Mestiza Polanco: una sinfonía latinoamericana en el corazón de la ciudad En el vibrante tapiz culinario de Polanco, donde lo cosmopolita coquetea con la tradición, Mestiza se alza como un referente de la fusión latinoamericana bien entendida. Con una propuesta que celebra los sabores del sur del continente sin caer en clichés, este restaurante ofrece una experiencia gastronómica pensada, precisa y emocionalmente resonante. Desde la entrada, el ambiente transmite una sobriedad relajada. No hay pretensiones, pero sí una clara atención al detalle: luz cálida, música sutil y un ritmo pausado que invita a la conversación y al goce prolongado del paladar. La experiencia comienza con unos elotes rostizados que, aunque sencillos en apariencia, revelan un dominio del equilibrio entre dulzor y ahumado, reforzado por una textura perfectamente lograda. El chicharrón de la Ramos, homenaje a la tradición regiomontana, llega crujiente y generoso, acompañado de notas sutiles que no opacan la intensidad de la carne. Pero es el cordero el que se lleva el papel protagónico: tierno, cocido con precisión quirúrgica, y acompañado de guarniciones que lo enmarcan sin distraer del sabor principal. El servicio merece mención aparte. Roberto, nuestro mesero, no sólo conoce el menú con una soltura admirable, sino que ejerce un auténtico oficio de anfitrión. Sus recomendaciones, basadas en una escucha atenta de nuestros gustos, no fallaron una sola vez. Ese nivel de atención personalizada es, en muchos restaurantes, un lujo escaso. Los precios, aunque acordes a la zona y al tipo de cocina, encuentran justificación inmediata en la calidad de los insumos, la ejecución técnica de los platillos y el esmero del servicio. No se trata de una cena cotidiana, sino de una experiencia gastronómica que justifica la inversión.
