booked this restaurant in NYC thru open table and when we arrived, they didn't have any reserv for us and had even booked most of the place for a special party. We were only able to sit in the bar area. They did give us a complimentary drink for our trouble which was nice. the food is very overpriced and the sides were very average.

Overall I enjoyed my meal, however I was disappointed that they ran out of pulled pork. Surely they must know the popular items so should plan accordingly.

I was also less than impressed with the first server that I had. She never offered me drinks and just disappeared. The next server was much better.

First time we have visited Hill Country and we were recommended by a friend. What a fab place, the food was amazing and the band downstairs just finished the evening.

My buddy comes from Memphis and he always enjoys it, especially the burnt ends and the black-eyed peas. The barbecue sauce has a nice bite, too. Just always great!

Excellent BBQ. Great selection of meats. All was perfectly smoked. The sausages from Kreuz are always good. The brisket was like butter; you didn't need a knife. The sides (mac and cheese, collard greens, corn pudding and baked beans) were very tasty. Hill Country is one of my favorites for BBQ. Their quality rivals any BBQ restaurant in the south and west.

We ordered spare ribs, dark chicken quarter, pulled pork, black eye peas, Mac & cheese, corn pudding. The service was great and love the recommendations. The place was not busy the day after Thanksgiving. I would have rated it higher because there was no bourbon sweet potatoes & pies. The sweet tea was delicious. We'll come here again.

This was our second time here while visiting NYC for Thanksgiving. We enjoyed it so much two years ago that we knew we wanted to come back. The food was good; meats were excellent. However, the service was almost non-existent. We were very rarely checked on and, when asking for a refill, it took an extremely long time. Being that you get all of your own food (Thanksgiving dinner service is kind-of buffet-style), service should be fast and straightforward. For the price of the meal, even though the BBQ is on par with the best we've had, I can't say we'll be back next time we visit.

Unfortunately by the time we arrived for our 6pm reservation they were out of a number of side dishes. No BBQ beans...no potatoes. I was disappointed. And I did not like the bottled BBQ sauce that was on each table.

We visited in the late afternoon of Thanksgiving Day. I had failed to realize there was a special $52 per person Thanksgiving menu (my fault). Normally, you would be paying per pound of barbeque items or per item for sides and desserts.

I had one rib, 2 slices of brisket and a burnt end chunk. I hardly touched it. It was vastly over-salted (this coming from a working chef) and the remaining seasoning seemed to be large amounts of black pepper. DH had same meats, but didn't eat much more than I did. The sides were considerably better, but we were disappointed there were no bbq or baked beans (really? in a bbq joint!) DH thought the collards were pretty good. I liked the bourbon mashed sweet potatoes and cole slaw. Corn bread was excellent! Mini dessert I had of bourbon pecan pie was pretty good.

A pitcher of Bud, worst I ever tasted.

You would have to pay me to go back here. I wouldn't spend my hard earned money for this. Virgil's for my money, any day (hey, it was fully booked on Thanksgiving). This was a waste of money and calories.

The best BBQ I've found in NY, it's about as "authentic" as you can get for not being in the south. There is a great atmosphere and I love the live music. Service is just OK, but I've been there a few times and will continue to go back.

Always consistent and great servers. One issue: the meat counter staff were awesome, but the sides counter staff through such bad attitude...get this together and it will be a seamless experience

Coming from Texas I know Texas barbecue. The brisket is good and the sausage from Kreuz market seems authentic. The service and the process to get food is poor. I think they need to make a trip to Lockhart to see how it is done.
There was lots of staff around but they were busy doing things other than taking care of the customers.

Another trip to Hill Country brought upon a new discovery. Their offer of 2 meats with 2 sides made life a whole lot easier for me. Perfect portion sizes to avoid overeating. Went with lean brisket and burnt ends (which were both delicious). Will be back.

The 'moist' brisket is even better than the ribs, and that's saying something. Terrific collard greens and excellent beans. The Mac and cheese is decent but I've had better. Good selection of Bourbons and ryes at reasonable prices. The noise level is what you would expect. We've tried other 'cue places but keep coming back here.

Meat portions for the "3 meats + 2 sides" was a bit skimpy. Brisket was cooked perfectly, but too salty. Needed more of a "kick" - perhaps more black pepper or something else to cut the saltiness. Should also offer horseradish, or a horseradish-based sauce as a condiment. Brisket goes well w/horseradish and is a common condiment here in NYC for brisket.

If you want good BBQ, head for HillCountry. The brisket is exceptional. My wife and I love it along with the sides like Mac n cheese and Cole slaw. It is a fun place and moderately priced.

I have eaten here 3 times and my recent experience was far inferior to my previous visits. The downsides:

1. Football was in and noise from the TV and the crowd noise made conversation impossible. It was an assault on the senses
2. They had run out of several meats so the choice was limited. This was pretty disappointing for a Saturday night where you would think they would have their formula and supply sorted
3. Menu format is confusing and, apart from the waiter, the staff were pretty indifferent and frankly looked miserable
4. There isn't really a kids menu so my daughter had some cornbread and a few bits of chicken. I guess it's not a kid-friendly venue

I like the concept of this place, but it wasn't working at all on saturday night.

Great bbq! Friendly staff. Boisterous atmosphere. Great for a last minute big group reservation. Menu and layout of the space have changed in the last year to streamline the whole experience.

Second time I've been here for a birthday celebration - this time mine. We were seated downstairs, which was perfect because upstairs was very noisy and crowded. I had a drink at the bar while waiting for the rest of the party - smokey margarita! Drinks are strong and creative, the food is great, the service was friendly and welcoming. If you want BBQ head here, and don't skip the PB&J cupcakes.

Food great as always. Service slow as always. My moms birthday and she is picky. Loved the prime rib. Didn't get a chance to order beer as soon as we got table so didn't get our beer until half way through meal.

Did not like the food. First you have to stand in one line to get your entree meats and then another line to get sides. Process took too long and felt like slow cafeteria.
I had ribs, chicken and brisket, none was good. Chicken dry, ribs fair, brisket very salty with little taste.
