A definite improvement with what comes out of the barbecue pits -- after 24 hours of slow, magnificent pit barbecuing -- after a disappointing couple of meals there about a year ago. Pit master(s), side cooks, and management deserve compliments
for turning the situation around because everything from the brisket to the chicken wings were being served -- and since it was take-out, we were already home before we would notice -- not properly or evenly seasoned, cooked, etc. So guys, continue to be vigilant and keep up the good work.
Too bad prices have escalated to the point where it's not something we can do but once every few months. We used to go once a week! I understand beef prices are going through the roof across the U.S. so there's nothing we can do but pray and go out less. But there is something you have easy control of: Please, please, please find a way to offer barbecue sauce at the tables that isn't ice cold since that ruins all the delicious meat your customers pay a fortune to eat. The meat is already just warm out of the pit because that's your process; cold sauce quickly chills the chicken, pork and beef and that's never good.
I look forward to the burnt ends every December as that’s when we visit NYC. All of the food is excellent but those burnt ends are my absolute favorite!!
Not a single person working in the restaurant was querying a mask. Seems highly unlikely they were all exempt.
Our drinks were forgotten about and left on the bar for ages so only had time for one, one of our sides was missing off the pitmaster platter as well. Our server at the end was super apologetic and comped things off the bill but i wpuld have preferred if yhe setver had checked in on us throughout but i got the impression she has been working a long shift that wasnt close to being over so I am hoping the tip made its way to her as she didnt pick our bill off the table some manager woman did.
The food was delicious, the brisket fell apart and melted in your mouth. Whatever the marinade was on the chicken tasted like heaven. Oh and it was my first time having cornbread which was delicious with the chilli apple butter stuff.
Everything was good my husband loves bbq so we decided to try it for his 55 birthday dinner
We wemt for an early dinner. We were able to sit outside so it was very quiet except for the bike lane that was rightby our table. Food was very good. They have a lunch special on the menu that is really perfect for dinner also. Itsa shame you can't order it. The waitier was very attentive. Everything was good.

The meats (moist brisket, spare rib, pulled pork and dark meat chicken) - as always - were delicious. The rest of our dinner wasn't as enjoyable - they were out of one of the draft beers that was first choice and the margarita on the rocks was tasty but "mostly rocks". They were also out of one of the limited choices of sides - the sweet potatoes. We both thought the mac and cheese was dry, overcooked and tasteless. Even drenching it in the tasty baked beans didn't help.
Have eaten here before and always had a wonderful experience. It was a little different this time due to the COVID pandemic in that you get table service instead of going up to the front to make your selections. Our wait person was nice and polite, and took his time on answering questions on our order. However, once the order was placed, we ended up waiting quite awhile to receive our food. We noticed two tables next to us that were seated after we had already placed our order. One was a party of 5 and the other table was a large group of about 10-12. They received their food ahead of us and we noted that their wait person was more present than ours. We felt ignored. We finally got served our food and it was lukewarm. We had our nephew visiting from overseas so we were excited for him to experience Texan BBQ. He enjoyed it not knowing what to expect but my wife and I knew that the food should have been hotter. We placed a second order for the moist brisket and that came out piping hot. We didn't complain anymore to our wait person but we were a bit disappointed by the overall service and quality of food served after talking about how great it was to our nephew beforehand. Can't help but think it may be because we are asians? Hope not. Don't know when we'll return but hope the next experience, if ever, will be a better one. Still would recommend but certain wait staff need coaching in customer service.
Best BBQ in town at good prices.
Historically, Hill Country has been my favorite barbecue place in New York City. The brisket is perfect with a choice of lean or moist, the prime rib has always been great, and there has been a wide selection of sides.
Given that, the pandemic has obviously been hard on Hill Country. We went twice last week and did not leave with a great feeling either time. The main items are more limited and even when they have items scheduled (like the prime rib on Friday which used to be on the menu every night) the item was not actually available. The sides are far more limited with staples like green beans missing. Even the little things like being offered white bread and crackers was missing. Service was good the first night but was definitely lacking the second night (which was bad since you no longer get your food at the counter but it has to be brought to you).
We will definitely go back but it will be a while with the hope that things will return to what they were like pre-pandemic.
Food was great as always. We dined outside which was comfortable. Only not was we ordered 1 fries and 1 cornbread snd was given 2 of each. Food was quick and tasty so all is good:-)

Dined in the evening at an outdoor booth. Our booth was spacious and comfortable for our group of six. We had the platter for 4-6 people which was plenty! Service was excellent! The ribs sausages and sides were the best. The chicken and brisket were a touch dry though. Personally I would like the brisket to be fatty and moist
It was my first experience of BBQ. I really like it. Delicious, comfortable, and reasonable.
Took my boys to have some food from my home, was like we were in Texas and they loved it.

The best BBQ in NYC! It’s a cheap trip to Texas and they are the nicest people. We sat outside and it was lovely. We tell everyone to eat here and it never disappoints, we can’t wait to go back!!!

With the Covid, you can’t help yourself. You have to order and the waiter serves you at the table. That’s not the same atmosphere as usual. Frustrating...

Food was tremendous. I miss the "old" ordering system vs off the menu, but that's understood w/COVID. Person behind the Bar was marginally friendly, but the Hostess and Server were good.

One of our guests has a severe tree nut allergy and the servers were incredibly aware and accommodating. The food was brought to the table so quickly too…and yummy! Highly recommend.

I was told a week ago when I made the reservation and as I walked in the door that we'd be able to hear the band from outside. Untrue. They played inside and not one window or door was open so we could hear them. Very disappointing.

Amazing authentic Texan BBQ & love the space/rustic. Our waitress was very nice as well. The only caveat is that the restaurant appeared to close early on a Sunday night, & so we felt a bit rushed @ the end. Otherwise, all good.
We had never tried Hill Country before but were in the mood for BBQ. We repeated our order several times but it still came out wrong. When the server finally came back, we let her know that one of the items was wrong and also asked for more napkins. Never got the napkins and finally got the correct item after another server checked in with us. Our server never came back. We waited at least 20 minutes and never could get her attention to get our check. We finally had to go get her and then they couldn’t find our check. Everyone was nice but we probably would not go back after this experience. Music was also very loud.
