Headwaters is located in the historic Heathman Hotel in Downtown Portland. In fall of 2016 after a dramatic renovation, chef/owner Vitaly Paley, his longtime wife/partner Kimberly Paley opened the reimagined dining room at the Heathman Hotel, their fourth Portland restaurant. The property, which possesses a storied culinary history, was constructed in the early Twentieth Century and is a member of the National Historic Register. Chef Vitaly Paley will be the third James Beard Best Chef Northwest winner to take the helm of the Portland institution, a long running dining destination in the Pacific Northwest. So named for “the source”, Headwaters will showcase local ingredients from Oregon’s diverse bounty, from farm to sea. The soulful menu is an expression and collaboration between Vitaly Paley and Executive Chef Michael Campbell with Pacific Northwest flavors flowing throughout.

We came to celebrate graduation. Service was great. Food was delicious. Our server was attentive, friendly, knowledgeable and accommodating. We really enjoyed the seafood tower!

Overpriced, crowded and got sat next to kitchen. Seemed like the potatoes were overshadowing the entree. It was OK and the service was the most impressive of the breakfast.

Great location. Nice ambiance. Spacing of the tables was good, avoiding the packed in feeling.
The food has always been excellent, with a very good menu that I think addresses most tastes.
Excellent choice for a pre-Sschnitzer meal.

We were headed to a concert at the Schnitzer next door, so this seemed like a very convenient place to stop and have a nice meal. The room is casual, not crowded, and the noise level was relatively low. Food was very good and the service was excellent - prompt, friendly, helpful, patient, and knowledgeable. My wife thought the bowl and accompaniments to the scallops almost interfered with the main attraction. I had a crimson snapper that was almost overdone, but it was enjoyable anyway. We will be back.

It was a quiet Friday night. We were pleasantly surprised by the variety of dishes, especially many options as gluten-free. So happy to see GF clam chowder! We will be back.

Although the salad was excellent and the halibut was very good, the small portion of halibut was overpriced. Our server was very attentive to our needs.

Great pre-show meal... Rotisserie Prime Rib is amazing, knowledgeable staff made great whiskey recomdations and check back frequently... highly recommend

Food was good, octopus app, Brussels sprouts, tuna, scallops. Fairly expensive and feels like they cater to traveling business people. Pretty restaurant, nice ambiance. Don’t understand the 3% wellness & livable wage tax on top of high menu prices.

While the staff was nice, it was slow. The food was really good; however, the cost was extremely expensive. Not really worth a return any time soon.

Ventilation system is not working properly. We let with our eyes burning and smelling of food. Mushroom melange soggy and mushy; not as written as menu. Potatoes with octopus greasy and over-salted. Rock fish in bouillabaisse "sauce" skimpy for price and drizzled with an inappropriate sauce. The smell of the dining space as a result of the ventilation made it hard to enjoy the environment.

Our meal was precisely prepared, a painting on the plate, and luxurious in its flavors. Bravo! One of the best restaurant meals we have had in recent times.

The food was incredible, we had small plates like crispy Brussels sprouts, clam chowder, crab cake, cauliflower gratin, and one order of scallops. The chef brought us a plate of lobster fettuccini free of charge. Our waitperson was great too. On the expensive side, but worth it1

It was a busy night but we were there early. Our waitress was not super attentive as she could have been. We are glad we only got a salad and some fish and chips. The salad was okay but the fish was disappointing. The wine was actually quite expensive for a house wine. We think they take advantage of their location close to the Schnitz for pricing. We will not be returning when we come downtown again. Sorry! Oh, and by the way, when they bring you your main course, they should not ask you to hold your silverware while they exchange the plates - not very upscale to match their upscale prices.

We've been for brunch a few times. The smoked fish platter is awesome--really like that they have smoked sable AND the kippered salmon is delicious for brunch. My wife and I had one smoked fish platter, and ordered an extra bagel--so we could share (there's enough fish for 2 bagels-unless you pile it up). Then we just added a poached egg, breakfast potatoes, fruit plate and a side of bacon.

I thought the bacon was a little leathery--but my wife enjoyed it -especially the crispier pieces. Breakfast potatoes were great..i love the thin slice breakfast potatoes. Crispy but still enough potato so it's not like eating potato chips. Poached eggs were cooked perfectly.

Only reason we didn't go 5 stars here for brunch is that when we came in,there apparently was a staff emergency and they weren't able to sit us in the dining room. They put is in the bar. I clearly communicated I wasn't really happy about that-especially given the slightly higher price point for the restaurant--and they did NOTHING to deal with the fact that I wasn't happy about it. We didn't want be in the bar--and there wasn't even anything on the table (like some table clothes/material under the plate) so our dishes were sliding around on the table (and inevitably had one mishap). I understand stuff happens--we're reasonable. But if i made a reservation and you couldn't figure out how to put me in the empty dining room OR at least offer to buy me a cup of tea--then that is just bad management.

We haven't gone for dinner yet. Mostly the menu just looks a little limited for seafood dinner--but we are going to give it a shot one night--given how good the inhouse smoked fish is.

Bottom line. If you have something weird happen (like a staff emergency)--and have to make something uncomfortable for guests...offer to buy them some coffee/tea or a dessert, so at least there isn't as much of a sour taste in our mouth...

Food was great - smoked fish as always great. However, our seating request for a booth was not honored, and we were placed at small table with wood chairs - despite the fact there were only 3 tables with patrons at time of our seating. The staff need to read requests made in OpenTable reservations. We had planned to stay, have drinks, oysters, etc to settle in. But instead we ordered our smoked fish platter and left to go somewhere else more comfortable. They lost business due to seating.

Very disappointed service was extremely slow. Table was set with a fork that had dried egg on it, which made a horrible first impression. Ordered the seafood tower for the table and it was poorly put together. Not even a lemon for the oysters. Sat for a half hour before we received our pre dinner cocktail. Once we finally ordered dinner it did come out of the kitchen quickly. Won't recommend to anyone.

We had a delightful dinner experience on Friday night. The service was just right and the food was delicious and beautiful. The octopus was perfection. The halibut was cooked just right and the peas with it were the perfect compliment. We enjoyed ourselves very much and will come back.

Exciting menu - very knowledgeable staff (Jessica was our server and she helped us craft an incredible meal and experience). There were four of us - we chose the oysters, Socca, Rapini, Leeks Vinaigrette,
Carrot Soup with Dungeness Crab, Potato Gnocchi, Halibut, Lamb Shank, Rose Petal Pavlova and the Pistachio Cake. Every morsel was sublime and exciting. The 2016 Cameron Clos Electrique Pinot noir was superb (and Jessica helped us find our way there). An exquisite dining experience. Go as soon as you can.

we ate here with the dine Portland menu. Terrible, the waiter was inept bringing a salad and almost immediately the main course, noting it was his error but not offering to take it back. Polenta and rock shrimp was the main course, and not edible. Another server looked like she slept in her clothes and had not washed her hair recently. I did not anticipate sitting at the window with street traffic staring in at us as we ate creating a very unpleasant atmosphere. If Dine Portland was to showcase a restaurant and promote business it was a dismal failure.

Had the Portland dining experience. The three courses were great. Heard very good reviews of the Fish and chips. Went to the Schnitzer concert hall for a King Cole show. The meal was way better than the show. Made our trip downtown trip worth while.

We orders several dishes and sides, The Lentil soup, Brussel Sprouts and Caesar salad were excellent. The Bravas fries were way over salted and difficult to eat. The Cauliflower was just so so. But the Carrot Cake desert was fabulous. We will go again we just have to remember to request NO SALT!

I am glad my reservation was early. Dinner really filled up and the servers and hosts were really challenged by 7:00 p.m. At the time we needed to leave the dining room, I had to ask for our check, because of the amount of guests and food being served. However we had perfect service otherwise. The food was a special for the month and evenly balanced and nice portions for our table.
