About Hill Country Barbecue Market - DC

Named "Best Barbecue in NY" by both New York Magazine and Time Out New York, "Top 10 Barbecue in the U.S." by the Wall Street Journal and "Best New Restaurants of the Year" by New York Magazine, Hill Country takes its "cue" from legendary Texas barbecue joint Kreuz Market and its distinctive dry-rub style. Hill Country's brisket, sausage, ribs and other meats are smoked low and slow over Texas post oak. The barbecue is served in butcher paper, counter-style by the pound, with traditional trimmings.

HCBBQ offers a great AYCE option on Mondays for $20 per person & everyone at table must do the deal. I can easily load up on the tasty sides: endless Mac & Cheese, Texas Chili, Cucumber Salad, Corn Pudding, German Potato Salad, Deviled Eggs - just to name my favorites. Everything comes with a great serving of bbq'd chicken, brisket, pork & beef ribs. Really it's a great deal if you just need that comfort food! My only complaint is that the BBQ has come out either cooler than room temperature or just barely warm. And I hate not having hot food! Service is awesome if you get there right server.

Some of the best BBQ I've had in DC and also the most expensive. It's made a little more reasonable by getting all you can eat since you don't have to get sides a la carte, but at $20/pp still pretty pricey. Probably best way to eat here is with a large group so you can order large sides and share them. Otherwise, you can't get enough variety to make the meal interesting.

Great brisket. Good Mac and Cheese. They only have Shiner on tap. Pretty pricey for cue. I would go back though.

BBQ is delicious. Expensive evening. Roll of oapet towels and no plates. It is similar to a MD crab house. Noisy lots of 29-30 y.o. drinking beer.

I lived in Austin for a while and made it my mission to try just about every BBQ place in Central Texas before I moved back here. The fatty brisket at Hill Country is by far the best I've had outside of Texas.

The ticketing system for buying your food is unnecessarily quirky and confusing, and I wouldn't waste your time on the chicken or ribs, but the brisket, sausage (both kinds) and most of the sides (collards especially) make this one of my favorite spots.

Food was amazing, went on a Monday and they have an all your can eat menu for $20/person! It was our first time going to the restaurant so the all you can eat was a great way for us to try all of their food! It is so much food and everything was delicious, our server was really outgoing and made the experience a lot of fun! My husband and I can not wait to go back again!

You wouldn't come here for a quiet date night, but the food was really phenomenal. I'm not even sure I was totally in the mood for BBQ, but I was when I left. It's really, REALLY good BBQ, but the variety and quality of the sides was the best part. I can't wait to go back to try more stuff, they have a huge selection of food. Service was great too.

The food at Hill Country is phenomenal. The a la carte style menu is perfect for groups because everyone gets their own check. We went for dinner with a group of 7 and have a great table downstairs where all of us could sit, talk, and enjoy our meals, and then had a prime seat for live music. The performance set up was fantastic, very intimate with an upbeat vibe. My only complaint was the service. We saw our waitress, at most, twice the entire night, after waiting for 45 minutes, we finally canceled our last pitcher of beer and just asked for the check. She was slow and unavailable, and blamed the poor service on the bartenders, which we could see from our table was not the case. Thank goodness we only had to order drinks from her!

I ate there based on a discount voucher. That voucher made the experience worthwhile. Otherwise, while the food is good, it is very costly. On top of that, the method of service (waiter for drinks and dessert only - you have to proceed through lines to get main and sides) does not engender an interest in my tipping large.

The food is worth it if you like Texas style BBQ - though a bit salty due to the rubs used. The beer comes in small mason jar style glasses that are certainly not a pint. The rest is served in/on paper. Good sides.

Overall a good experience for good food, but costly for what you get.

This was our first time at Hill Country and our waitress made it easy. She explained the process of ordering thoroughly and we were off! The guys at the meat station were very helpful and the hardest part was picking our side dishes. Desserts of banana pudding & the sweet potato were divine. Brisket was delicious and Shiner Bock beer was very smooth. Thanks to our friendly and informative waitress, we will be back.

Did the restaurant week special because we missed a groupon style deal. Got the Pitmaster combo. Very good. Wings were decent too but different than your usual sports bar wing. I would probably go back, although preferably with a special since it is downtown DC prices

Very very good barbeque served in a rustic and unique setting that allows the diner to test a variety of meats. The Shoulder was highly recommended and it was very good, but our serving also contained an end piece that was all gristle. All in all an excellent pre-game place for dinner.

This was my 2nd time here and if it weren't for the Travelzoo deal available, I probably wouldn't have gone back. However, to my surprise, I did have a delicious experience and am looking forward to a 3rd visit. Not impressed with the beef ribs but the moist brisket was heavenly and the mac and cheese (not your typical macaroni noodle) and chili were just the perfect sides that day. My only two gripes are the upgrade charge to change from lean brisket to moist brisket - $4.00, and well usually fresh pickles and onions would have been nice to have without having to pay for them. You pay for everything. I'm surprised the napkins are free! The chocolate mousse dessert was amazing!

I have visited Hill Country Several times since it opened and have never been disappointed. Even when their food isn't up to their standard it still beats any other BBQ place in town. I've never regretted eating there, and have recommended it to all of friends. If you like a lively low pressure environment with excellent meals and sides go to Hill country. Their Margaritas and Shiner beers are wonderful and the staff is bright and helpful.

Service at Hill Country seems to get a little worse every time I go. The first few times I went, you had to make reservations to avoid waiting an hour for a table. Now you can walk right in... I guess others are noticing the decline in service (and the novelty has worn off). It's still a reliable place to hit before a hockey game...

Nice to be able to get a reservation for 4 Inauguration Weekend! Great, tender, tasty BBQ (it's a Texas place, so go for the beef). Had the moist brisket and a short rib and was plenty of food and was just delicious. Great sides too -- excellent collard greens.

Great food and great music. We sat right next to the stage and it wasnt too loud for us. Bbq is fantastic. They were out of the chops but we had the chicken, the brisket, and collards, mac n cheese, coleslaw and the cornbread. Like heaven. We will go back as soon as possible. What a terrific venue!!

The only reason that the food did not get an OUTSTANDING is because the sides are subpar. I would suggest that the owners invest in a chef/cook to show their staff how to cook/season their sides and desserts for about 2 months. Trust me, it would be worth every penny!
Hill Country sales will go through the rough which will assist in monopolizing the market in the Penn Quarter area.

GOOD LUCK!

... including the bill(!) Props for having Blue Bell ice cream and Big Red. But while a $50 tab for 2 at a nice restaurant is fine - it is WAY too much for Hill Country. (The waitstaff appeared at the beginning and end of dinner but completely disappeared during dinner, and the portions of food are pretty small for the price tag). With the cafateria-style food line and the cash register by the front door, Hill Country could cut costs by eliminating waitstaff.

I have to give the food a poor rating. I had the "moist" beef and it was about 80% fat. My wife had the pork ribs and there was no real tast to them. The "smoked" flavor was there, but no other flavor. The manner in which they serve the food is less than to be desired as well. The sides were very good, but that is the only positive I have about the food.

Generally speaking the food that I have had while dining at Hill Country has been good, there is one caveat to this statement, they actually need to have the food in order for it to be good. When I went last, there were out of chicken, ribs (both pork and beef) and several over things. There ended up being very little to choose from, unless you wanted sausage. Very disappointing.
