The brisket was cooked perfectly but had just a little too much pepper. They were out of pulled pork so we got some pork belly which was really good.

We celebrated Thanksgiving at this restaurant and loved it! The service was great, food delicious and it was no wait time since we had made reservations. Definitely recommend it and will go back.

The food was good, but pricey. The atmosphere, for a downtown DC restaurant, is quirky. This is not a true sit-down-and-be-served restaurant...which was a surprise to my party! While a friendly and attentive server will sling your drinks, all food is served cafeteria style. Quirky...

Walked in and were seated quickly as a result of making a reservation earlier in the day. We shared the 3-meat Pitmaster with double serving on the brisket and 1 portion of Kreuz sausage and sides of baked beans and coleslaw. The food was great. Just like back home in Texas. Then we went downstairs to the bar and listened to music by a band from Charlottesville. Fun evening. We will definitely be back.

Come for the barbecue, period. The cue is all there is, brisket, ribs, burnt ends and more. Sides are alright. Drinks can be hit or miss, but the meat is the star. Don't front, you come here to get Texas barbecue, so get it, eat it and LIVE! Minor issue with our pitcher of sangria, just get a beer and be done with it. Ambience and noise are exactly what you expect at a honky-tonk. Eat barbecue and live, LIVE I say!

Great time for a birthday group of 10 people, but I think our waitress was a bit overwhelmed. She forgot more than a few things and then after a point, I had to seek her out to get water refills, additional orders and to go bags. I will always come back as I love this place and the food they serve.

As a Texan, I'm very picky about my BBQ. This may be the only authentic Texas BBQ brisket in the D.C. Metro Area! And th sides are real, too!

Ate at Hill Country for a business lunch and was blown away by the flavors, the smells, and the friendly service. The location was easy to get to and get out of for walking but might be a challenge for driving. The food was however worth the drive so enjoy!

The food was really good and we had fun going to the music venue that was downstairs after our meal; however, it was just too loud to be enjoyable and the service wasn't great. I guess all servers have their bad nights, but upon arrival our server forgot our request for a fourth chair (not kidding), initially our drink order, and yes, even our silverware. Even that could be forgiven, all servers have their bad nights, but the noise will prevent me from visiting in the future.

Liked the generous portions--enough to take home! Service was just ok. Waitress promised certain things but didn't deliver. She was busy, I'll admit, but that's not a good excuse.

The barbecue is excellent! The meats are prepared to perfection. I really like that you can see exactly what you're getting to eat when it's prepared for you.

Couldn't get in when we walked up on Sat evening so went for lunch next day. Nice place inside . Service prompt. Food very tasty though ribs were expensive . Brisket was great . Disappointed that burnt end 'sold out' so early...which seemed to suggest none cooked that day. 4 ribs and some brisket and cornbread and 1 drink $52. Skip the ribs .

The food was OK - our portions ,especially the Prime Rib was very fatty.If you are ordering
the meat by the pound - the price is on the high side - I would expect it to be trimmed better,but
of the 3 meats we ordered,at least 1/3 was fat....so the price per pound is much higher.

As a side note : I was disappointed with the prime rib and that's why I came here. If I come again
I would not order the prime rib....they were also out of the short ribs ( the second reason why I
went there.

Barbecue was awesome!! We had lots of Texans with us (so that is saying something), but the pork belly was amazing! And the moist brisket was out of this world. Very impressive for DC.

We were stunned at how unimpressive the food was here after Tim Carman's #1 ranking. The kitchen was out of pulled pork and pork loin by 7:30pm on a Friday. The sausage link my friend ordered had no flavor whatsoever. One of my ribs was tasty, but the other was all fat and bone. The beef was okay, but it was dry and a bit tough, and the flavor was bland. I'm sorry to say I wasn't impressed by either sauce. The regular sauce tasted like slightly enhanced ketchup. The hot sauce had no nuance. It tasted like watered down Tabasco. The side dishes (sweet potatoes and corn pudding) were the highlights of my meal, and the collard greens were mediocre at best.

We ordered the Pit Master special. It was plenty of food for two people and all of the meats were very good, with the exception of the brisket, which was the main dish I was so looking forward to. Biggest complaint: The person who took our order at the counter did not ask if we wanted it moist or dry and what we got was moist but very fatty. Other BBQ joints ask if you want it moist or dry and that would have been helpful, as we forgot to ask. The pinto beans were just fair but the coleslaw and Longhorn mac and cheese were yummy. It was pretty noisy and hard to have conversation. And, our drink (soda and juice) prices were higher than what was shown on your online menu. Better correct those! Overall, the table service was acceptable and these were good eats but not if you want to talk while you eat. The free music was great but really loud!

The meat was delicious - especially the brisket - and the serving sizes were just right. The service, both at the table and at the food stations, was great - everyone was friendly and very helpful to this first-timer. The downstairs venue for live music is a great idea - and the band, the Woodshedders, was quite good. The acoustics were a little off - it was hard to hear the vocals. I'm looking forward to any acoustic bands you might feature - it might be easier to hear them...
