Occitania is an approachable , fine dining restaurant from Chef Paul Calanes offering exciting regional cuisine from the Southern France Occitan linguistic region, which started just below Bordeaux and continued down through the French Basque region into Spanish Catalonia in the west, and across the South of France to include the old regions of Limousin, Gascony, the Languadoc, Auvergnat, Vivaro-Alpine, Provence, and into Piemontese Italy in the East as well. Occitania’s cuisine will be equal parts traditional and contemporary, comprised of local, sustainable ingredients from farmers and ranchers with whom we have long standing and rich relationships.
