Cool little place operated by a husband and wife team. Excellent food, nice people. You don’t know what you will be eating but you are in good hands. We had an excellent risotto, a nice steak, interesting flavors. I think you can let them know if you any allergies etc before you go.

This tiny restaurant on the edge of downtown Paia is probably the best destination for food-lovers on Maui, with a carefully selected wine list to match. The always creative tasting menu changes frequently. The cuisine is the chef's own direction, very ingredient-driven with French and New American influences. There's an open kitchen with seats at the counter. (From the dining tables you see more plating than actual cooking, though that's still fun to watch). Chef-owner Jeremy Solyn and his wife are two of the most welcoming people you will ever meet. This is not the right destination for visitors who want to sip mai tais while watching an ocean sunset, but if you go, you just might enjoy the best-tasting meal you have ever had in your life.

We had heard so much about Jeremy and Paulina and it was completely true. I am not overstating it when I say it was the best dining out experience I have ever had. A very special evening where everything came together.

What a fabulous dining experience. Jeremy’s food is as refined, creative and delicious as any we have ever eaten. We loved the setting and Paulina’s knowledge of food and service is perfect! Their attention to details and flavors are impeccable and we really appreciated their connection and explanation of sourcing and preparation. We discovered a new food, the Kiwi Berry from Oregon which was delicious and new it was served on a sampler plate Amuse Bouche that also had raw honey mixed with Chinese spicy mustard that was really interesting and good. I caught my wife wiping the last of the chocolate sauce from desert with her finger, which rarely happens. This was one of our favorite meals ever and we will be back for sure next time we are in Maui.

I would highly recommend NyloS to any foodie! The chef uses lots of creative and labor intensive techniques to bring beautiful unique flavors together. The quality of the produce really shines and is prepared very nicely. It's impressive it's just a team of the chef and his wife, who are both so kind, friendly, down to earth, and caring. We got the privilege of sitting at the bar/counter to see all the magic in action and talk to the chef a bit more. It was a wonderful dinner and a hidden gem! My husband wanted to keep the secret to ourselves, but they're too good to not share with others. We can't wait to return here on our next visit to Maui!!

On vacation, you try to find those defining moments that will make you remember the trip well after you are home again. The thing that you tell friends about. Eating at Jeremy Solyn’s restaurant in Paia town is just such an experience. Maui’s a great place for plate lunches, huli huli chicken, and old standbys like Mama’s and Merriman’s. But Solyn has created a unique, intimate dining establishment that has to be added to the list of must-try food experiences on the island.

It’s a small place, prix-fixe only. You’re eating what he’s cooking that night from his open kitchen which is not 20 feet from your table. And that’s OK — trust him. The ingredients are culled from across the island (and a few not), and how he talks about his sources is almost Alice Waters-esque. Producers on the island have no better advocate. His food is refined and meticulously thought out, but by no means pretentious. He’s also a trained sommelier and his pairings are spot on, affordable, and at points, plain old fun.

There is no gorgeous view of the water here, it’s on Baldwin Ave but it doesn’t matter. Your eyes are trained on your plate marveling at what he just put in front of you anyway.

If you have been to Maui before and looking for different spot, this is the one. If you have never been to Maui before, don’t feel obligated to stay on the well-lighted path, go here instead. If you are local and want to experience a great chef at work underneath your nose — *that any number of cities would be glad to have* — make a night of it and let Solyn cook for you.

Our meal at NyloS was truly incredible. We are from Boston and have eaten in fine dining establishments all over the world. In my opinion, the quality of the service and food is right up there with places like Arzak in San Sebastián. The meal was cooked with the highest quality ingredients and that (along with a lot of skill!) makes the difference. The cuisine was accessible, not overwrought, and combined unique elements which tasted great on their own or in combination with the rest of the plate. I was even more impressed that the chef was both cooking, helping us taste wines, serving the meal and still took time to chat with the couples in the restaurant. This is a truly special place and I am really glad I chose it for our time in Maui. Also...a note about the cost...in a place like Boston, this would easily be $150-200 per person before any wine, so our meal was also great value. Same for the wine pairings. Great value, great food, great service. A one of a kind experience in Maui, but really anywhere in the world.

What an amazing experience! Nilos was by far our favorite night dining out during our vacation in Maui. It is truly a gem. Chef Jeremy uses tons of beautiful locally sourced ingredients. So fresh and flavorful. Such a delight! The wine pairing was also perfection.

Fantastic! Amazing!  Absolutely the best meal we've ever had on Maui (this is our ninth time).  This restaurant is quaint, intimate and unassuming. Just you, four other tables, the chef and maître d' / server (the wonderful wife of the chef).  3 courses, plus an oversized amuse-bouche. For us this was a truly unique experience in that everything was prepared by the chef, no sous chef or support.  The attention to detail was perfection. The service was second to none - we were visited by the chef several times (e.g. to check on the doneness of the meat).  The masterpiece was the flavor - incredible, absolutely phenomenal.

We, literally, hugged the chef and his wife at the end of the meal to thank them for such an amazing experience.  This ranks among our top 3 meals we've ever experienced. 

Thank you, Jeremy and Paulina.  We'll be back!

nyloS is one of those husband/wife restaurants that truly works. The atmosphere is intimate and welcoming. We felt that we were eating in the chef’s home. The food was creative and executed perfectly the night we were there. My family thought this dinner was one of our best experiences on Maui. We will be back on our next visit.

We are very happy to have this restaurant in Paia and will recommend it to friends and guests.
The owners are hard working and congenial.
The only problem is that it is small and the tables are quite close to each other.

Stunning meal as always. Very small scale allows the highest standards for ingredients and exquisite attention to detail. Perhaps the best restaurant on the island. We had a last minute dietary restriction, and they were incredibly gracious about it and executed flawlessly.

My wife and I dined at Nylos this past Saturday and it was great. We are in Maui several months a year and had never heard of the place but we are glad we finally did.
Let's get this out of the way right up front...Nylos is not cheap. That said, if you have a few extra bucks or something to celebrate it is a great experience.
Nylos brings farm to table freshness together with creative preparation in a terrific way. Chef Jeremy took the time to explain the local origin of everything on our plate and why they married up. I had the wine pairing which went well although they have a creative wine list.
The Amuse Bouche with a glass of Prosecco was a great blend of goodies that my wife wanted to order again! The risotto was the best we have ever had (risotto can be deadly boring) and the fish perfectly cooked and seasoned. I am not a dessert guy but it tasted great and my wife loved it.
This was a fun evening for us, both in eating and experience. To our knowledge it is unique on Maui. Well worth a try.

Hard to find since the sign is not lit up. One other couple in the restaurant and they left and we were the only ones there. He never asked if we wanted anything to drink, so we had water for the dinner. The menu was ok. Never had bread as a course. Meat was burnt and tough, he never asked us how we wanted our meat cooked. Never asked if we wanted coffee after dinner. Desert looked like it was bought and not made on site. I was so excited to go and very disappointed when we left. The bill was astronomical for the meal...over $200 without anything to drink. This certainly was NOT the wow dinner I was hoping for. Just want others to know not to waste your time and money. Much better restaurants in the area.

We just returned from a week long trip to Maui. NyloS, a new restaurant in Paia, was our favorite restaurant on the trip. Everything we were served was delicious, beautiful, and creative. We felt that we were in Chef Jeremy's home and he was treating us to a four-course chef choice special dinner. His wife, Paulina, was the server and she too made us feel so welcome and cared for. We drove from Wailea to have dinner, but I would drive from anywhere on the island to experience dinner at NyloS. They have two seatings, 5:30 and 7:45, and it's a good idea to make a reservation. If you have any dietary restrictions, Chef Jeremy will gladly work with them as long as he knows ahead of time. I know, because he worked with mine and served me a scrumptious piece of fish instead of beef in one of the courses. If you are foodies like we are, you will be delighted with your dinner. We can't wait to go back!

The food was outstanding and the service was professional and accommodating. Menu is set and I was a bit surprised that there was no inquiry as to food preferences. Red meat was the entree. I am a steak lover so it was fine for me but I know alot of other folks do not eat red meat. The ambiance is non existent and that takes away from the overall experience.

Had a great evening at Nylos - small setting with open views to watch the owner/chef in action. The meal with wine pairing was excellent - the flavors of the food were wonderful and the presentation very nice. Our hostess, which happened to be the owner/chef's wife, was very friendly and engaged in great conversation about the meal items and local history. We truly enjoyed eating at Nylos, and after dinner spent 45 minutes talking with the chef and his wife about the restaurant, family and island life. Overall a great dinner and we will go back again when back on Maui.
