Israel Laura, Peruvian Chef With more than 24 years of experience, he reinterprets Peruvian cuisine in his own style. His approach uses and merges the concepts and techniques acquired in Spain during his studies and professional experience, with the traditional techniques and ingredients of Peru to create what he calls "The New Peruvian Cuisine" with which he honors the traditional flavors of his childhood and incorporates his apprenticeship of the restaurants in Barcelona where he worked, many of them with a Michelin star.
