We have one seating at 6:30PM Tuesday-Saturday, so please be considerate of your fellow diners and be punctual. If you are late for your reservation please call to let us know. We will make every attempt to catch you up but we absolutely cannot make any guarantees on coursing and pacing. Reservations are held by Credit Card. Cancellations within 72 hours of the reservation will be charged $85 per guest. Allergies or dietary restrictions must be made known to the restaurant when reservation is made. If dietary restrictions are presented without notice we will make every reasonable attempt to accommodate them but can make no guarantees.
This was our third visit. First class dining experience. Paulina and Jeremy are inspiring with their dedication and drive. I highly recommend to any foodie who wants a gourmet experience in Maui.
We have dined here three times and have loved the food each time and will continue to dine here whenever we are in Maui. The quality exceeds some Michelin star restaurants we have dined at and thus warrants the price.

Celebrated Valentine’s Day here, food was amazing, service was incredible. We had an amazing time. We did the wine pairing- all I can say is it was fantastic. We will make this our special night out place!
We went to this restaurant at the recommendation of a local person who had dined here before. Not knowing what to expect as we had never dined at a restaurant with a tasting menu
Walking into Nylos you're greeted by a husband chef and wife hostess/server and a very inviting atmosphere. While the hospitality is generous, the quality of the dishes and wine selection does not meet the expectations of a $150 cost of the tasting menu presented. Additionally many of the wines are excessively priced.
The price of this meal, with or without pairings, rivals that of 1 and 2 star Michelin restaurants in Manhattan and San Francisco, but each course lacks a sophistication and balance of flavors that is needed to execute the vision of the menu and cannot be masked by gold leaf, caviar and black truffle shavings.
I would have been content with this meal if it was a $50-75 dollar tasting menu and a more sensible cost for pairings for the quality of wine presented. Unfortunately whether it was a need of inspiration and/or execution, this meal fell far short of expectations.
While I believe in supporting local restaurateurs and business owners, I feel it's almost wrong to charge patrons more than what they would spend at Morimoto or Lineage but receive a meal that is inferior in almost every way. Therefore I would likely not return unless changes were made to the pricing to reflect the quality of the meal presented.

The food was outstanding!
The ‘Amuse’ with Prosecco at the start was both a surprise and delightful! We chose the incredible wine pairing option, which they paired with our dinner. All the wines were excellent! I just wish I had asked to see what they served, but next time!
The appetizer of risotto with truffles, crab, greens and mushrooms was amazing!
Followed by the Australian lamb rib chop, which was the only part of dinner that was lacking. There was very little meat on the rib and it was seared a little too long for my taste. The accompanying veggie were e excellent!
And the desert!! What can I say? My husband never eats desert and he was raving about the chocolate cake, vanilla ice cream with berry gastrique , and a fun addition of a swath of spearmint‘paint’ to finish the plates in style.
The best part of the small intimate restaurant, is being able to watch Chef Jeremy carefully finish the plates and balance all the different tables preparations.
With seatings at 5:30 and 8:30, diners have plenty of time to savor this exceptional food and service!

One of the few restaurants that I didn’t ask for salt or pepper. Chef Solyn knows how to season things properly.
The food was outstanding, the service too. I liked the short wine list. The seats were comfortable, the music was wonderful but the volume should be turned down a little bit which would ease conversations.
I don’t like that there was no information about the menu on the website or anywhere else. I don’t like Risotto, my wife does not like lamb, but there was no alternative. The menu posted outside from December 28th was exactly what was severed on January. 26th, so the claim that they make something different depending what was available fresh and local. Information was lacking about the price of the menu. In my opinion the price of $150 ist too high for a three course dinner.
Just fantastic. The service was among the best, most personalized we can remember. The food was both creative and delicious. We will definitely return!

LOVED IT !!! One of the finest dining experiences I've had! They made every detail special for our anniversary from the moment we arrived, including accommodating special dietary restrictions on each & every course!! Quaint bistro style, very relaxed atmosphere, fun soundtracks, an amazing wine list to pair with each course & of course the food was OUTSTANDING!!! Fresh locally sourced ingredients prepared skillfully, mixing & matching exotic flavors & textures....each bite better than the last. Well worth the price & a great way to celebrate any special occasion. Thank you for giving us a memorable evening.
We loved every single thing about our experience at nyloS. The restaurant is very small and has a prix fixe menu that changes daily. Reservations are essential and be sure to tell them about any food issues or allergies ahead of time as the dishes are very complicated and have a lot of ingredients.

NyloS is a wonderful restaurant and we enjoyed our evening very much. This is a small restaurant for foodies . The dishes are small but delicious and the five course fixed price menu with fresh organic local ingredients is superb, both in taste and presentation. Our congratulations to the chef for putting together such an exquisite meal . The chef’s wife was extremely attentive to our requests and made this the best restaurant experience we have had in Maui in many years . We highly recommend going there .
Dinner at Nylos was an amazing experience. They are an island farm to table restaurant and use the freshest and tastiest ingredients. The wine pairings were spot on and everything was well executed from the service to the music playlist. They seem to sincerely love what they are doing: supporting local sustainable ag, feeding people and being creative, such good energy is inspiring and delicious! They also graciously and creatively accommodated some serious dietary restrictions. Highly recommend taking the time to experience Nylos.

We have seen this restaurant for some time living in Paia area but had not yet made it there. We were extremely impressed with the taste, quality, knowledge and how personal and friendly the owners were. We would defiantly return and I would recommend for anyone to give it a try. They are able to accommodate any dietary requests as well so do not let a special diet cause you not to try. We loved it!!!
Some of Maui’s best food. What a talent Jeremy has at being an artist with food. Beautiful food and people. Don’t miss this when in Maui.
The food quality, preparation and presentation, in a personalized and intimate atmosphere, are excellent, rivaling Michelin star restaurants. All vegetables are farm to table and the chef (owner) can name each farm and any meat or fish provenience instantly. A dish that creatively used French black truffle, had so much truffle to rival a forest castle feast in France. Yes, the price for such prix fixe menu is on the higher end of the scale, but well below Michelin starred restaurants it rivals.

We tried everything that was offered and we were not disappointed in anything. They noted our allergy and made a quality substitution that was delicious. Would highly recommend
Cool little place operated by a husband and wife team. Excellent food, nice people. You don’t know what you will be eating but you are in good hands. We had an excellent risotto, a nice steak, interesting flavors. I think you can let them know if you any allergies etc before you go.

This tiny restaurant on the edge of downtown Paia is probably the best destination for food-lovers on Maui, with a carefully selected wine list to match. The always creative tasting menu changes frequently. The cuisine is the chef's own direction, very ingredient-driven with French and New American influences. There's an open kitchen with seats at the counter. (From the dining tables you see more plating than actual cooking, though that's still fun to watch). Chef-owner Jeremy Solyn and his wife are two of the most welcoming people you will ever meet. This is not the right destination for visitors who want to sip mai tais while watching an ocean sunset, but if you go, you just might enjoy the best-tasting meal you have ever had in your life.
We had heard so much about Jeremy and Paulina and it was completely true. I am not overstating it when I say it was the best dining out experience I have ever had. A very special evening where everything came together.
What a fabulous dining experience. Jeremy’s food is as refined, creative and delicious as any we have ever eaten. We loved the setting and Paulina’s knowledge of food and service is perfect! Their attention to details and flavors are impeccable and we really appreciated their connection and explanation of sourcing and preparation. We discovered a new food, the Kiwi Berry from Oregon which was delicious and new it was served on a sampler plate Amuse Bouche that also had raw honey mixed with Chinese spicy mustard that was really interesting and good. I caught my wife wiping the last of the chocolate sauce from desert with her finger, which rarely happens. This was one of our favorite meals ever and we will be back for sure next time we are in Maui.

Wonderful prix fixe menu in an intimate and cozy setting. I really appreciated the starter with prosecco. A true gem of a restaurant in a gem of a town.
If you are looking for a farm to table experience that features Maui’s bounty of flavors then this hidden gem is indeed the eatery for you. Chef Jeremy Solyn takes you on a gastronomic journey that is delightful to one’s palate. As we say in Hawaii, truly onolicious!
I would highly recommend NyloS to any foodie! The chef uses lots of creative and labor intensive techniques to bring beautiful unique flavors together. The quality of the produce really shines and is prepared very nicely. It's impressive it's just a team of the chef and his wife, who are both so kind, friendly, down to earth, and caring. We got the privilege of sitting at the bar/counter to see all the magic in action and talk to the chef a bit more. It was a wonderful dinner and a hidden gem! My husband wanted to keep the secret to ourselves, but they're too good to not share with others. We can't wait to return here on our next visit to Maui!!

On vacation, you try to find those defining moments that will make you remember the trip well after you are home again. The thing that you tell friends about. Eating at Jeremy Solyn’s restaurant in Paia town is just such an experience. Maui’s a great place for plate lunches, huli huli chicken, and old standbys like Mama’s and Merriman’s. But Solyn has created a unique, intimate dining establishment that has to be added to the list of must-try food experiences on the island.
It’s a small place, prix-fixe only. You’re eating what he’s cooking that night from his open kitchen which is not 20 feet from your table. And that’s OK — trust him. The ingredients are culled from across the island (and a few not), and how he talks about his sources is almost Alice Waters-esque. Producers on the island have no better advocate. His food is refined and meticulously thought out, but by no means pretentious. He’s also a trained sommelier and his pairings are spot on, affordable, and at points, plain old fun.
There is no gorgeous view of the water here, it’s on Baldwin Ave but it doesn’t matter. Your eyes are trained on your plate marveling at what he just put in front of you anyway.
If you have been to Maui before and looking for different spot, this is the one. If you have never been to Maui before, don’t feel obligated to stay on the well-lighted path, go here instead. If you are local and want to experience a great chef at work underneath your nose — *that any number of cities would be glad to have* — make a night of it and let Solyn cook for you.
Our meal at NyloS was truly incredible. We are from Boston and have eaten in fine dining establishments all over the world. In my opinion, the quality of the service and food is right up there with places like Arzak in San Sebastián. The meal was cooked with the highest quality ingredients and that (along with a lot of skill!) makes the difference. The cuisine was accessible, not overwrought, and combined unique elements which tasted great on their own or in combination with the rest of the plate. I was even more impressed that the chef was both cooking, helping us taste wines, serving the meal and still took time to chat with the couples in the restaurant. This is a truly special place and I am really glad I chose it for our time in Maui. Also...a note about the cost...in a place like Boston, this would easily be $150-200 per person before any wine, so our meal was also great value. Same for the wine pairings. Great value, great food, great service. A one of a kind experience in Maui, but really anywhere in the world.
