Whenever we visit DC, this is on our list of stops!
We made the mistake of going on the same night as a Caps game. It was crowded and they were out of bar items, some meat selections, sides and desserts. We were there at 6:30pm, so it should not have been as poorly stocked as it was. We were 3/4 of the way done with our food and still didn't get our drinks. We had to speak to a manager who was very apologetic and comp'd us more than fairly. Between the service and the "sold out" menu items, we may not be returning. The food we did get to eat was delicious.

Texas dry rub smoked BBQ. Perfect if this is what you are looking for. This was our fourth visit. We will return.
Fantastic BBQ in the DC area. Best thing, in my opinion, is the smoked prime rib. Amazing!
Have eaten here many times for a variety of reasons. ALWAYS happy with the food and the service. Will return and recommend highly to others.

Went there before a Caps game with the guys. Good place for BBQ and everything we ordered was very tasty and extremely good. For 5 men, 3 PitMasters were very filling and did the trick.
We thought the BBQ was good but that it did not live up to its billing as the best in town. The brisket was the best. The chicken was dry and the ribs a little tough. However, the service was friendly and helpful without being overbearing. All in all pleasant but nothing to go out of one's way for.

Barbecue is *hard* - there's a lot of bad stuff out there, and some of the best is in hole-in-the-wall dives. Hill Country is a great find (especially in D.C.): terrific Texas-style dry rub (mmmm - brisket! sausage) - in a convenient location.
It's not fancy here - the food is served as you'd find it in a Texas country market, on trays over a walk-up counter. But it's spacious, with great table service for drinks. And the food is just terrific.
2nd time here and the moist brisket and pulled pork were superb. Sides are good but not amazing. We will be back!
BBQ was fantastic. It's a "stand in line" format, but works well....The servers at various stations were pleasant....I will be back!!!
They didn’t have any spare ribs available when we got there. We had to wait 20-25 minutes for them. After we finally got them, they were nothing special without the barbecue sauce. The sauce was tasty. The macaroni and cheese was good. The collard greens were average. The cornbread was good. Sangria was watered down, but that could have been because it sat on my table forever while I waited in line for my spare ribs. Overall, I don’t get they hype about this place.

The meats were not flavorful, not seasoned well and somewhat chewy. Not what I would call real Texas barbecue
Everything was fine. But it was freezing in the restaurant.
The brisket was cooked perfectly but had just a little too much pepper. They were out of pulled pork so we got some pork belly which was really good.
This place is always good! I usually go hear before going to CAPS games. Also, I like bringing friends and family here when they come visit DC. I love Hill Country!
Good food but sides (greens, cole slaw) used to be better. Mix of self-service and wait staff. Good place before or after a game. Very causal
As a displaced Texan, this was like a homecoming. The smoke in the meats, the side dishes, the drink choices...if it were closer, I’d be there every day. Don’t come if you’re expecting staff to wait on you hand and foot—that’s not what this is about. Think of them as your guides on a barbecue journey, encouraging you to seek out adventures. Between everyone at our table, I think every meat they serve was present. My favorite was the smoked turkey, which hit that perfect balance between smoky flavor and tender texture, which is difficult for many places. Highly recommend when you’re in the area.
We celebrated Thanksgiving at this restaurant and loved it! The service was great, food delicious and it was no wait time since we had made reservations. Definitely recommend it and will go back.

I took my family here for a very tasty Thanksgiving meal. A carnivore, my mom loved the brisket and turkey! This is a regular spot for us:)
