It’s a little intimidating as you have to order your own food by weight. It’s not easy to tell how much is correct. The staff does try to help but visualizing 1/2 lb of brisket can be difficult. Quality was good. The sides were good big enough to share, get two, deserts the same. Overall the place was loud boisterous and a bit hard to navigate as you go and pick up and choose your food. It’s a success as it’s been there for 10+ years check it out it’s worth a visit but may not be for everyone.
Everything was great but the spare ribs were incredible. The staff were so attentive.
Good food. My only issue was my meats were not warm.
With it being my turn to choose the dinning spot, I knew exactly where to take the family. Previously visited establishments and those who selected them will remain anonymous to protect their reputations lol. Hillcountry scored 5 stars all away around hands down! It was a first visit for all except truly. We’ll be back again with an even number of family members after the word is spread around...

The barbecue was fantastic. Loved the casual atmosphere. Our server was very helpful orienting us since it was our first time. . They even honored a request to play “ When I’m sixty-four” for my husbands birthday complete with a candle on this dessert. We look forward to coming here again soon.
Bbq and sides were very good, so was the service. I did think it was a little high priced but it is Manhattan and I get it.
The food is very good. Especially enjoyed the brisket. A bit expensive but the staff are great and the restaurant is a good setting. We enjoyed our time there and the servings were good sized.
Moist brisket, a winner as always. Sides also great.
The rest disappointing. Pulled pork nachos, tasty but cold. Prime rib- cold, fatty, almost raw. Lamb T-bone- leathery and tough outside, raw and cold inside. Service inattentive- long time to get drinks and check during not even full house. A shame.
Omg....so freaking good. The meat was beyond better that we could have imagined. We had a little of everything.

Great BBQ, especially the pork belly and prime rib -- both fairly rare on the NYC BBQ scene.
The restaurant has a great vibe for family and kids! However, the food isn’t the best you can get. The prices are steep for the quality and quantity of food.
I love the food and it’s not a traditional restaurant. The food was great and just love the sweet potatoes.
Very expensive!!!! Did not like sitting with strangers as they have long cafeteria type tables. Limited choice on side dishes. Ribs very fatty.
Sadly I can't recommend Hill Country based on my past visit where I took my son for his birthday.
We had the all you can eat special which was a mistake. It was a limited menu and didn't include moist brisket, which in my opinion is the only brisket that should be served. Our ribs, chicken and lean brisket were dry. Had we been informed that lean brisket was not included, we would not have ordered the from the all you can eat menu. Our waitress realized she never told us about the restriction and generously, graciously gave us a portion on the house. She was awesome. But even the moist brisket was incredibly salty. I had just returned from San Antonio where I went to several barbecue places and Hill Country could not stand up to any of those in quality and food, which is a shame because I was really rooting for the place.
Never been to a Texas style BBQ joint. Might take some getting used to.....but I'll be back.
Order by the piece or, for example, by the number of ribs or slices of brisket, turkey or roast beef you want. The pit master may or may not ask you how thick you want your various meat sliced since there is often a pan of pre-sliced brisket and pre-sliced ribs ready for the serving. After ordering by the piece your order will be weighed in order to charge you but don't be fooled and try to guess how much a 1/4 pound or 1/2 pound is. The restaurant always explains "their system" of lining up cafeteria style; they tell you to order by weight and this is ineffective and inefficient. Vegetable sides and chili con carne are different since they use cups and pint containers (like what ice cream comes in). Be forewarned: Don't over order those either. It's really easy to do that and it gets very expensive, very quickly. The other thing HC does which never made any sense: they put refrigerator-cold barbecue sauce on the table. Always have, always will, we guess and that immediately puts a chill on what has been barely warm meat....never hot because of the low temperatures that pit barbecue cooks meat at over the 24-hour period of smoking. Don't know why they can't think of this and at least supply room temperature sauce.....or heaven forbid, actually warm up the barbecue sauce before expecting you to chill your food with it.
Large barbecue restaurant, great variety of meats and sides priced moderately. It is noisy but most barbecue restaurants are. Service is partially self service but wait staff are helpful and friendly
The food and drinks at Hill Country are always delicious. There is community seating and most tables do not sit just two people.
I will say the drinks are expensive but delicious and ordering the lean brisket and mac and cheese is a must.
Barbeque was excellent! Sides were underwhelming though and I’ve never seen a barbeque place that didn’t offer corn on the cob, but whatever. Cucumber salad was literally just sliced cucumbers and vinegar. If you are keto or palio, you’ll love this place.
Place is very relaxed. All the food was very good. Would definitely recommend the Ribs and the Brisket. The sides were great with a lot of variety. Happy hour prices were nice and the margarita was tasty. As a bonus if you wanted to hang out for some entertainment, they had Karaoke night downstairs (Wednesday) which could have been fun if we had more time to hang out. Added bonus, happy hour is till 7pm and I believe starts back up again after 10pm. If you are looking for a quiet place where you are served your food this would not be the place to go but if you don't mind casual dining where you get up with trays and order your own food this is definitely a great choice. We will be going back for sure!!
BBQ and sides great as usual. Service better than usual.
The menu was interesting; I really liked the idea of the family style platters. In execution, however the platter was unimpressive (maybe I'm missing something but I thought saltines on the platter was a little weird). Our waitress was fantastic, friendly, helpful and courteous. The Lone Stargarita was delicious and a good deal in happy hour (up to 7PM). Food was good, not great, and the place was noisy.
The servers are expert in helping you get the most for your $. Don't be afraid to ask them. Everyone was very friendly. Drinks were quickly refilled. Pecan bourbon mashed potatoes can serve as dessert! Don't miss them or the pork spare ribs.

BBQ was good, but sides were cold. Service was not great and it was noisy in general. Didn’t help that several kids were running around screaming, not the restaurants fault. Better, faster service and attention to some details, like hot food, utensils and attentive wait staff would make it a better experience. Given food was good, I would maybe give it another shot, might have been an off night.
It’s a different way of service and eating but the food was Phenomenal. The brisket is to die for. It cuts like butter and melts in your mouth. Looking forward to going back again.
My only issue on this trip was how they handle ordering a platter for a group. I was told I needed to get in line to order. When I finally got to the point to order, 30 minutes, I was informed that the wait staff would order the platter.

Unique authentic barbecue. Nothing fancy but tons of fun.
Platters not very hot when they arrived...and when I asked for BBQ sauce it was straight out of the fridge....very cold and would have much preferred hot. We also never got part of our order.
Overall, good value for a group of boys!
We went for the all you can eat but prob should have read reviews before we went. All you can eat is pretty deceptive as it’s not all you can eat. All you can eat was limited to pork ribs, lean brisket (which was pretty dry like chewing straw), chicken and some (not all) sides. Enjoyed the sides more than the actual meat. I don’t think we will be eating here again. Definitely not the best in the BBQ game either.
Came here for my husband’s birthday weekend and it was fantastic! Service was on point and fun, food was phenomenal, music downstairs was fantastic! Will be back soon!!
