The order process was confusing, the waitstaff gives you a menu, then you go place your order at two different counters and bring the food back to your table. The tables are long, communal tables that are close together so you are constantly bumped by people trying to get out. The food was good, but nothing special. The waitress finally brought our drinks about halfway through our meals and never returned. We finished eating, had the table cleared, and finally asked another staff member to get us our check.
On vacation from London and we found this fantastic place. The staff will tell you how it works. If you are a meat lover this is the place to go. Live music downstairs where you can also eat. Thank you for a great night

My hubby and I loooooove the BBQ here. Mouth watering, delicious. Their burnt ends and brisket are our favorites!
If you are familiar with and love southern pit-smoked barbeque that falls from the ribs as you pick up the bone, stay away from this place. This is not the pit-smoked St. Louis or southern style barbeque ribs that you’d enjoy in Big Mama’s back yard with drinks, while everyone is dancing to “Before I Let Go” by Maze. It is a big, overpriced disappointment.
I decided to check it out after seeing the bald-headed guy from The Chew profile it on the Food Network. Now I'm looking at The Chew with a side-eye.

Good bbq in Manhattan. Can’t question the quality or the ambiance but it is a bit pricy. Saying that, it was an overall great experience for our family including our 10 and 7 year olds.
Delicious - revisited after 4 years. Nom. This place has a charming, good, filling food vibe! Service great, not too over the top. Make sure you’re hungry when you visit. Super-tasty!
So fun. You do have to be comfortable with cafeteria style service and eating on paper-but if you get over that-it’s a blast and delicious. Fun with a group.

The brisket was divine.
If you want great Texas style BBQ this is a good spot. The food is a little cold because naturally because you order, they cut it up and weigh it, then you take it to your table.. it's all self serve, which you can appreciate or hate. I like that about this place. The waiter/waitress in my case only showed up once throughout our meal and was just hanging out chatting with other staff when we needed him. So basically, expect zero service. You go get your own food, your own drinks at the bar, etc. The wait staff is as helpful as they would be at McDonalds, to give you an idea. Great food, terrible service, medium to high prices, but not a bad deal for Manhattan. I recommend this place, just set your service expectations low before y'all go!
I love the briscuit. It would be cool to let customers see how the smoking is done.
Love to the food the brisket was especially delicious as well as the smoked ribs and the mac and cheese. I wish the server or the hostess had explain the process before seating us but we had a great time and would definitely go back and recommend it to friends

This place has my favorite brisket outside of Texas and has always been spot on, today it was a bit on the dry side.
Over priced and very poor service. The meats were good, but not great. The sides were not good at all. Our server was very nice, but didn’t know anything about how the menu worked. Our bill was $120 for 2 adults and 2 children without alcohol or desserts and we drank water....Wow!!! Save your money. Too many great places to eat in the city!!
The table where we were sit was right next others so when we had to go get the food, the people sit at the other tables had to stand up to let us out. This is very annoying.
The meat was good but the sides were just ok, it felt like they had been re-heated for hours.
First try the brisket, must be moist, then you can try everything else! ! !

I travel to NY every week, and Hill Country is a mandatory stop. The best brisket I have ever had. Order it moist. Sausages are good, and the prime rib is awesome . This time, I had the burnt ends and was mildly disappointed as they were dry. Burnt ends are the prime portion of the Brisket so I expect them to be as most as the brisket was. However, if you like smoked bbq, you will LOVE hill country.
Food is good. Staff is friendly. Prices way out of line. You have to go to a counter to order and food is wrapped in paper. This may be authentic and a theme but not for $30 per meal.

The food was what I was hoping for/expecting, but what stood out was the staff. Everyone I interacted with (hostess, server, and two people behind the counters where you pick up your food) was on point and did their job well. I was impressed, and that makes me want to come back again (besides the food being so satisfying).

We arrived on a Tuesday evening and it was not too crowded. We sat downstairs and it was karaoke night. We didn’t sing but enjoyed the music. Service was friendly, food was good.
The brisket was absolutely delicious. Every bite melted in your mouth. Highly recommend it. If you want to get a taste of several items on the menu, order the postmaster.

Moved here from Texas and had heard about this place from a few people. Its was nothing to write home about. Meat was ok - sides were mediocre. Better off going to Blue Smoke if you want BBQ in NYC.

Hill Country never disappoints. Moist brisket just melts in your mouth. If you can't decide on what to eat, grab the Pitmaster (pork ribs, spicy sausage link, brisket and chicken with 2 sides). Baked beans with burnt ends can't be beat. If your table just likes BBQ, go on Monday and have "all you can eat" (whole table must partake). Hill Country is one of my "GO TO'" for dining.

Love the meat, sides could better and even have more of a selection... I also think you could more for your buck, not a lot of food and for the money we’re putting into a meal. Also, I think it’s really ludicrous to ask to recommend a 18 to 22% tip when the customers serve themselves for the most part... just my opinion
What really threw us off with this restaurant was the lack of courteous table service. The folks bussing the tables and the people serving the food in the cafeteria section were all great. The waitress was missing for nearly all of the meal and we had a hard time getting drinks and even our check. She was even discourteous to our grandmother. Too bad. Decent location and neat concept. We love BBQ. But with that service from the front of the house, we won't go back.
