real quick, service was great, Joel was our waiter for the evening. The only detractor to ONCE is that it's trapped in a mall setting at the Palazzo. This would easily be a stand alone, destination restaurant in San Francisco.
If you are adventurous, are familiar with Peruvian and Japanese cuisines, go to ONCE. You will not be disappointed. Even if you aren't familiar with the cuisines, this is a hidden FIND in Vegas! Just go and have one of the best dinners ever!

Both the food and the cocktails were excellent and served by a very knowledgeable waiter. I had the notorious FIG cocktail and found the fig with the bourbon made a good combination. The spicy ahi avocado toast and the pulpo charcuterie board were fantastic. I have never had quinoa toast and it was a great textural accompaniment with the spicy ahi and avocado. The octopus was extremely tender and the cheeses, peppers, and other meats on the charcuterie board were a great combination. The plants in the living walls needed a bit of help, but otherwise the atmosphere created a nice vibe.
Food was amazing, very tasty and flavorful. Drinks were great. My only comment would be the service. The waitress should pay a bit more attention and check on you periodically as the wait was a bit long getting our drinks and orders in.
