It all started in the late 1800’s.. a young Gustav Johann Garbe got on a boat from Bremen, Germany to New York, destined for the North West Territories of Canada. When checking in we were told to make reservations which we did. Unfortunately the restaurant is under staff. It very much felt like we should have gone else where. Food was just ok nothing stellar. Poached eggs were hard and very little Hollandaise sauce. I actually couldn't cut through the English muffin with a knife. The server did her best but I blame mgmt....they knew there was a Christmas party on site and that most partiers we're spending the night.

We go to Gustav's for many of our special occasions. We've never been disappointed. There were 5 of us, and everyone had a great time and really enjoyed their meals. The food was delicious, as always. From the shared appetizers to dessert, the entire evening was wonderful!

The restaurant is dark, dreary, the chairs are worn/torn, light fixtures dusty. When 3 of the 4 of us had to return part of the meal for not being cooked, only that portion of our meal was removed. That happened twice while we were left to eat part of the meal and after the uncooked portion was returned not only uncooked but cold. We just ate part of the meal. A very disappointing experience.

Everything was excellent. Our server was perfectly attentive and helpful. The meals and appetizers were cooked as they should be and tasted great. Portions were large. We had one diner at another table that seemed intent on watching a movie/show on his phone with the sound turned way up. Our server asked him twice to turn it down which he finally did. Kudos to her for forcing that to happen. We appreciated it.

Celebrated birthdays with an extremely beautiful dinner in the dining room. Gustavs never disappoints! The waitress was very well versed with the menu and made wonderful suggestions. The starters were perfect and then she came back to let us know that the main course would take about 10-15 minutes to prepare and asked is if they should start it or would we rather wait a bit. So wonderful to be asked! Desert was delicious with a beautiful Happy Birthday written on the plate. We will definitely be back.

We recently moved to Collingwood and just discovered this wonderful restaurant! Best lobster tail I’ve ever had, it melted in my mouth, so beautifully tender. Steaks perfect! And the French onion soup is absolutely delicious. Add to that our most amazing server Pascal, thank you to him for making this experience even more perfect. This is now our date night go to.

This was one of the best dining experiences I have had in a very long time. Our server was amazing. He was prompt, friendly and very knowledgeable. Our food arrived quickly and everything TASTED AMAZING. I can’t wait to return.

We ate here twice. Once for dinner and once for breakfast, due only to a lack of options. The food at dinner was okay, but not worth the 120$ it cost per person for dinner and a glass of wine. The grilled shrimp was cold, the vegetables were extremely crunchy, and the baked potato could have used salt and pepper, which was not readily available on the tables. The music - while fun for me as a millennial - was an extremely depressing mix of the Verve, the Cranberries, and Greenday that didn’t create the most relaxing ambiance. The waitress, while friendly, was overwhelming. Breakfast was fine and decently priced for the quality. The service was fine, and the depressing music was less jarring in the daytime. The coffee was horrifying, though.

We were a group of 10 for a 75th birthday party. I didn't catch our servers name but he was exceptional. We didn't have to ask for anything. He was always there filling wine and water glasses. He was very attentive without being overbearing. Our meals all came out at the same time. I can't speak for everyone but both my husband and I really enjoyed ours. Overall a great night!

Had 2 guests to celebrate 2 birthdays and the presentation of the desserts for them (birthday folks) were awesome and unique! Food was delicious and the right portion. Background music was a little too loud. Request for a GF diet was so met with no fuss.

Nice setting and enthusiastic staff but the food was highly unpleasant. Cold and over-salted fries, lukewarm and soggy calamari, wilted lettuce, overcooked Prime Rib and a smoke sauce that smelled and tasted of butane to the point that one felt as if one's mouth just licked a blow torch. The one highlight was the homemade crème brule which tasted nice.

Saw the “chophouse” in the name so figured the restaurant would know how to steak. Ordered rare steak and please refer to the picture of their definition of “rare.” Overall attitude received was poor and tried to convince that the steak presented was indeed “rare.”
