Executive Chef Joe Reid joins Hudson’s with more than 20 years of culinary experience under his belt. Joe grew up in the Pacific Northwest, and fell in love with food when he began working as a dishwasher and learned to cook eggs – which turned into a life passion for working in the food industry.
After graduating from the Western Culinary Institute, Joe began his culinary career as a Banquet Chef at the Multnomah Athletic Club. Since then, he has worked in various positions at multiple restaurants including Morton’s The Steakhouse, Salishan Lodge and Brand Chef at Stanford’s. He has a passion for mentoring his team and helping them reach their full potential.

Love the ambiance at Hudson’s. Our lunch entrees were great and our server Beverly was fab. However, the Bloody Mary’s were underwhelming.
Great food and loved the outdoor setting, however the noise was a bit distracting!

Waited and waited for food. We were told twice “it’s coming”. People around us also waiting a long time Had to find our own salt and pepper. Ordered eggs Benedict, yolks hard, potatoes cold. Good waitress, felt sorry for her. Hope they figure it out. Second bad experience in past two weeks. Reported the first directly and have not received a reply. I won’t be back for a long time. Used to be a favorite.
Took our daughter here for a birthday brunch. We were seated promptly but then it was quite some time before we were waited on despite our server saying she'd be right back with waters. Perhaps it was an issue of not enough staff? We started with the crab cakes as an appetizer -- delicious & probably the best any of us have had (we should have stopped there). My daughter had the Eggs Benedict & I had the Avocado Toast -- both come with 2 poached eggs & that was the problem. Each of us had one egg that was "well done" with no yolk running at all & 1 that had a little yolk running. The whole idea of poached eggs is to have a (very) runny yolk to saturate the food they're paired with. Those dishes were a disappointment. Coffee was ok. Served missed an opportunity to "up sell" by not asking if we'd like a Mimosa or Bloody Mary.
The service was excellent however the food was bland and tasteless. Hollandaise sauce had no flavor and couldn't tell if there was crab in the crab cakes. French toast had to be drowned in syrup to get any flavor out of it. Drinks were excellent but food was not worth the money. Beautiful location.
The food was very tasty and served quickly. The service was outstanding.
The table we were placed in was really loud, and it was a Birthday celebration, so I was pretty disappointed about that. And I did have a reservation;(
Was hoping for a better experience there for my special occasion.

Food was just okay. Everyone's food came out at different times. Had to send my meal back because poached eggs yokes were fully cooked. Waited a full hour to get food. Our server was great. All the issues were in the kitchen it seemed.
We like the outdoor settings. The King Salmon entree is great in flavor and the mixture of cauliflower rice and the sauce is fantastic! We will visit again.
Comfortable, upscale environment. Good range of dishes, and a kitchen happy to mix and match items to fit what you want to eat. Desserts were blessedly appropriate size! Attentive, friendly, and knowledgeable wait staff. Great coffee! The only downside is the “contactless menu” — you need to scan the QR code with your phone to open a web page ... but Wifi is essentially non-existent within the restaurant. Apparently the hotel has Wifi for its guests, but that isn’t being extended to restaurant patrons (at least, it wasn’t to us). We managed to get the menu up after a couple of tries but it seems like an issue that could easily be fixed.
Made online reservations for 6:15 pm. Arrived at 6:10 and was immediately seated. Then nothing. No acknowledgment as servers walked by, no water. Waited until 6:30 and left.

Sunday brunch 5/30. We sat outside, and it was spacious, clean and an attractive atmosphere. The service was above average and friendly. We ordered three different dishes, and all three were very good. Excellent place for a family or friends to dine together.

My husband and I said at the Lodge for a couple night, we had a great time. The Hudson Bar was great. The food was delicious and the service was excellent.

We loved everything about the restaurant. The ambiance was lovely, food was phenomenal, service timed the food perfectly. Seriously, get the Gorgonzola cheesecake appetizer. Blew our minds!
Delicious food, friendly and efficient waitstaff. Little disappointed that "bar" seating is more in the lobby area.
Table available at time of reservation, service was warm and friendly, the food was bland and very over priced fir what you get. There are too many other places to dine in Vancouver with much better food and value.

Meals were very good. Wife ordered a meal with chicken and donginous crab with mashed potatoes and a sauce. When she got her meal, the chicken inside was not a breast but a chicken leg. No place did it say chicken leg on the menu. Very expensive for chicken leg with a little crab and mashed potatoes.
Serving staff needs some work. While she was gracious, we had just finished with our appetizers and had multiple plates on the table when they appear with our entrees. They should have cleared the table full of dishes prior to bringing out the food. BTW the food was moderately warm.
The server needs a brush-up on wine service as well. She was very inexperienced how to properly pour the wine and once it was poured she never refilled the glasses. When you're ordering a very nice and expensive Cabernet there should be some semblance of protocol observed.
The four of us ladies "of a certain age" (one turning 90) got a booth. First of all, none of us could download the menu on our smart phones although we did succeed within a few seconds and got that done. Unfortunately, this was not happy making for two of the four of us, so printouts were given to us. I had looked at the menu before I had gotten there so I knew what I wanted. The four of us made our choices. The choices for brunch were limited but adequate. (where was fish and chips, for example.....where was a hummus plate...)
My meal of the rice bowl was super good and my friend had the cobb salad which was super good. The other two had corn beef hash and one only tasted it and the other ate a bit of it.
The service was very slow. The waitress was sweet. We had to ask for more water. We had to basically clear our own table (stacking and pushing it all to the side so we could have gifts...two birthdays). The noise level as not quiet and sedate but noticeable.
All in all I was hoping for something "else" for this special lunch and I did not get it. The cost (two wines included) was a total of $90.00. The money really does not matter if everything else is great.
UNIQUE AND DELICIOUS DINNER CHOICES, GREAT SERVICE, EVEN RECOGNIZED MY BIRTHDAY WITH A FREE BREAD PUDDING. LOVE THIS PLACE.
Went for Sunday brunch. The huevos rancheros were just delicious and quite creative. We had not seen them prepared quite this way with the crunchy tortillas, but we are already thinking of when we can return for more. Flavor profile was amazing.
The service was outstanding and our only suggestion is to open a wall in the outdoor seating area to allow more sunshine.
We have enjoyed many breakfasts at Hudson's, including two previous meals during the pandemic. This time, though, the service was slow and the food was not hot. The menu has been reduced, even from the previous covid-reduced selection. Mainly lacking were the basics: pancakes and omelets that didn't include odd ingredients. They may be trying to distance themselves from the average pancake house, but... My elderly mom, who does not cook for herself, was really looking forward to the pancakes, which she always orders, so she was quite disappointed. Our server was friendly. We asked for a paper menu, which she quickly brought, but it was for dinner, not breakfast, which she hadn't noticed. She said it was the only one left. Would I recommend Hudson's? I have many times in the past, but at this point, I will sadly say no.
We have gone twice in two weeks. Love this place. Great service, ambiance is lovely, food is delicious.
Ordinarily, we really like this restaurant and hope it is only experiencing a bit of post-shutdown adjustment. Our meal was not of the quality we have known,and was quite expensive.
A wonderful outdoor dining experience under the former porte cochere. Tables well spaced and more than enough space heaters.
Brunch meals (3) were very nicely presented and delicious.
Members of the staff were friendly and helpful, making great suggestions for our first time there
We have been here many times before, last night was the worst we have ever seen. The service was terrible, the attitude of the wait staff was awful. From the time we arrived for our reservation we were chastised by the hostess for not wanting to use our phone to look at the menu, so she gave us ONE copy for a table of three. Our server was just as amazed that we didn’t have our phones. We had a guest and a special occasion that was not helped by the terrible service.
Sorry Hudsons we used to love you but never again.
We love it there but $12.00 for a Prosecco split is a little much.
I just went on Mothers day..I had not been in years and decided to try it out again as I missed their corn chowder.. Our server was not very friendly, too our table at least.. I saw her friendly with other tables .. She brought our water out in cocktail glasses , so if we did get the straw we asked for from her ( she forgot) it was hanging out.. I saw many of her other tables being well attended too and they had regular size water glasses so I know they just were not out of them besides the fact that we were the first ones there seated its like she could care less, on top of all this NO more corn chowder on the menu, The price for the food was sky high although the crab cakes were good they cost 17.00 for two tiny crab cakes UGH... my salad was not so good the blue cheese was bland tasted like nothing , my steak bites were greesy and only got about 4/5 little bites for 13 dollars.. and last but not least the hostesses and other servers were standing around hands in their hair ,one server even stood by our table gossiping while she scratched her messy ponytail a bunch of times and swung her hair in our direction GROSS !!!! It just looked sloppy for the prices charged it was not a good look for the entire place. I will not be back nor will I recommend ever again.

Was very disappointed with their food at my last visit. Lunch menu seemed to have changed quite a bit. There seemed to be more breakfast items on the menu than actual lunch items. I ordered the crabcake benedict. The crabcakes were not at all how I remembered them. Used to be very thick with lots of meat and not much filler and lightly browned. These crabcakes were very thin and overcooked, I think possibly fried. The hollandaise sauce was average and it came served with potatoes that appeared to come right out of a frozen bag that I would buy at a grocery store. My english muffin was also overrdone, almost black in some places and served dry. I did ask the server for some butter.
I use to really like this restaurant for lunch and dinner, but haven't been since before the pandemic. Perhaps the quality of their food has deteriorated due to lack of business? I don't think I'll be going back for awhile.
