行政主廚：Peter Merriman

OpenTable美食編輯： 《洛杉磯時報》曾將Peter Merriman譽為「夏威夷群島的Alice Waters（美國名廚）」，盛讚這名主廚運用在地食材的廚藝精湛，多年來無人能出其右。 於1988年在夏威夷大島上開業的第一家Merriman's，將夏威夷堅果脆煎鬼頭刀和香酥芋球等夏威夷經典菜色變化出新滋味，成為餐廳招牌。截至2018年，該餐廳集團已經在夏威夷的四座島嶼落地生根。最新開設的分店位置在檀香山，餐廳內採用色調鮮明大膽的綠白相間地板和叢林印花布料，格外引人注目。

理念

All of Peter Merriman's restaurants share a common mission statement: Do the Right Thing! Every member of the staff is taught to respect the `aina (land) that feeds and the people who produce the food, to be proud in their work, and to take responsibility for making sure every customer has a memorable dining experience.

                                                                  Although it was a bit loud with the lunch crowd, the service and food were excellent. Our server, Kody, was very friendly and helpful, always attentive to our needs. The smoked old fashion drink was delicious and all of our food was phenomenal! Will return again!
