Noh in the Hyatt Regency Scottsdale serves up traditional Japanese cuisine, but does so with a contemporary twist. You'll also find a number of fresh sushi and sashimi selections on the menu.
Start off with a fresh appetizer when you get to Noh, like the squid salad, salmon poke bowl or miso soup. Other favorites of the house include hand-crafted sushi creations like the Philadelphia roll, spicy yellowtail and rainbow roll. Entrées at Noh include delicious offerings like the eel bowl, served with Japanese pickles and crispy shallots over rice and the sushi combo, which includes a variety of signature rolls.
"Sushi Marc" was our sushi chef...he made us some great customized rolls. My wife requested a few rolls with cucumber (versus rice) and Marc hooked us up. Cheyenne was our waitress and she did a great job of keeping the drinks flowing. My wife and I eat a lot of sushi. Our top picks locally have always been Pure Sushi and Roka Akor. We have to say that Noh is now our new favorite sushi restaurant! The whole key is Marc behind the bar making the sushi...he is amazing!! he's hilarious too...kept us entertained with stories all night. Without Marc this place would not be notable at all!! Everything was very fresh and surprisingly very affordable. Great service with beyond AWESOME sushi at a reasonable price!! We will be back for sure!!

Fun place to get good sushi and people watch
The tasting menu was prepared and presented in a lovely manner. The wine choices for the pairing were mediocre and that is why I hesitate a better recommendation. I have done wine pairings at other restaurants and was much more satisfied. The meal was not as special as I had aniticipated. The sushi and sashimi were very good, and the scallops and beef courses were excellent. Dessert was simply okay.

The sushi was outstanding and the service top notch. However, I was expecting this to be a restaurant. It was actually a small sushi bar in the lobby of the hotel. Again, the sushi and service were great - just not what I had expected as a dining experience.

The description stated a six course menu would be created. My reservation was made approximately 2 hours prior on the same day of the reservation. The chef did not have my reservation. As a result, the chef was not prepared for a six course menu, but it was offered if I chose to wait. I decided to order from the menu instead. While the experience wasn't quite what I expected, the food and chef were very good.
We had a wonderful experience at Noh. Our dinner was beautifully prepared and presented. The sushi chef is very talented, creative and personable. Highly recommend the chef's tasting.

For all of you who may have read the article in Phoenix magazine that raved about NOH at the Hyatt, they were wrong. Don’t waste your money. Not a true Omakase and overpriced for what it truly is. Cute concept, but it’s more like a so-so prix fixe menu.

All I can say is Wow!! This was an exceptional Sushi and Japanese Cuisine experience. My wife and I decided on having the Tasting Menu with Wine Pairing option. Every course was incredible. Chef Karen Lucero demonstrated mastery of preparation and presentation. The flavors were amazing and Karen's knowledge of the ingredients and preparation made the experience fun and informative. We really enjoyed the intimacy provide by the 6 seat Chef's Kitchen design. I must also rave about the flawless and unobtrusive service provided by Chef Karen in coordination with our server Jenny and the culinary assistance of Jessica. Every Hyatt employee we encountered is a consumate professional and showed genuine enthusiasm for our entire experience.
