Nautical Cowboy at the Carlton Hotel
Executive Chef Thomas Drahos works with local farms and fisherman to draw up artisanal menus... which he changes monthly. The plates are beautiful, thoughtful, and crafted.
We go with the seasons, create plates with care, and are simply looking to feed you nourishing, comforting meals.
Part of this comfort involves feeling safe. Being safe. Well - we are fortunate enough to have a GIGANTIC dining room and can spread our tables out well beyond the common 6-feet. I actually think the room looks better this way, who would've thought?
Our staff are trained on safety measures and we are masked up, ready to go.
We hope you come out, or order out. If we all practice safe measures, then we can all enjoy having food when it is hot again. Mmmmm.......
- Surfaces sanitized between seatings

Our favorite place to eat in Atascadero. They were able to spread out the tables well to accommodate social distancing. Our first time out in a while and we felt very safe.
Nice relaxing enjoyable great service quaint great food
Our first dinner out in Atascadero since Covid. Met another couple there. Brought our own wine for a $20 corkage fee.
Salmon brochette was very good! I had the black cod - delish. friends had the scallops that they both really liked. Wife had the vegetable pasta which was so-so.
We will be back. The new chef seems to have some good ideas for his menu.
Much better than my last time there, which was almost a year ago
Overall it was a nice experience, the food was good but not outstanding. Could use a bit more choices on the menu but do understand that they have just reopened. Will definitely try again after they have been open for a bit longer and things are back to near normal.
Glad to see you back in business. The service and scallops were both excellent. Everyone was in masks and being as careful as possible.
The food was very good, nice presentation and excellent service. However, I feel that the food was grossly overpriced.
Wow met some friends for dinner and we hadn’t gone out to dinner with them since COVID-19 started. Had a great time our waitress Jennifer was very attentive. My salmon was OK but two of our group had the halibut loved it and one had steak and she said it was pretty good. Two of our parties had the Sunday and I had the carrot cake which was different but good. Will definitely go back
We love this local restaurant. The food has been consistently good, with outstanding service. We always look forward to our next visit. If you like a good ribeye, this is the place!

Great to see ATown up and going again. Great food and ambiance at the Nautical Cowboy. Menu a little limited but the three courses we had were great.
A privilege to see our favorite place opened and serving up tasty meals.
Our server was outstanding! Food presentation was lovely. Food was very good. I ordered pistachio crusted halibut. I thought i would be able to taste or taste the crunch if the nuts but didn’t so I was s little disappointed. But the flavor and seasoning was great. Restaurant got very loud after 8:30 as everyone was enjoying the live music. Also nice wine selection.
Food was excellent, well cooked and perfectly proportioned. They could use with a few more wait staff, especially on the weekend as they really seemed to be very busy and it took a while to be assisted, but everyone was extremely nice and friendly.
The food was good, portions for the price, especially appetizers were small. They ran out of the beers we were drinking, only had 1 each. they were out of the coconut shrimp appetizer. Service was slow, looked like our server was overwhelmed maybe? The main entree's were good & flavorful, again fo the prce, were small portions.
This meal was a special Valentine dinner. Forget the price for a moment, one would expect the waitperson to know there was a special menu. You would also expect the same individual to remember our table, what we ordered, if we ordered, where our 3 courses were to be delivered and ultimately where the credit card came from.
Now the price. I am happy to pay $55.00 per person for a special evening. I expect the portions to be generous, the presentation to be great and the food to be tasty. I even expect my water glass to be re-filled. Let me just say I was disappointed in each category.
I have enjoyed great meals here in the past, that is several years ago.
Will I go back?
The food and ambiance was outstanding--it was my birthday dinner and my wife and I had a very memorable meal and the service was excellent! We are looking forward to returning soon.
Upon entering the hostess was friendly and took us to our table immediately.
Our server, Sandra was witty and nice.
The disappointment came when she told us there was a new chef and the menu had changed! The old menu is still on line, I had my heart set on rack of lamb and Sandra said they are no longer serving it.
My pasta dish was really awful. One person in our party ordered the ribs, they were ridiculously large and she took about three bites.
Unfortunately, we will not return, just to many steak selections, not enough good pasta or chicken dishes.
Thank you , Jennifer
We found the food to be excellent even if the service was leisurely. The staff was friendly and the ambience was pleasant. We will return.
The food was very good. There was only a couple tables that night, so it was a bit slow and quiet. Great service, great food. Steak was done as I requested.
Nice venue, interesting decor. The staff was our issue. Waited 10 min before anyone approached the hostess stand. Then waited 10 minutes before anyone came over and asked us if anyone was helping us. Then rather than help us they left and loudly told another staffer that no one was helping us.
I asked who the manager was and was told it was the cook. I did a quick count around the room, it looked like there were 6 tables occupied for about 8 employees.
We decided to get better attention elsewhere.
Thought the wine was a bit overpriced $43 for what is sold retail at Von'e for $11. We'll go again but may pay the corkage. Food was excellent.
We were excited to come and check out Nautical Cowboy for the first time. We were disappointed that there was not a full bar. My husband ordered a Copper ?? made with the sake and the taste was really bad (and we have had other wine drinks that tasted good) Also the price of a bottle of wine was exorbitant.
The food was very good and our waitress was great. We won't come back though as it was a bit of a drive for us and we couldn't enjoy a real cocktail.
Restaurant was only 1/3rd full....we allowed 1.5 hours for dinner, yet we were late to the movies as they are just slooooooooow. If you like your steaks tough and served cold...this is the place for YOU! We would have complained about the steaks had we had the time to spare (movie tix already purchased....)...and I would have waited for change (paid cash for expediency) to give a lower tip matching the level of service. Waiter was nice enough, food runner obviously not watching when HOT orders come up from the kitchen so they can be served while still HOT. Nope....they must have sat there and cooled off.
Appetizers were nice, dessert was nice....but the main was so poorly delivered (even the mashed potatoes were room temperature/lukewarm...and potatoes can hold heat longer than a steak can). Beautiful location, food was displayed nicely.....just need to step up the food delivery. A steak at Denny's would have probably been the exact same quality...but it would have at least been hot.
Fun night ! Great dinner and loved Monty Mills!
As always, this place is worth the trip.
Way overbooked as it took two hours to get seated and served our food. Waiting to be seated and then waiting even longer to order was terribly disappointing
OMG, what a mess this place is. Where was the owner? We waited a bit to be seated for our reservation, given menus and never saw a waitress. While waiting we heard the cooks yelling at each other in the open kitchen and the sound of breaking dishes. When I realized something was very wrong, I saw that very few customers were eating. We debated as there were no other options except to go home, we left the restaurant. The party of 6 seniors sitting next to us said they sat down at 5 PM and still had not eaten by 7pm. We are happy we left, went home to eat left overs.
I feel sorry for those employees, working on Christmas. Not sure where the problems lie, but clearly the owner bears the responsibility. I think the owner should offer all of us a free lunch.
Is this going to be another Carlton restaurant that fails...
Had a reservation and we were seated in a timely manner. Loved the atmosphere! Food was good and the service was great! I will definitely be going back.
This was a busy night for the restaurant. I gave the overall 4 stars as our waitress, Brittany was outstanding. The other 3 stars given was based on having to request for a beer menu twice, additional dressing for my salad requested twice. We've been to this restaurant on several occasions prior to this evening and have always had a wonderful experience. We love this restaurant and will certainly be visiting again. Thank you.
We visited on Thanksgiving Day because they offered a traditional Thanksgiving buffet. We had a reservation for 6:30 PM. I was a little concerned that the buffet would be picked over or dried out. This was not the case and the food was exceptional. The staff had been working since 9:00 AM and you could tell that they had had a long day of work. Even with the long hours worked, they were outgoing, attentive, and somehow...smiling. We were very pleased with the staff, atmosphere, and food. We will be returning soon to try their regular menu.
it was wonderful -the staff were friendly - food was great
We picked this as a place to meet for family coming in from Los Angeles, Orcutt, king City and Santa Cruz. Thanksgiving buffet was laid out strange with random tables and the desserts down the hall. Carving station was awkward and very chintzy on servings and meat available. There was half a turkey breast lying there with some kind of beef and the ham was sliced and wadded up in a small stainless steel container. Just weird and not very appetizing. Should have had multiple gravy locations as well. No signs denoting which stuffing was vegan and which was not. Food quality was not up to par with the regular menu. Server and staff was friendly and accommodating. Unfortunately, we will not be back for Thanksgiving.
Enjoyed their Thanksgiving holiday buffet- the traditional foods were served and all were very good.
This place is the worst dining establishment I have encountered in the Paso Robles area. It took over one and a half hours to finally get our entrees to the table. The food was not memorable and the waiter spent more time apologizing to us than serving us. Avoid at all costs!
Nice selections on the menu. Food was very tasty. Meat a bit on the high side.
Food was wonderful; wait staff friendly and efficient. Nice music from the front by Jimmy Harrell, what more could one ask for? Especially when it was a table of eight of our rambunctious family!
We waited over 30 minutes for our 7pm reservation while tables sat empty! There was one cook with a "helper" and both moved like their shoes were filled with lead. Our calamari appetizer took 45 minutes from ordering to receiving. My husband and I ordered the pork chop (we've had in the past and was excellent) but for some reason the cook decided to cut it up?? I can cut my own pork chop. The meat was dry - not worth the money. Friend ordered steak medium well and it came RARE - didn't send it back for fear it would take another hour to get it back. We have been here many times - was always great - will NEVER GO BACK AGAIN.... I don't mind spending good money for good food and service - but Nautical Cowboy failed on every level Saturday night. The waitress told us that the entire staff had gone out drinking the night before and no one got any sleep - IT SHOWED!! Hope they are proud of their staff. Huge waste of money
The server was lovely but the food was horrible. They need to start over with the kitchen.
We both ordered the bacon wrapped fillet cooked medium with Brussel spouts. The fillet was barely pink inside and dry. The Brussel sprouts were average. Perhaps we should have asked what cooked medium meant, but our server really should have told us. We ate at Nautical Cowboy shortly after it opened. The food was perfect. The Brussel sprouts were delicious. This time on 10/19 was not so good.
