Dinner this evening was simply wonderful. Thank you Jeremy. From the ahi tuna abuse bouche, followed by the risotto appetizer, a beautifully prepared steak, and chocolate desert, every course was outstanding. Your creativity, focus on supporting local farmers, and care for your customers shines through. We’ll be back for sure !

Nylos is our favorite restaurant on Maui. We dine here once on every trip. This time, we celebrated Valentine's day. Jeremy Solyn and his wife are very attentive but not doting. Each dish is explained in detail. Jeremy's wife serves as hostess and wait staff. Jeremy is the Executive chef, sous chef and chief "bottle washer." She and Jeremy both function as sommeliers know their wine list well.
We love the fact that we can support a local, family owned business which uses superlative, fresh local farm ingredients and seafood.

We usually try to avoid Paia in the evenings but our family had a great meal at nyloS, a charming 16-seat restaurant where a husband-and-wife team put on a creative chef's table using primarily local ingredients.

Excellent food and service. They were accommodating to my pregnant wife’s dietary restrictions. The food presentation was amazing and the preparation was so delicious. I recommend this restaurant to anyone that wants that “Chef’s Table” experience of a prefixed high end dinner.

Wonderful presentation of fresh , extremely high quality, food--both meat and fish. Very artistic flair on the plate. Service friendly and knowledgeable. Wonderful wine list and well priced by Maui standards.

As good as any top restaurant in NY. Family owned and run. Personable and charming service. Fabulous wine pairing. Creative food for a young chef at the top of his game. Going back for my birthday.

Outstanding food! Chef Jeremy personally prepared and presented each dish, along with specially paired wines. The origin of each ingredient was carefully explained and every dish was perfectly prepared and seasoned, from the amuse bouche (salmon roe on watermelon radish), to the appetizers (local mushroom risotto with beef), to the best prepared chicken entree we have tasted, and we have eaten at Michelin star restaurants. The poached pear with dark chocolate dessert was a perfect ending to a delectable meal - not too sweet, just right. The location is off the main street through Paia, across from the local post office. The atmosphere is a clean, modern bistro - simple and acceptable, though not plush or pampering, given the pricing of $93pp, plus $45 for the wine pairings. While it's certainly within fine dining prices for Hawaii, we paid more here without the wine pairing for hubby than anywhere else in all the islands, including the famous Mama's. The food is certainly excellent and worthwhile though - a tribute to chef's talent.

The place is small, only 3-4 tables plus some bar seats. It looks like a neighborhood bar, neat but not fancy at all. The food was ok, I’d have to admit that the chef puts a lot of thought into every dish to make it creative, maybe it’s just not for me.

As to pricing, this is one of the most expensive meals we had during the 10 days we spent in Hawaii, and we’ve been to a lot of good restaurants.

For the price they charge, I would not recommend it at all.

Best meal we have had on Maui, ever. The chef owner and wife were welcoming and informative and gave us an outstanding dining experience. The food was amazing.- fresh, local and creative. Visually beautiful, food perfectly cooked, and great combinations. We sat at the bar and were able to watch all of the food preparation and the chef gave us additional information about the local foods. We will definitely come here again. Highly recommend this restaurant.

Loved it!
Recommend going early to get conversation with Jeremy (chef) and wife Paulina, delightful couple.
Food is excellent my only complaint is my appetite wasn’t adequate to fully savor it all. It will now be hold a permanent spot in our annual Maui visit.

truly stunning cuisine

service is not fast but there appear to be only 2 people working there.... friendly waitperson and incredibly talented chef... so don't be in a hurry and prepare to have your culinary socks knocked off

expensive but the price/performance ratio is excellent

i will be returning repeatedly

i have eaten all over the islands for many years and this may be the best meal i have had in the state

Intimate and excellent. Wine pairings worked well with the three courses. The owners deserve a restaurant space that is ocean front to fully complete the experience of the amazing food. We highly recommend this restaurant before it becomes a go to place!!

A wonderful surprise, considering the location, and so glad we found it. Very intimate, (seating for maybe 20), excellent meal, great service, lovely couple and a spotless kitchen. It is expensive but worth it.

NyLoS is an amazing restaurant. Visiting from San Francisco, we went to NyLoS to celebrate my birthday. It did not disappoint us; it exceeded our expectations. The 3-course meal, preceded by a wonderful amuse Bouche, was delightful for both vegetarian & non-vegetarian. The wine pairing was excellent. Chef Jeremy Solyn and his wife Paulina lead the staff this intimate, and delightful restaurant in Paia. Highly recommend!

Small husband/wife team with ambitious cuisine. Everything was great tasting, but the main was an overly salty beef tenderloin that no one in our party finished. We were not given the option of having it re-prepared and left unsatisfied. That's something that a small 14 seat restaurant cannot afford to allow to happen, thus this negative review. Unfortunate, as we were anticipating a great meal.

nyloS is our new favorite restaurant. This is an incredible restaurant experience for a tremendous value. nyloS is a wonderful addition to the Paia, Maui restaurant scene. I don’t believe that you will find anything quite like it in all of Hawaii.

This place is a hidden gem! We come to Maui 1-2 times a year and always go to Mama’s Fish House. NyloS will now be a staple of ours. The cuisine is exceptional and the flavors blended exquisitely together! We added the wine pairing and HIGHLY recommend it! Paulina and Jeremy are a husband and wife team. He is the chef and sommelier—everything is local and fresh that day—Paulina takes care of all else. Their wine selection is also well rounded. This place is a small intimate experience.

Very unique concept of dining. Although pricey, everything was well worth it. Welcome to foodies who appreciate artistic presentations and flavorful offerings. Each night has a different prefixed 3 course menu. You can order an additional package that will allow you to have wine pairings with each dish. This solves the dilemma of having to choose from their extensive wine list. The chef obviously took a lot of thought in the menu - would definitely come back for a special occasion. Very cozy place of 7 tables for 2 and some seating at the kitchen bar.

nyloS is a very exclusive, private opportunity to meet the chief and his wife as they prepare your evening meal. The pairing of wines were perfect with the menu. Only the best ingredients and excellent presentation of each dish. Take time for dinner as this was two hours of great conversation. We celebrated our 15th anniversary and found this location on Open Table - glad we did. They stagger reservations to give each couple or group the attention to make the experience enjoyable. Would recommend.

This is the best kept secret on Maui that should not be a secret. A restaurant like this on Maui is so rare and when you realize that this incredible experience is put together by two people it makes you further appreciate what you are partaking in. I could not recommend enough!

This was our 4th visit to Nylos. It's our FAVORITE restaurant on the Island of Maui and we plan to return on each of our subsequent visits. The Solyns are attentive hosts and Jeremy always prepares interesting, inventive and palate stimulating courses.

My husband and I went to Nylos for a date, and boy were we impressed! Everything was amazing! The folks that run the restaurant are a husband and wife team, very nice and accommodating. Their attention to detail was impressive. Every course was executed perfectly, from the wine pairings to dessert, my husband and I left very happy!

Just a note: The outside of the restaurant is unassuming, my husband and I have driven by several times and had no idea what was inside. Don’t let that stop you though! You’d be hard-pressed to find a better meal in Paia town (or most other places in our opinion).

If you are looking for a unique dining experience that leaves you saying "one of my best meals ever" then Nylos is it. A small place with maximum seating of 18 that has one setting per night. Chef Jeremy is passionate about his food, preparation & presentation. Using locally sourced ingredients as much as possible, the food is superb.

A fixed menu, ours consisted of King crab, braised chicken with a crispy skin to die for and a deconstructed chocolate desert. I cannot do the meal justice with my simple words. You have to be there to really understand.

The meal has superb wines paired with each course. It may be pricey to some, but for us the whole meal was worth it.

We had a beautiful 3 course meal and also got the wine pairing. Before the appetizer, we were brought out a delicious salad, followed by warm bread with butter. The first course was a shrimp and cauliflower appetizer followed by “surf and turf” crab and steak main course. For the third course, they brought out a light strawberry meringue layered dessert. Everything tasted great and the presentation was wonderful. The chef personally came out to chat with us and thank us for coming. They also cater to special diets, as the woman next to us didn’t eat meat. Would highly recommend trying this place for a lovely date night or foodie experience.

Located in historical upper Paia town, this Maui culinary gem is a secret only known to foodies thru word of mouth. Chef Jeremy weaves solid & inventive cooking techniques into even the most commonplace dishes such as surf & turf. The service was warm & thoughtful in a relaxed yet sophisticated atmosphere. I can see that this couple are trying very hard to create a 5 star restaurant in Paia. The food was very good, thoughtfully prepared and imaginative. Seating is for about 20 so booking in advance is almost mandatory. The menu is fixed so important to let them know about allergies and things you don’t like. My husband doesnt like lamb and it was the entre. They made a substitute of a steak which was also very good. My food allergies were noted on the reservation and I reminded the server twice but the chef didnt get the message and 3 times I was given food with things I am allergic to. No harm done and they were gracious about making it up. Professional kitchen; great service, very good food, good wine selection. Some might find it pricey but we know good food isn’t cheap. We wish them success!

If you're looking for a memorable dining experience, look no further than nyloS. Chef Jeremy is creative, the atmosphere is non pretentious, cosy and welcoming. The service is impeccable and the food - the food is amazing! The menu is a fun adventure of delicious treats and perfectly paced. I loved the variety, each dish was so rich in flavor and perfectly executed. I'm really looking forward to being back!

I can’t believe I only tried this place only now. Being from upcountry and the amount of times I eat out I wish I found this place sooner. Definitely a gem! A bit pricey but totally worth every penny!

Amazing dinner. Chef jeremy is incredible. I highly recommend dining here. He puts a lot of thoughtful care into each dish and has a passion for what he does. The restaurant offers a different experience than some of the other Maui restaurants. Everything is sourced locally and the chef will explain each ingredient and where it is from. Very fresh and delicious flavors. Highly recommend coming here and it is definitely worth the drive even if you’re traveling from a little bit a way. We will be back next time we are on maui!
