   All the thumbs up for both Bistro and Mambo! For lunch at Bistro we ordered the gazpacho, a shrimp Caesar and a veggie sandwich. We also devoured the signature key lime pie which is as delicious as it is creative. For dinner at Mambo we ordered the crab ravioli (lobster is out of season), the snapper cooked in a banana leaf and a brioche perdue with bananas foster ice cream. Every single dish was thoughtfully and expertly prepared. I could have eaten a dozen of the fresh baked black pepper rolls served with dinner. The breakfast pantries were equally divine!

   Everyone must experience the gastronomic pleasure of dining at Mambo’s!! We saved our last evening in Belize to dine here celebrating a milestone birthday. Wonderful kind service, ambiance and soft music. Our meal was life changing! Delicious and beautifully plated. Be sure to leave room for the off-the-charts key lime pie!    Matachica is one of the best curated luxury Resorts and Spas I’ve ever seen. Their staff is beyond professional, warm and knowledgeable about their menu and spirits. You can’t get a bad or mediocre meal at Mambo restaurant. Everything is farm and sea to table. You have to try their spin on Key Lime Pie. And let’s not talk about the view, curated art and ambience. We ate there everyday and will continue to do so every time we visit the island. They raised the bar!!! It’s a must go to!!

   Dinner with family. We started with the crab ravioli and tuna tartare. Both had wonderful flavors and good portion to share. Our entrees were fabulous, especially the snapper. Service was spot on! And the location was so pretty. Highly recommend.

   Fantastic dining experience! Just make sure you underif they are seating you in the Bar side vs. the restaurant side. They are two different menus.

   Wonderful experience at Mambo. The resort is beautiful and the dinner was the best we had on the island. The staff was friendly and eager to please. Highly recommended!

   From the moment we arrived at the bar, we were warmly greeting by the most jovial bartender who takes his craft seriously and made the most artistic drinks! We then preceded into the dining room and were expertly taken care by Julio and his helper. The shrimp curry and seafood fettuccine were divine. Flavors were spot on. Dessert was the salted caramel mousse - so very delicious! I have celiac disease and required gluten free options - no problem. They brought out yummy, made from scratch GF bread! Such a treat for me! The vibe is elegant, but laid back. Wonderful evening, and exceptional service! Thank you!

   We were a party of 4 who were all looking forward to a great dinner. Unfortunately this was not the case. Based on the fact that the two Chefs running the kitchen were French Laundry alumni we were expecting top quality food. 3of 4 meals were disappointing. Overcooked lobster and tenderloin, overly reduced sauces, bland seasoning and thick gummy cream sauce on the pasta. The tuna tartare was mostly avocado cream and very little tuna. Deserts were the highlight of the meal both were excellent. Service was definitely not up to par for a 4 star resort. Our server seemed like he wanted to be elsewhere. There was none of the wonderful Belizian warmth and friendliness that we had experienced all over the country. He was aloof and unfriendly, forgetting who ordered what and auctioning every course around the table. We had to ask twice for some requested items. When we asked some questions on menu items he answered with attitude and a smirk. At the time we were dining there were only 3 tables in the dining room. Considering our dinner for 4 cost over $500 US the entire experience was a total disappointment and we definitely did not get value for the money. The resort adds an automatic 15% service charge which is more than our service that evening deserved.

   The boat shuttle and return van was very nice option that allowed us to experience the nice cocktails. Service and atmosphere were amazing.

    The appetizers were great and the server did his best to give us a great meal, but we had to wait 2 hours for our food. The main meals we got (whole snapper, seafood linguine, and lobster tail) were overcooked, or may have just been left out for some time before service. The flavors were good so we knew the restaurant had potential but they seemed to be overwhelmed and the kitchen could not keep up with the number of orders.
