Love that chicken!
Normally (pre-pandemic), Hill Country was one of my favorite restaurants with amazing food and great energy. It just didn't stack up last night. BBQ was not generous, food was room temp--not hot, staff all seemed annoyed to be there--not a smile in the place. With very few patrons, there was no energy; rather it just felt sad. I don't know if I'd go back and certainly wouldn't make a special trip downtown for Hill Country if this is the new norm.
It’s all self serve now. You get your own drinks, limited menu from before. You don’t get a food card as before and pay after you stand in line, can’t go back and only pay once. No wait staff.

Food is excellent! Especially the brisket and pulled pork. The sides were ok, but not great. This is a counter service restaurant so once we sat down we were pretty well ignored. That means I had to ask for water from 3 different people and we had to keep our cafeteria trays on the table throughout the meal. If I were to go back, I’d probably just order meat to go.
This restaurant has been rated the best barbecue in DC and I won't argue with that. The meats are prepared exactly like they're supposed to be, the short rib being the best I've had. Sides are also delicious. I'll go back whenever we're in the area.
I recommend this restaurant for the southern style barbecue…delicious for the price point…I am planning to go back for lunch soon!
We were VERY disappointed by a misleading menu item: German potato salad was listed under hot side dishes, but what we got was a cold, overly mayonnaised, standard American potato salad. And there was no waiter to complain to, since you have to order and pay at the counter and then pick up your food. The pulled pork and the baked beans were good, but didn’t make up for the potato salad.
Due to the ongoing pandemic, Hill Country was virtually empty -- a condition I'd never seen there before. The food, as always, was excellent (I had the brisket sandwich and cucumber-salad side), and the covid accommodations seemed wholly appropriate. It was good to get back to this wonderful BBQ after 18 months!
Great food and awesome portions. Everyone left happy and with full bellies.
I loved this place. They have a meat market in the back that you can order what you want or sit near the bar and be served. I’m from the Texas Hill Country and think the quality was right up there with other bbq that I’ve had back home. Highly recommend.
Always enjoy Hill Country Barbecue. They bring a taste of Texas to the Nation's Capital. The varieties of barbecue are outstanding and the sides taste like home. Hill Country also offer Shiners Boc and Big Red - Texas favorites. I wish they still had Blue Bell ice cream.
First time visit - The food was EXCEPTIONAL - very flavorful and fresh. Service was good and quick. Overall restaurant was quiet and we were able to enjoy dinner as well as have good conversation. Would definitely recommend to others! :)

My parents were visiting from out of town. We had a booking for 2:00. Arrived early about 1:50. By the time we sat down, ordered, and had the food, it was 2:15. A server came over and said, “I am not rushing you, but you have to leave by 2:30. We are closing for a private event.” They pushed us out. Rude and unreasonable. If you are closing at 2:30, don’t take reservations for 2:00.
Great Texas ambiance and excellent brisket! For being in the middle of downtown DC, a great option for Texas style brisket and pulled pork!
Recommend the collard greens and chipotle deviled eggs!

The food was great, but the whole ordering process was a bit chaotic. Options to order were different from menus posted on their site/table menu (QR code) etc. We went before a show which was super convenient.

We love Hill Country. Food is always great. Pricy, but can't beat the food.
We have wanted to visit HILL Country before a Caps game for awhile but it was always so crowded. Not now! The process of placing your order cafeteria style works well and is quick. The food was all delicious...pulled pork, briskets, sweet potatoes mash, Mac and cheese, baked beans; it was all great! The COVID tax was an unwelcome surprise.

Server messed up the drink order and also didn't provide meal cards for ordering so the bbq staff were annoyed. The drinks were poorly made. Overall disappointing after a lot of hype.
Our first time at Hill Country was thoroughly enjoyed by our whole group. After our food server explained how it all worked. we ate ourselves into oblivion. Thank you!
We were there. We got an email saying we didn’t show up. But we were there. We got a ton of food; smoked turkey, jalapeño cheese sausage, about five sides. It was great night

This place is great. Counter order as much or little meats you want. Gives you a great chance to try different things and all were so good. Loved the lean brisket especially. Nice staff too.
I would recommend for the live music downstairs. The BBQ - I have had better. I had the pulled pork sandwich and it wasn't bad. I would eat the sandwich again but I did not care for the baked beans.
