    Experience our 15 piece 'Chef's Choice' Omakase dinner seated at Hinoki Sushiko. Our team of sushi chefs work in tandem cutting and pressing the highest quality rice with the seasons best fish selections from Japan and various global waters. In true Edomae style, sushi is delicately marinated, preserved, and seasoned to elevate the pure flavors of the fish itself. A special list of white wine and sake has been curated for pairing with the meal, as well as a full bar is available.

Poor service, sat at our table with food crumbs and empty glasses for an extended period of time. Intended to stay for another but the spell was broken due to absence of accommodation. Really wanted this to be our new favorite local place.

Fabulous sushi. One of the best in the city. There is a great selection of sake at this location. Would highly recommend for a “speakeasy” type of place with amazing food!

The Izakaya has some of the best Japanese bar food in the city. The lamb gyoza and chicken karaage are fantastic and the fish in the chirashi don was stupendous. Don't miss out on the cucumbers either!

Wonderful and hip new restaurant! The food (Japanese tapas) was delicious and came quickly. Our waiter was attentive and friendly (he even took pictures for us!). I can't wait to try to unique experience on the second floor.

Very poor selections of attempted “sushi” menu. Boring and unexciting dishes with overrated descriptions. However, service was excellent. Ambient and decor is understated with some attempt to create a “cool” or flair space.

The drinks were good, the food was way overpriced for such a little amount of food. Our group of 7 left starving after a $450 bill. We ended up going to karaoke afterwards and ordering fries and hot wings. The waitor seemed to be hot and cold with us. We were overall displeased and will never be back.

Much ado about nothing. Other than the tree sculpture on the first level, clearly little has been spent on ambience. Choices of wine by the glass was abominable! They purchased the cheapest wines available. Cost of 1 glass is the cost of a bottle retail (Ie: Gnarly Head!)

Food good, but most of our choices consisted of various tuna varieties.

We had the omakase upstairs and it was a fantastic meal. I definitely would recommend since the chef obviously knows his way around fish. However, our service was a bit of a letdown. The food was left sitting at the counter (in view) for 5 minutes for some courses and the waiter was not totally knowledgeable about omakase. That being said, it did not hinder the progression of the meal or the tastiness of the food itself.

This really wasn’t the omakase experience I was expecting. The beverage menu, and food were quite disappointing.

I could see the attempt at the play on original cocktails, but they were not exciting. They would literally just switch in an Asian ingredient and give it a different name. The sake menu didn’t really offer anything special. They didn’t have a single unfiltered sake upstairs. Our server was very kind, but also rehearsed. He didn’t seem to know much about sake when we asked.

Anytime I had a piece of nigiri I had to search for the flavor from the fish because there was just a bit too much soy smothering the fish. There was a precision that was lacking in the cuts and scoring of the fish.

Surprisingly, I did think the tamago was the most creative item I had and would eat it again.

Staff was very friendly, seemed like they did not have their process down as it was slow service. Food was not good. This is for the bar area only. I did not visit level 2 omasake.

This was the best sushi experience I’ve had in Chicago! The fish was so fresh and everything was absolutely delicious. The staff was very knowledgeable and extremely nice. We didn’t want to leave at the end of the night!

The sushi was excellent, bordering on phenomenal. The space and atmosphere were also top notch.

Being a new(er) restaurant, it wasn’t totally surprising to have some service quirks, but frustrating considering the expectations that come from such a price point.

We will consider going back in the future, but will give it some time as they settle in.

Food was expensive and average. Felt like they were just getting their footing post-COVID. Service was very slow, waitstaff not very knowledgeable about menu (and our waitress was smoking outside when we left - ew!) FYI this was the downstairs "bar" menu not the upstairs omakase.

I was AMAZED with our first omakase experience!! It was so fun to sit at the counter and watch them put the sushi together. I will note there was more of a limited drink menu upstairs and then obviously because it’s omakase the menu is set. Kind of expensive considering we still left hungry but we really enjoyed the experience.

So good, other than a slightly awkward encounter entering when they weren't sure where to put us before we were seated, everything was amazing. The omakase was definitely worth the price. Sushi bar was a great experience to be able to ask what the process was.

1) Food: Fish was very fresh and tasty. Could benefit from some tiny accompaniments(fried scallion, roe...)
2) Drinks: Selection was minimal; sake, white wine and a few cocktails. No red wine options? Strange.
3) Ambience: Needs more work. Area behind the sushi bar where we were seated should be pristine. Too many distractions, prep items(torch, rice vinegar...). These should be out of sight from the patrons and brought out only when needed.
4) Service: Much needed improvement. Too many times we had to wave our server over to fill water glasses or ask for more to drink. Too much time leaning against the wall and not making sure that the patrons are being pampered. At this price point there is no excuse
5) Serving dishes: I love the idea of selecting your own chopstick holder and the ginger and finger bowl, however the plates should have switched out every so often at the sushi bar. Patrons at tables were given a fresh plate every 3 courses; same should be done at the bar.
6) Clean up: at the end of service they should clear our plates and such before the sushi chefs start cleaning up their workstation cleaning out bowls and such. Again pamper us first.
7) Overall: Food was good but for the price point would have expected a bit more wow factor. Has the potential for a nice casual experience but definitely need to work out lots of little necessary issues.

To be fair, I have been to Japan and have had true Edomae style sushi, including at Jiro. Many respects to the Chef of Hinoki for trying, however my expectations felt short. The food was okay, favorite was the toro, least favorite the scallop. Tamago awful. Service is incredibly slow and the music is very loud. The night before the restaurant called to confirm reservations and dietary restrictions-relayed I don't eat beef, of course the restaurant forgot. Overall, okay sushi for anyone who hasn't left the Midwest, as I would of been just as content getting an $40 platter from Lawrence Fish Market and slapping on Japanese soy sauce at home.

After you pay, they kick you out. Sure, take my $500+ for dinner and the minute you grab my signed check kick me out. That's wonderful service. What a great way to leave a permanent bad impression.

Quite possibly the most disappointing omakase experience I've had in Chicago.

Fish quality was fine, but everything about the preparation and presentation was inconsistent. Sometimes there was too much fish, sometimes too much rice; sometimes the wasabi was too overwhelming, other times there was no wasabi where it would have made sense. Sometimes the rice was bland, other times it tasted like pure rice vinegar. Furthermore, I received a nice, big middle finger in the form of a sharp fish bone in the last plate to end the meal.

The cocktails were also disappointing. The Old Fashion was too sweet and the other cocktail with saffron was good at the start, but became too saturated with the taste of saffron very quickly.

Let me start by saying I made reservations on opening weekend knowing and accepting full well things would be a little rocky getting into the swing of opening a new restaurant AND I had very high expectations for this place given Chef Phan's reputation.

That being said, I was unimpressed. The rice was inconsistent, sometimes it was hard like it had sat out for a bit before being served other times perfect. Some of the cuts of fish were sloppy and the staff had no idea what they were giving us. When got what we thought was our third course, they told us it was tuna...the fish was all white fish and they had accidentally served us our second course twice, not a big deal but boy did the quality vary in both of those servings and not in a good way. You should see the pictures between two servings of the same course, you would hardly know it was the same from the presentation and the quality of cuts.

As for the drink selection, they had some really nice selections of sake and cocktails however they did not have chillers for any bottles you purchased. If I'm going to spend $90+ on a bottle of sake, it should really be in a chiller and not sitting on the table for a 2.5 hour dinner Our server was awesome and was more than happy to put it in the fridge for us while we had dinner.

All in all, I usually like to come back to a place after it's been open a while because it takes some time to get into the swing but it would take a lot for me to come back to the restaurant at that price point. Regardless, I do hope they get into a good groove and the whole team was welcoming and professional.

We had drinks at the bar downstairs first. The drink was tasty and the bartender was very attentive. The ambiance was great. We were then seated upstairs for the omakase dinner. The omakase was OK. I love fish, but the fish to rice ratio was off on the majority of pieces (too much fish for how little rice there was) and the rice was bland and cold. That said, there were some pieces that were delicious (scallop, toro). On balance though, and for the price, it was not worth it (yet). Hopefully Otto irons out some of these kinks. Best of luck to the team, especially the hosts and serving staff who were great.
