The food was disappointing. The selection of sides was minimalist... with an uninspired dessert menu. As a barbecue afficianado, I think the place is quite overrated. Doubt we’ll go there again.

Hill Country BBQ Market is a good spot if you know what you're getting yourself into. The food is good, but the ordering process is a bit weird if you're not from the south I'm assuming. They carve the meat and wrap it in paper, then give you sides on the other side, then you go back to the table. The server is who takes your drink order and you pay after you finish eating. The server was nice, but the seating was not that comfortable. If you like bbq food, you'll like this place, but I think i'd prefer hill country chicken.

Got together with old friends from out of town. They really enjoyed the food and the service was excellent. Best to try a bit of everything if you aren't familiar with the various cuts. Great time overall.

After doing some extensive research for local BBQ joints in Brooklyn, I came across several different options. I was looking for a different BBQ restaurant to celebrate my birthday. The Food was very tasty and had a good smoke. After you sit down and order your drinks, you head over to the "grammar school type" lunch line. There you are greeted by some awesome guys waiting to slab as much meat as you can eat on your lunch tray. The brown meat paper under neath the meat just adds to the atmosphere. Even the water was served in mason jars adding a nice little country touch. The BBQ sauce is readily available as it sits in a cool wooden box on your table. The server even recommended the different types of sauces from hot to not. Wood Tables and BBQ sauce all over your face, how can you go wrong! Not the restaurants fault, but if you are coming from out of borough like we did, parking is not close nor cheap. Be ready to spend a few extra bucks on parking. I would highly suggest to go early and leave some time to walk the Brooklyn Bridge (not that far away). It looked like Public Transportation was available, however that was not an option for us. We would come back!

Finding a good BBQ spot in NY is not always easy. And I'm in no way a BBQ expert. But I really liked Hill Country Barbecue Market. The meat was tender and smokey. The sides also tasted great. I chose a mixed menu and got a lot of value (meat wise) for my money. They have tasty local beer and even live music. Overall a really enjoyable experience.

The food was ok. Nothing special. Their service model was a bit strange. You go to the counter to order and pick up your food. The wait staff would then take your beverage order. The service model was basically self service.

Surprised to arrive and find out that the restaurant was closed for a private event, even though I was able to make an OpenTable reservation. Very inconvenient as my guest and I made the trek to visit this particular Hill Country location as we prefer it over the Flatiron one! While waiting for my friend to arrive, I saw many other customers come to the restaurant only to learn that it was closed.

Nice ambience, moderate noise level. Wait staffs and food servers seemed nice. Amongst 3 other adults at my table, I had 2 meats option with 2 sides. My meats were Beef Brisket and Pulled pork. My sides were mashed sweet potatoes and mac n cheese! Everything thing I had was exceptional! I especially love the brisket! I'll recommend that to anyone! The sweet potatoes and mac n cheese sides were perfect! Very tasty and leaves you wanting more!

Food portions are just right. Ribs were moist & tasty. Service in the main dining room needs improvement. I would go back, and would tell a friend.

I absolutely loved the food. I love the service, and i love how fast you get served. Hands down best barbeque spot ive ever had so much so that first night we went i was on a date with my husband and we just had to come back the very next night and bring our family. The price is reasonable and i love the touch of the live band. The only side i wasnt crazy about was the sweet potato, but thats just my opinion. You can tell that alot of effort and time is put in to make the food. I recommend this place 100%

The only thing that i would say as far as the ambience is that the bathroom although is beautiful has been poorly taken care of both times ive gone. Toilet paper all over the floor, no soap refilled. Thats something the staff should definetly work on.

I don't think the food was to die for. I would say average. The burnt tips were great. And the sides were great. What I'm going to complain about is the service. Upon entry, no one was there to seat us, so I assumed you walked in and seat yourself. Once we got to a table and wanted a fork, the gentleman at the door said we were to wait to be seated. And he wasn't really nice about it. Growing up in Brooklyn and just seating yourself, would have been fine. But I don't tolerate implications of me being dumb. Also, when we were trying to leave, the server looked at us and walked away. And the hostess said we had to wait for her to return. This sort of confusion isn't something I want to deal with.

This place serves good meat (mainly beef and pork) with passable sides. But the "system" is primitive. You go up to the meat counter to get your meat, which is wrapped in paper and put on your tray. That's it--no plates. So you open your paper on the tray and eat off of it. Needless to say, it gets pretty messy. As for napkins, they give you a roll of paper towels.

So clearly not for everyone. Staff is very friendly, but unless you're willing to accept the primitive serving method, this place is not for you.

Accidentally booked in Brooklyn instead of Manhattan. Both locations were kind and helped work it out for us. BBQ was as good as we've had. Had brisket, burnt tips, sausage, each was so good we didn't need any sauce. Also had cole slaw, collared greens, cornbread. They had some strange shortages of beverages, but it wasn't a big problem. Great kick off to seeing Dan Baird and Homemade Sin show. Would love to come back soon.

Place is pretty big, for our 1st time there, we asked how things worked and the staff was pretty clear. The food was exceptional. We went on an empty stomach and tried a pitmaster. Everything tasted delicious. Cant wait to go again for some more great comfort food.

First time dining at an American, Texan BBQ market and it was definitely worth while. My favourite was the brisket and chicken cooked "low and slow". The flavours and textures were out of this world ! Would definitely recommend to friends (if I haven't already). Just wished this franchise would branch out to Australia...
Thanks for a great dining experience, can't wait to come back to this exceptional BBQ restaurant.

This as to be one of the most over rated places in NYC. As far as Texas BBQ, no one from Texas would eat in this place. Way over price even for NYC. $50 for ribs.

Among the best pulled pork I've ever had, not a drop of sauce needed. Ribs, brisket and sides were also excellent. I want to go back and try everything else they serve. Great prices for NYC area. The band that night was fantastic. Parking for the Brooklyn location is awful and I cannot say another negative thing about the place.

Got 2 pit masters for 2 couples and a few beers on a Monday night, okay food and service. But the hostess tonight had the worse attitude, overlooked us in the beginning when we were standing right in front of her. Gave my friends a "stank eye" as they came into the restaurant and never greeted anyone coming and going.

been a few times, i thought it was OK at first, but now I am down on it based on value. I think it is too pricy over all considering it is set up basically cafeteria style, you order from a counter, walk away with a cafeteria tray with meat wrapped in paper, sides served in cardboard cups, and yet 10 oz of meat will cost $23. The food is decent, but the price point is too high for the "cafeteria" format.

Met former co-worker and his spouse for lunch. Was easy to get to from their hotel. Ordering style is similar to southern BBQ spots - you order your meat(s) and then select your sides. We tasted different items - all BBQ selections were good. Liked the corn pudding and the sweet potato. Staff was very nice.

Ate here for Thanksgiving 2016. Food and selection were excellent. All the great sides you expect at Thanksgiving. You could select turkey, ribs, brisket or chicken. Turkey was tender and tasty. Desert was ok. Nothing special. Staff were extremely friendly even though it was busy. The only downside was the price. $49 per person which didn't include any drinks is ridiculous. We spent over $130 for the two of us for Thanksgiving...including the tip. It wasn't worth it for that price. It's a shame they increase the price for the holiday. Overall I would eat here again....just not for a holiday.
