Jack Timmons grew up in Texas and has lived in Seattle for over three decades. In 2012, he attended BBQ Summer Camp at the Meat Sciences department of Texas A&M, then toured many historic barbecue temples of Central Texas. Returning to Seattle, he bought an offset smoker, imported some post oak, mesquite and hickory, and started the Seattle Brisket Experience.

After more than a year of practicing the art of barbecue, and serving old-school, succulent smoked meats to thousands of Northwest BBQ fans at ‘BBQ Raves’, Jack opened his first restaurant in the South of Downtown (SoDo) area of Seattle – Jack’s BBQ in 2014.

At our newest location on the border of Bellevue and Redmond, we serve authentic Central Texas Barbecue with Brisket, Ribs, Sausage and Chicken. Great craft cocktails including our famous Smoked Orange Old Fashioned. Incredibly good desserts like Peach Cobbler and Pecan Pie. Super delicious Breakfast Tacos. And as always, good times!

We love BBQ and this was delicious!! Katsumi the manager is so friendly and welcoming! Our server was friendly and helpful and the restaurant was packed. My husband ordered the rib eye steak special and it was cooked to perfection and DELICIOUS! The sides are so good too…we ordered queso Mac n cheese, Brussel sprouts, garlic mashed potatoes and the Texas chili. Just super tasty for a reasonable price. Going to take family there next week!

The food was amazing and the service was awesome! We ordered the fried pickles and they were great! Definitely liked the pulled pork and catfish too!

Staff was EXCELLENT and attentive! No less than three times in a 45-minute period was someone different from the staff checking to see how things were and/or if we needed anything. If you order medium rare ribeye, plan on it getting cold FAST. Perhaps, less talking and more eating was called for in this case.

I’ve eaten there twice. The plate dishes were not as good as the sandwiches. Great potato salad. The biggest disappointment was the cup of chili I was given. It was like soup, very little meat. I could not see any until I dipped my spoon in it to scoop it out. That is unlike any chili I’ve ever seen. Anyway I’ll be back for a sandwich and give the local business a chance again because the owner seems like a nice guy.

We love Jack’s. It’s true Texas barbque that always delivers. We tried the steaks and Cesar and they were delicious. We’ve also taken their smoking classes and they are well worth the time!

For the PNW area this is a pretty good BBQ joint. I am from North Carolina and had a Dallas person on our table and we both agreed the food was pretty good and the real thing. Service was a bit spotty. Our server was nice, but they were not appropriately staffed on a Wednesday. If you are looking for good BBQ at good prices, this is a good place to visit.
