Our dining experience showcases the artistry and skill of Award winning Chef Jan Van Haute and his culinary team. In addition to a daily 4-5-6 course Chef's Tasting menu and A La Carte options, we partner with local farmers and regional purveyors who share our philosophy. Our extended Winecellar hold about 200 varietals. An amazing beer and spirits-menu is available in our Bullskin Tavern.


The dress code for dinner is business casual. Coats and ties are welcomed but not mandatory.

    After enjoying the excellent whiskey selection in the bar before dinner, We had the 4 course tasting with wine pairing. All selections were excellent. Service was fantastic as was the ambiance. Scallops with wine pairing were particularly memorable. Cannot say enough good things and we will be back.

    For starters, we were greeted and seated by the coincerage who explained the history behind The Inn. The entire wait staff was professional and personable. They truly made you feel welcome. My wife and I did the six course tasting menu with wine pairings. The food as well as the plating was awesome. The sommelier did a wonderful job with her explanation for the pairings. The two amuse bouche were amazing. My wife loved the oxtail ragu with the celeriac puree. I really enjoyed the oysters. Overall, a truly wonderful dining experience. Would definitely recommend!

    Our dinner here was wonderful! The server, Trevor, was very polite and helpful. The atmosphere was quiet and cozy...and the food was fabulous. We look forward to returning.

    The building itself is beautiful. We also loved the inside decor. The Tasting Menu was fantastic and every course was exceptional. We got the wine pairing and all the wines were wonderfully paired with the course. The only issue was the over priced, plain coffee, but if that is all you have to complain, deal with it.

    Very small portions but excellent quality. We ordered from the a la cart menu. Prices are ridiculous for main menu considering how they are presented with two small bites of vegetables. The steak portion was ok but the squab was four two inch pieces. Yes a squab is a small bird but the portion should be increased. The scallop appetizer is two scallops for $36.

    The Hillbrook is a hidden gem in Charles Town the restaurant is great and the staff wonderful. We tried the foie gras, scallops, veal tomahawk, and peach melba. Everything was delicious and cooked perfectly, with many menu options you can’t find anywhere else. The sommelier suggested some great wines to pair with our dinner and with their expansive wine list there was plenty to choose from. The service was excellent and the dinning room was beautiful.

    We tried the tasting menu. The first course was a very overdone scallop.The presentation was good but scallop was overcooked. The squab was excellent. The foie gras was also very overcooked a real disappointment as this is one of my favorite dishes. The steak was good. The highlight of meal was the chocolate mousse. The wine pairings were hit and Miss. They tried to give various different types of wine at least two were not correctly matched. I must give high marks for our service which was outstanding and the ambiance was also excellent. The charges for extra drinks was excessive. All in all a disappointment for the amount charged. I rarely give a poor review especially when the serves were so outstanding. Unfortunately I can’t recommend this restaurant. I will not return

    Fantastic experience! We selected the tasting menu. Each course was delicious, thoughtfully prepared, beautifully presented, and generous in size. The menu features unique proteins - scallops, duck, lamb, squab - and each was cooked perfectly. The service was attentive and efficient. We did not do the wine paring and the Chef’s recommendation for a wine to bridge the courses was spot on. The restaurant seating is across several small rooms, creating a intimate environment and the rural setting offers beautiful views. Overall, a wonderful discovery! We are looking forward to our next visit.

    I made my reservations for a romantic first date at Redbook Restaurant through your service. I received a confirmation email, then a little while later a text message asking me to confirm my reservation, which I promptly did. About a half-hour later I got a call from the restaurant telling me that they could not honor the reservation. I protested, telling them that I made it online through OpenTable, and was confirmed twice for the reservation. The lady who called me told me that booking is through a third party and they couldn't guarantee it. I suggested they get their act together with Open Table, because as good as the reviews are, you can't count on having a reservation honored. Consequently they lost a potentially great and repeat customer...I'll never set foot in that restaurant...and I'm a great tipper, too (25% or more). Very dissatisfied.

    The food and service was truly exceptional. The menu is price fixed. Every dish and wine pairing was outstanding. The dishes were beautifully prepared with a harmonious blend of interesting flavors. We will return to this restaurant.
