We recently dined at Heritage in Long Beach, opting for the Spring tasting menu with wine pairing. While the experience had a number of highlights, a few executional elements kept it from being truly exceptional.
The decor was warm, inviting, and cozy, creating an intimate setting. However, the acoustics were noticeably poor conversation from surrounding tables bounced through the room rather than being absorbed, which disrupted the overall ambiance.
Unfortunately, the flow of service lacked cohesion. There was a noticeable disconnect in the pacing between courses, and transitions didn’t feel seamless. The absence of an aperitif and bread service at the start was also surprising for a tasting menu of this caliber.
The meal opened with four small amuse-style snacks fresh, light, and a pleasant start.
•Course 5, a beet and yogurt dish, stood out for its well-balanced flavors.
•Course 6, scallops with trout roe, was elevated by a delicious dashi sauce.
•Course 7, sweetbreads with bisque, was a creative and well-executed combination.
•Course 8, featuring kingfish and mussels, was good but lacked a strong flavor profile.
•Course 9, the 32-day dry-aged rib chop, was a standout thanks to its rich, flavorful jus.
•Course 10, the caviar dish, was less successful the creamy ice cream component overpowered the caviar, dulling its natural richness.
•Course 11, a mille-feuille, was arguably the best pairing with the wine and was beautifully done.
•Course 12, a fruit pâte, closed the meal on an unspectacular but fine note.
The wine pairing was a strong point, especially the thoughtful local selections. While the pairing started later than expected (after the initial snacks), the wines complemented most dishes well. Wine glasses were clean, though not polished to fine-dining standards, small details that matter at this level.
Overall Impression
Heritage offers beautifully plated dishes with flashes of brilliance, especially in its use of local ingredients and wine.
