This place has my favorite brisket outside of Texas and has always been spot on, today it was a bit on the dry side.
Over priced and very poor service. The meats were good, but not great. The sides were not good at all. Our server was very nice, but didn’t know anything about how the menu worked. Our bill was $120 for 2 adults and 2 children without alcohol or desserts and we drank water....Wow!!! Save your money. Too many great places to eat in the city!!
The table where we were sit was right next others so when we had to go get the food, the people sit at the other tables had to stand up to let us out. This is very annoying.
The meat was good but the sides were just ok, it felt like they had been re-heated for hours.
First try the brisket, must be moist, then you can try everything else! ! !

I travel to NY every week, and Hill Country is a mandatory stop. The best brisket I have ever had. Order it moist. Sausages are good, and the prime rib is awesome . This time, I had the burnt ends and was mildly disappointed as they were dry. Burnt ends are the prime portion of the Brisket so I expect them to be as most as the brisket was. However, if you like smoked bbq, you will LOVE hill country.
Food is good. Staff is friendly. Prices way out of line. You have to go to a counter to order and food is wrapped in paper. This may be authentic and a theme but not for $30 per meal.

The food was what I was hoping for/expecting, but what stood out was the staff. Everyone I interacted with (hostess, server, and two people behind the counters where you pick up your food) was on point and did their job well. I was impressed, and that makes me want to come back again (besides the food being so satisfying).
The brisket is amazing. The sides are great and the prices are reasonable. We love this place.
We arrived on a Tuesday evening and it was not too crowded. We sat downstairs and it was karaoke night. We didn’t sing but enjoyed the music. Service was friendly, food was good.
The brisket was absolutely delicious. Every bite melted in your mouth. Highly recommend it. If you want to get a taste of several items on the menu, order the postmaster.

Hill Country never disappoints. Moist brisket just melts in your mouth. If you can't decide on what to eat, grab the Pitmaster (pork ribs, spicy sausage link, brisket and chicken with 2 sides). Baked beans with burnt ends can't be beat. If your table just likes BBQ, go on Monday and have "all you can eat" (whole table must partake). Hill Country is one of my "GO TO'" for dining.

Love the meat, sides could better and even have more of a selection... I also think you could more for your buck, not a lot of food and for the money we’re putting into a meal. Also, I think it’s really ludicrous to ask to recommend a 18 to 22% tip when the customers serve themselves for the most part... just my opinion
What really threw us off with this restaurant was the lack of courteous table service. The folks bussing the tables and the people serving the food in the cafeteria section were all great. The waitress was missing for nearly all of the meal and we had a hard time getting drinks and even our check. She was even discourteous to our grandmother. Too bad. Decent location and neat concept. We love BBQ. But with that service from the front of the house, we won't go back.
We had a 9:30pm reservation. They seem to be out of a number of items by then. Everyone was super helpful.
Nice smoke ring on all the meats. Everything thing that we had was overpowered by salt. Definitely not worth the price for not authentic BBQ
The food was ok. But we didn’t receive any attention from the wait staff and finally received our drinks after we had finished our meal. I was disappointed. I had a good experience my first time here but don’t think I’ll go back after this time. Underwhelmed.
Service was a little slow but otherwise the food was really good.

Nice restaurant and koncept. The brisket is outstanding.
Service staff did not explain the way the restaurant works regarding ordering of meat and sides, the server gave us not enough cuttlery for our group of four and we were unable to catch her attention again to obtain a fork so our group could eat together, it appeared she was more interested in the large groups.
The food was not that good. The mac and cheese was not chessey and the pasta is too large. The meat was tough and not so flavorful. The desert was good but would not go back. You should check out John Brown Smokehouse

The pit master special is delicious. The brisket is melt in your mouth and bursting with flavor.
It's a fun casual atmosphere, definitely a good value for your money and plentiful on the portions.
We now want to try their other location.
Hill County used to be one of the best BBQ restaurants in NYC - unfortunately this is no longer the case. On a Wednesday evening in December, at 8pm, they had ran out of 3 of what I suspect are there most popular dishes. Brisket, Beef Short Rib, pulled pork . In 2 years, prices have doubled. Which means your paying $30 per person for your pork belly or chicken (as they are sold out of everything else), which sort of defys the whole point of BBQ. On top of this staff was not knowledgeable on food allergies and our process for paying the bill was a mess. Big fall for what used to be one of my favorite places in NYC.
Great place to eat and the food is amazing with some of the best steaks and ribs I have ever eaten, but just weird that you have to serve yourself when the food is such a high quality and not cheap
The burnt ends are everything!! If they have the chili smoked wings, get them. They are phenomenal! Also, moist brisket. Who gets the lean? Why do they even offer it?

Aroma, taste, ambiance , this place has it all. Not for formal dining, but casual and relaxed.

I went for My Birthday with friends and we had a great time. I will be back soon and will refer friends
We traveled from CO to NYC for my daughter's 13th birthday and this was her choice for dinner, having visited last year for Thanksgiving. We had a large party of 13 (visiting from VA and NJ) and despite our reservation only being for 12 they quickly accommodated us and added extra seating. The meal was great, the wait staff, hostess, bar tender, food serves and manager were all friendly and engaging. They sang happy birthday to her and brought her a selection of desserts. Overall a great night out with friends.
