They have changed their pricing structure and it is now too expensive for my taste.
We went to celebrate our anniversary and had a wonderful experience. We actually had our rehearsal dinner there so we have gone back each anniversary to celebrate. The staff is so welcoming and go out of their way to provide a great experience. Our server, Phil, was extremely nice and genuinely happy that we came to Hill Country to celebrate our anniversary. And if you just want to know about the food, the BBQ here is top notch. My favorites are the pork spare ribs and the moist brisket.
Enjoyed a great meal and fantastic service! I had the prime rib while my friend had the brisket. Both were tender and tasty. Great selection of sides that were also very good. We didn't have enough room for dessert unfortunately! The noise level was a little loud but that is to be expected given the space. Definitely will revisit!

The smoked meats are very good and that is what you come for. The sides varied in quality and taste, but the portions are small for the price. The "cowboy brownie" was not a "brownie" at all. Very hard and sweet. We got it a la mode (with chocolate because they were out of vanilla, just like they were out of their very special PB&J cupcake), and it was impossible to eat that way because you could not cut through the brownie. On whole, not a place I would go out of my way to go to unless really dying for those smoked meats.
Love their "moist" brisket! Their sides are also very good, although on this particular visit, they did not have some of our favorites, like the bourbon sweet potato mash. Since you have to stand in a cafeteria-style line to get your food, it's best to try to get there when the crowd is smaller. We went at noon and were ahead of the large crowd that soon showed up. Our server was appropriately attentive and friendly with our beverages.
High quality and authentic Texas BBQ. Great ambience - rustic, warm, friendly and just loud enough to feel like you're part of the action but can still hear your companions.
Out of spare ribs on early Saturday evening doesn't make sense, and the server giving a double order of brisket without first asking if we wouldn't mind taking brisket in place of spare ribs ruined the experience.
Brisket was good but I went there to try the ribs. I lost appetite and didn't get to eat what I had intended on having. I don't think I'll go back to a restaurant that is not reliable.
Great Food. Great Service. Great Atmosphere. Look - it is a Bar-B-Q joint. Do not expect fancy plates and fine linen and champagne. Go there for meat, meat, and more meat - and a beer or two.
We had a great time at Hill Country - very relaxed atmosphere, order in line and carry your food to your table. Table service for alcohol. Everything we had was delish - fried chicken, brisket, mac 'n cheese, cucumber salad, pickles, corn muffins & banana pudding!
Went there for a late lunch after viewing the cherry blossoms. First time visit. We made reservations for 3:00pm and although the place was busy, we were seated promptly. We didn't really know what to expect in regard to atmosphere, but it was a large open room that was quite loud. Ordering is strange - we were given a small paper menu and water to drink. We were instructed to go through the line (cafeteria style) to get our food and our "ordering cards" would be marked appropriately. The waitress would bring us drinks other than water if we wanted them, as well as collect our cards at end of the meal to total our bill.
The good: The food. Meat was perfectly done and great tasting, sides also tasted great. (Our party had collards, baked beans, cornbread, coleslaw)
Our waitress explained things well and was upbeat and pleasant.
The bad: Loud atmosphere. Probably fine if you know that's what you're getting, but not really what we expected.
Value - meat is expensive and sides are small for the price.
Service - although our waitress was pleasant and kind, we didn't see her much. My husband and I wanted beer, but were almost done with our meal by the time she came to see if we needed anything else. In her defense, it was BUSY that day. We also had to ask for silverware as there was none on our table.
Ordering: strange combination or cafeteria style and table service. Again, probably fine if you're expecting it, but different for first timers.
We don't go to DC much, but even if we did, I doubt we would return. Although the food was good, the prices are too high for us! :)
The moist brisket was awesome and the hot links were really good too.
Hostess and servers (in the food serving area) were downright unfriendly and rude. Very unpleasant experience.
We went here just prior to our show at the theatre and had a great time, got a ton of excellent BBQ!
Liked the marketplace for ordering. Got the pit master - lots of food. Fun atmosphere. Only negative was pulled pork was dry.

This place has really good BBQ and I'm picky about my BBQ. The brisket is outstanding and a must get. The ribs, chicken, and sausage were all very good as well. They do it right with a giant smoker that fills the room with great BBQ aromas. The cornbread, mac and cheese, and baked bean sides were what you'd expect. The service leaves a little to be desired as we had empty beers a couple of times, but it's not a place that you really need great service. They had a large projection screen down for the NCAA games and it was a great place to watch the games and eat some decent food that isn't bar food.
The ribs... oh my god. So. Good. The sides are also really good. Go hungry!
Hill Country rarely disappoints and this time was no different. I was sharing dinner with a friend while we caught up and all the food and service was excellent. I have been to Hill Country many times and have never had an issue with the meat not being fully-cooked; however, the sausage we ordered was a little bit off so we spoke to our waiter and he apologized and offered to bring us a new meat option. The Texas Tea was fantastic and I always recommend it if you are from Texas or the south and feeling homesick.
Food doesn't seem as tasty as it used to. Some of the sides are lackluster and the side portions are a tablespoon. Didn't find myself saying "This is really good" during the meal. Folks working in there are very friendly and warm though.
Dinner before Vanessa Collier music downstairs. As a self-proclaimed barbecue expert, I can rate HC barbecue beef as the most tender, tasty, slowly-cooked in the USA....and Texas. The wait staff is patient with newcomers and friendly to all. While eating cornbread and sipping cold beer, we began making a list of friends that we want to take to HC Live. It’s noisy and fun!

I looked over the menu on Sunday afternoon, and decided I'd order turkey and sausage from their meat selections. I went to the counter to place the order. Sausage link? They were out. Turkey? Also out. Swapped out for brisket and pulled pork that I really didn't want. For sides, I ordered the cool cucumber salad. The attendant handed me coleslaw.
Great BBQ in the heart of the city. Fast service and full bar selection. Live music venue downstairs. Really neat place with excellent food.
This is my second visit and it did not disappoint. It is a feel good place with very tasty food. If you a quiet place to go do not go here. But to have fun and have a great meal with friends, this is an excellent place.
I'm a former Texan and I've been to Hill Country many times. (I didn't go for a show this time, but its music venue is one of my favorites in town.)
-The quality of the brisket has improved
-The price is a little high (and BBQ places shouldn't charge for jalapenos/pickles/onions), and the sides a little pricey/small; though I do like the ability to get meat a la carte/by weight.
-I think the ticket/ordering process is confusing for customers
-Hill Country should do a better job conveying to customers what the strengths of Central Texas barbecue -- brisket, sausage -- are. Customers unfamiliar with Texas barbecue don't know what to get (the people behind me were totally confused and ordering pork loin, pulled pork, and pork ribs). It's great they offer a variety of meats, but give customers some guidance.
-If someone orders a "Shiner," they mean the bock unless otherwise specified.
Overall, Hill Country has a fun vibe and a lot of authentic Lockhart, Texas touches. The quality of Texas barbecue is a good as any you'll find up this way.

We made the mistake of going on the same night as a Caps game. It was crowded and they were out of bar items, some meat selections, sides and desserts. We were there at 6:30pm, so it should not have been as poorly stocked as it was. We were 3/4 of the way done with our food and still didn't get our drinks. We had to speak to a manager who was very apologetic and comp'd us more than fairly. Between the service and the "sold out" menu items, we may not be returning. The food we did get to eat was delicious.
A really lively place on a Friday night! Good food, drinks and service.
